Hop To It!

Did you know that the Great Lakes – Huron, Ontario, Michigan, Erie & Superior (HOMES anyone? Remember that from elementary school??) – form the largest supply of fresh water on earth and 20% of the world’s fresh water can be found there? Did you also know that they were carved out from ancient river beds and ice sheets that covered the entire area not once, but twice? Finally, did you also happen to know that the world’s largest salt mine sits underneath the Great Lakes? I didn’t either…until I watched How the Earth was Made: The Great Lakes on the History Channel last night! In another life, I may have been a geologist.

In this life, I like yogurt, apples & granola, so I made a Yog/App/Gran Parfait for breakfast today!

We start with one Raspberry Cheesecake Fat-Free Yogurt,

Toss in one, chopped Honeycrisp Apple,

And sprinkle on a handful of Nature’s Path Pumpkin Flax Plus Granola.

Looove, love, love this granola! It’s a tad on the $$$ side, but you can find it for less at Trader Joes (where I got mine when I was in Minneapolis) or if you have a coupon.

For lunch today, I packed an Amy’s Light in Sodium Brown Rice & Vegetable Bowl.

I don’t usually eat frozen foods, but when I do – it’s got to be Amy’s. All of their products are vegetarian, made from organic ingredients and are seriously. delish. I also like the variety of products the company offers – Palak Paneer, anyone?

Today’s offering includes tofu, brown rice and veggies, and is light in sodium. So many frozen meals are literally jam packed with added sodium – it’s nice to see a company making an effort to make their healthy products, even healthier!

At any rate, it’s sure to be delish – as will my Honeycrisp Apple that I’m also packing (rocking two in one day!)

I’ve just been informed that it’s snowing and the roads are pretty bad :( so I’ve got to hop to it – happy hump day!!

As you may know, a new year and DECADE are approaching in just a few days! What are some of your 2009 highlights?

Mine include celebrating my one year wedding anniversary with Ben, visiting San Francisco for the first time and, of course, becoming and AUNT!

    I am lucky enough to live on Lake Michigan, so I totally appreciate it when others show interest in the ecology of our natural resources!

    I am working on that same granola right now. Only a little left in the box. I won a giveaway and was so happy since they do not sell it at the comissarry here. I live in what is considered a remote location overseas and the commissary is small since we are on a small base.

  10. That rice bowl looks yummy. I love her soups, I may have to give that a try. I like to keep things like that onhand if I don’t have time to cook something.

    And that is my favorite kind of granola. I am eating the pomegranate kind right now. Yum!

  14. The highlight of 2009 was spending time in Colorado with Hunni. We were there for work but seeing the Garden of the Gods was magical.

    That Amy’s meal looks really delicious. I am glad they are cutting down the sodium in some of their products because their pizzas have a lot.

    i love amy’s too! frozen foods can be so easy i can’t not eat them… one of my biggest accomplishments in 2009 was traveling to Armenia and getting my first job!!

    I usually make my own granola, but this kind does look good! My biggest highlight was the birth of our son in Sept….he’s wonderful!

    IGE – you may know this already, but I was at Bed Bath and Beyond today, and they had Aussie licorice! I didn’t get a close up look, but it looked similar to the Trader Joe’s stuff. Just thought I’d let you know in case you want to look into it!

    Just an FYI that I found that granola this fall (in Iowa!!) at ALDI’s!!! :) I know….you don’t usually expect it, but they get a few choice items in every now and then. You just have to be willing to look…

    My highlights include running my first AND second half marathons! And running a 5K PR. And making the decision to switch careers to become a teacher. All in all, it was a pretty good year!

    I love Amy’s products! I saw them on The Food Network once. They toured their “factory” and that made me like them even more!
