TGIAT – thank goodness it’s almost Thanksgiving!!! I’m so excited – I can SMELL the baked yams! Do you say yam or sweet potato?

In honor of the feasting that’s about to take place tomorrow, I tackled another morning workout today.

Stats:

  • 10 minutes elliptical @ 5.0 resistance
  • 10 minutes treadmill @ 6.5 mph
  • 10 minutes elliptical @ 4.0 resistance
  • 9 minutes treadmill @ 7.0 mph
  • 1 minute treadmill @ 7.5 mph
  • Total: 40 minutes, 4.25 miles

This was a BOMB workout! I can’t even remember the days when I used to plant myself on one machine and just go for 45 minutes. If I’m trying to build up my mileage, then definitely, I think that is a good reason to hit the treadmill long and hard. But if I’m looking for a great overall workout, then switching the length, speed & types of intervals I’m doing keeps my body and mind really engaged. Do you typically do several types of exercises in one workout, or do you stick to one?

Well I hope you’re not sick of seeing these two…

Because I harnessed their awesome powers to make more Vanilla Pumpkin Overnight Oats for breakfast!

IMG_5410

In the mix:

  • 1 Vanilla Yogurt
  • 1/4 cup old fashioned oats
  • dash of pumpkin pie spice
  • 1 sliced banana
  • drizzle of almond butter
  • sprinkle of almonds

IMG_5405

I seriously cannot get enough of this stuff! It’s perfectly sweet (so sweet, that I nixed the tablespoon of pumpkin butter in the actual yogurt + oats, and just drizzled it on top) and is great for when I work out in the mornings because it’s so portable. I can make it at night and grab and go in the morning!

The textures are unbelievable too. Crunchy almonds, chewy oatmeal and creamy bananas. Awesome!

Well, this lucky gal has another half day at work today! I’m in charge of bringing two items to Thanksgiving dinner tomorrow, so I’m tackling those head on this afternoon…eek! See you at lunch!

~~~~~
Three Question Thursday is coming early this week! Last week I made you choose between some Thanksgiving meal staples – this week I’m asking more about your Thanksgiving experiences. Bombs away!
1. Does your family have any Thanksgiving traditions?
2. Are you in charge of bringing a dish this year, or just your appetite?
2. What’s the first thing your digging your fork into?
My answers:
1. My most favorite Thanksgiving tradition is sitting around, sipping mimosas and watching the Macy’s Thanksgiving Day Parade. Is there a better way to start the day?
2. Normally I’m just in charge of bringing my appetite, but this year I’m bring two kinds of desserts!! Nervous!
3. Baked apples stuffed with sweet potatoes and topped with marshmallows!!!!!! (getting the recipe for you guys, too!)
    1. No, unfortunately
    2. The pumpkin pie! Using my own crustless recipe
    3. Probably the stuffing, which is actually from Whole Foods and I’ve eaten twice this month already, haha
  2. 1. Just that we always get together at my Aunt & Uncle’s to eat and we choose names for Secret Santa. =)
    2. Yes, I always bring Green Been Casserole.
    2. MASHED POTATOES, love them!
    Have a great holiday! =) Laura
  3. Lizzy says:
    I love that placemat! its so pretty!!!!
    QUESTIONS:
    1-traditions, umm i’m not sure we have any in particular, but just being with my family is good enough!
    2-me and my brother are bringing the stuffing. this is 3 years in the making and i cannot wait to start cooking!
    3-I cannot wait to take a HUGE helping of stuffing and cranberry sauce! i can taste it already!
    have a wonderful afternoon! :)
  4. Niki says:
    I say sweet potatoes, even if they are the “yams” out of the can!
    1. A newer tradition is running a Turkey Trot on Thanksgiving day!
    2. Just my appetite! But I help my mom with cooking the sides, I don’t want to have anything to do with cooking the turkey! Haha
    3. Sweet potatoes (must be from the can) with marshmallows on top!
  5. Beth says:
    I didn’t realize this until recently but yams and sweet potatoes are two different things.
    1. We don’t have any traditions besides spending the day together. Tomorrow after dinner we are planning on hitting up the bowling alley so maybe that will be a new tradition.
    2. Since my mom and I are only ones that enjoy sweet potatoes we decided to change it up a bit this year. I’m going to be trying a new recipe for sweet potato gnocchi–I’m totally looking forward to this.
    3. Stuffed mushrooms! They are my favorite.
  6. Katherine says:
    Just an FYI: yams & sweet potatoes are two different vegetables.
    Happy Thanksgiving!
  7. Nicole says:
    I will never be sick of seeing pumpkin butter!
  8. Rachel says:
    Your breakfast always looks sooooo good!!!
    1. We don’t really have a tradition other than the women in the kitchen and they guys on the couches watching football.
    2. I don’t ever bring anything…just help prepare everything that day.
    3. Macaroni & Cheese. My grandma makes it for every holiday and it’s to.die.for!
  9. VeggieGirl says:
    I say sweet potato :)
    1.) My mom and I do all the cooking & baking as everyone else just gathers at our home and enjoys.
    2.) I always make the desserts and cranberry sauce.
    3.) The roasted brussels sprouts.
  10. Alicia says:
    Please make sure you include your baked apples with stuffed sweet potatoes receipe for us all to use :)
    1. I simple enjoy the family time! I LOVE IT!
    2. I am taking fluffy pumpkin cheesecake this year… even though it was requested to bring my sweet potatoe balls again!!
    3. I can not wait to get my fork in to Cranberry Salad which is a family favorite!!
  11. Brittney says:
    1. Making lefse! (It’s a Norwegian potato pancake, rolled thin & cooked on a griddle.) My mom, grandma, and I will be making it for the first time this year without my great-grandma, so it’s bittersweet. I’m in charge of flipping, Grandma does the rolling, and Mom keeps everyone away from eating all of them right away.
    2. As a college kid, I’m off the hook, but Mom is bringing up what seems like a dozen pies, some pumpkin cream cheese muffins for breakfast, some pretzel rods dipped in chocolate rolled in Heath toffee bits… we definitely won’t go hungry!
    3. I will most definitely sneak a cheesy roll from the kitchen before they even make it to the table.
  12. Mikael says:
    I like to do multiple things in one workout. Must have cardo and some kind of strength or resistance along with it.
    1- Be thankful for each other =)
    2- Like Brittney, I’m a college student so all I’m bringing is myself. I have no clue what my mom is bringing though…
    3- Knowing me, my first bite will be of salad since that’s what I like to start my meal with. If not that, then turkey in gravy for sure. YUM!
    Happy Thanksgiving Kristin!
  13. Pamela says:
    1. We’ll be watching the Macy’s parade while I flip through all the black Friday ads and prepare a few dishes for the meal we’re headed to. Can’t wait!
    2. I seriously considered making your answer to question 3, but decided instead to bring pumpkin butter and sliced apples, butternut squash risotto, and rosemary dinner rolls.
    3. Not sure what is on the menu tomorrow, but if it’s available, homemade mac & cheese…or candied yams!
  14. Machelle says:
    1) No tradition to speak of, other than getting together for the big meal. 2) I’m in charge of scalloped corn. I’m also bringing a raspberry/cranberry jello dessert (my grandma’s would call it a salad!), and “sort-of-homemade” rolls.
  15. Machelle says:
    Gosh…I forgot to answer # 3!!) Probably mashed taters & gravy! MMMmmmmmmmmmmmmmmmm!!!!!!!!!!!!!!!!!!!!!!!
  16. It is totally a Sweet Potato. A yam is actually a different veggie.
    I love yogurt and pumpkin butters so I could never get board of it.
    1. Does your family have any Thanksgiving traditions?
    Hunni and I are making new traditions of our own since we don’t get to see family during Thanksgiving because of distance. But my family always watches the football game.
    2. Are you in charge of bringing a dish this year, or just your appetite?
    I’m cooking for Hunni and me so I am in charge of it all. But it will be easy.
    2. What’s the first thing your digging your fork into?
    I love stuffing so that is alway first. This year is the cranberry apple stuffing from TJ’s again.
  17. love the Q whats the first thing that I am digging my fork into! that would have to be either the stuffing or sweet potatoes w/ marshmellows MMMM cannot wait!!
    I made delicious orange zesty cranberry sauce! I was so impressed with myself, that will be brought to the table for sure!
  18. Tay says:
    I say sweet potatoes. In other parts of the country a TRUE yam is different than a sweet potato. But here in the US sweet potatoes and yams are really the same thing, just a slightly different color.
    1. As a kid, we would always go to the movies on Thanksgiving day to get out of the house while the adults cooked.
    2. I making a pie and the sweet potatoes!!
    3. Mmmm probably the turkey with grandberry sauce and gravy!!
  19. Katie says:
    Nope not really! Everyone goes to a movie afterwards though.
    Just me and whatever I choose to eat.
    Most years mashed potatoes, but since I’m vegan that’s out so it will be anew favorite! What an opportunity!
    Aren’t sweet potatoes and yams two different things? IF not I always call them sweet potatoes!
  20. Julie S. says:
    1. We always go to a movie later that afternoon.
    2. I’m usually responsible for the green bean casserole & the sweet potatoes. I made the stuffing from scratch one year. That was a lot of work! No desire to do that again!
    3. Oh, this is a hard one. Everything is always so good! It seems like I dig into the turkey first.
    Have a great Thanksgiving, Kristin! Enjoy your 1st Thanksgiving w/ Baby Finn. :)
  21. aleisa says:
    Hey Kristin, I’m a former Iowa girl myself (now I live in Texas :) Anyway, I linked to your blog from a friend’s. Here’s a yogurt tip: in order to combat the sweetness of granola + yogurt, I often use plain yogurt. The slight (and pleasant!) sourness of the plain yogurt pairs really nicely with granola, and it’s not too sweet. You might try using plain for your overnite oats, if you’re looking for more ways to cut down on the sweetness :)
  22. NySoonerGirl says:
    1. Just having the huge dinner with tons of family.
    2. I always bring the ham/pickle orderves! (That way I can eat the “messy” pieces that “don’t look good enough” for the final platter. That’s my story and I’m sticking to it.)
    3. Shrimp!
  23. Jill says:
    totally off the subject but… I am making the pumpkin whoopie pies you referenced. Can I make those today and they will stay good for tomorrow?
  24. Stephanie says:
    1. Nanny’s sweet potato/pineapple casserole EVERY year!
    2. I have done majority of the TDay meal cooking for the past 3 years with the exception of the bird, that is Mom’s specialty! This year I’m doing the homemade hazelnut, sage and mushroom stuffing + the cranberry dish and she’s taking over the potatoes.
    3. The Whole Foods recipe for cranberry apple relish that my sister and I prepped today – it is SO good!
  25. Courtney F says:
    1. Does your family have any Thanksgiving traditions?My mom makes the same thing every year. No variations.( I wish she did!) Dressing, dumplings, homemade rolls, cheese ball, turkey of course!
    2. Are you in charge of bringing a dish this year, or just your appetite? yes we all divy up things. We are bringing a salad, mac n cheese, different dressing, chess pie, brownie bites, and 6 layer bars.
    2. What’s the first thing your digging your fork into? SWEET POTATOES!
