Ahh – my afternoon off has been super productive so far! I hit up the grocery store on my way home, to pick up a few items for the dishes I’m making for tomorrow, and it.was.chaos! Half the city must have waited until the last minute to do their Thanksgiving shopping because there were people hanging from the rafters!
I grabbed what I needed and got OUT, came home and devoured my lunch. TGFL (thank goodness for leftovers) - I was starving!!
I heated up some of that A-mazing Italian Wedding Soup from last night.
And whipped up one of my favorite soup sidekicks: Parmesan Toast. If you’ve never made this – you MUST! Start with two slices of bread.
Lightly butter, sprinkle with parmesan cheese and place under the broiler until golden brown and toasty. Salty crunchy perfection!
This was a great lunch – light yet filling.
Later I had a snack that I got in the mail a couple days ago. A Kashi TLC Chewy Trail Mix Bar. Honestly? I didn’t love it. I didn’t hate it – but I definitely didn’t love it.
6 grams of protein is pretty good for a little bar, but the bland taste and 5 grams of fat (.5 of them being saturated fat) just didn’t win over my heart.
I did appreciate the big chunks of dried fruit and almonds though!
In other news, the sweet small of cinnamon is wafting from my oven as we speak…slurp! Thanksgiving baking is underway!
Tonight’s activities are TBD. Ben and I might channel our inner 21 year old selves and go out with some friends tonight – the night before Thanksgiving was always a big night in college!
