Dunh-dunh-dunhhhhhh…we all knew this day would come! After four and a half glorious days of vacation which included decorating for Christmas, catching a disaster flick, an unforgettable Thanksgiving and some Pomtinis – it’s back to the grind!
Like I said yesterday - I’m suprishingly feeling ready to go back to work. Four and half days was the perfect amount of time off. Any less and I wouldn’t have been ready to go back. Anymore and I might have started getting bored. Plus I know that in less than a month, I’ll have another little break for Christmas. Gotta love the Holidays! If you’ve been off for the past couple of days, are you feeling ready to go back?
Speaking of the Holidays – Ben and I were talking last night and both of our belts have been getting a wee bit tight as of late. Maybe it’s the Holidays? The cold weather? It’s probably a combination of things, including eating dessert with reckless abandonment… Either way, we’re going to work really hard in the next couple of weeks to eat very clean, mindfully and making sure we get plenty of exercise into our schedules.
I’m kicking my mindful morning off with light and healthy Fruit, Yogurt & Granola Parfait. I can’t quite put my finger on it, but there’s something about this exact combination – fruit, yogurt and granola – that is very satisfying and special. It’s like something you’d have on vacation…know what I mean?!
In the mix:
- 1/4 cup Nature’s Path Pumpkin Flax Plus Granola
- Vanilla Yogurt
- Braeburn apple
Do you eat flax seeds? Supposedly they’re high in protein, fiber and omega-3 fatty acids. They, along with the pumpkin seeds in this granola, make for a nice crunch and chew.
My eyes may have been a bit bigger than my Christmas bowl this morning – I was spilling granola everywhere as I ate this.
Putting today’s lunch together involved scraping the very bottom of the barrel. I didn’t go on my weekly grocery shopping trip yesterday because Ben and I are hitting up the store tonight to shop and grab dinner. Nevertheless, I ended up packing a pretty good spread, I think.
- Trader Joe’s peanut butter filled pretzels
- Peanut Butter & Jelly Lara Bar (craaaazy good)
- Baby carrots
- Apple (yep, another one!)
Lots of variety and crrrrunch make for a very satisfying meal in my opinion.
In other news, today is Cyber Monday! Cyber Monday is the unofficial “kick off” to Holiday shopping and a day when you can find especially good deals online. Boo yah!
I don’t LOVE doing my holiday shopping online because it’s harder for the people I give the gift to, to take it back if they don’t like it (hmmm, maybe that’s a reason why I SHOULD do my holiday shopping on line, muwhahahaha!) but I do like to see if there’s any good deals I can snag for clothes for Ben and I!

I have 80% of my holiday shopping done already – I’m not sure I’ve ever gotten it all done so early! That trip to the Mall of America was certainly put to good use this year.
