Better Then French Fries

Evenin’!

I am SO excited right now! In 30 minutes (well, 30 minutes as I’m typing this) the Iowa Hawkeyes will take on Georgia Tech in the Fed Ex Orange Bowl! I have been nervous all day. 8O We had an incredible season, so a win in tonight’s bowl game would really put the ’09-’10 season over the top!!

Making sure that I’d be ready for the game at 7:00, I put in a quick treadmill session at the gym after work:

  • 15 minute run @ 6.5
  • 15 minute walk @ 4.0 & 2% incline
  • 10 minute run @ 7.0
  • 5 minute walk @ 4.0

To be honest, this wasn’t the best workout I’ve ever had. My energy was down and I couldn’t wait to get out of there – you know the feeling. But, a semi decent workout is better than no workout, didn’t you know?!

To go with my express workout, was an express – yet sensational - dinner: Orange-Soy Glazed Salmon with Roasted Brussels Sprouts!

Are you over my roasted b-sprouts yet? I seriously make them twice a week – they’re better than french fries!

I drizzled them with extra virgin olive oil and garlic salt, then popped them in a 425 degree oven for 30 minutes, flipping halfway through.

As the sprouts cooked for the first 15 minutes, I whipped up the Orange-Soy Glaze marinade for my salmon:

In the mix:

  • 1 part orange juice (juice of 1 orange)
  • 2 parts soy sauce
  • 3 garlic cloves, smashed
  • ground ginger
  • drizzle of honey

Mix ingredients, pour over salmon filets and marinade for 15 minutes.

After you flip your Brussels sprouts over and pop them back in the oven for 15 more minutes, sauté the marinated filets in some non-stick spray.

When the salmon is cooked, pour the unused marinade into your skillet and reduce to use as a sauce. One salmon filet was thicker than the other, so I let it cook a little while longer in the reduction.

Pull out your roasted Brussels sprouts…

Impatiently pop multi in your mouth… :)

Drizzle your salmon with the reduced sauce, and serve!

Seriously – french fries. I don’t care who you are, you know you like french fries. These are better!

Look at that one right in the middle – it was SO good. Roasty, garlicky & salty!

Ok – Orange-Soy Glazed Salmon is to die for! The sweetness of the fresh orange juice and honey, with the salty soy sauce, was a mouth-watering combo. Absolutely incredible, and the flavor really permeates the fish in such a short amount of time. Ben also made some brown rice to put under his fish and sauce. I was super jealous – better than takeout! :D

Would you rather watch college sports, professional sports, or, no sports?

It’s hard for me to get into professional sports for some reason (unless I’m watching the game live.) It’s so fun to see college athletes loving their sport for no other reason than they absolutely love to do it (no $$$ involved!)

    Have you ever tried them with coconut oil?! It gives them a pop-corn like flavor but tastes more like a french fry! So yummy!

    OK…gotta add my 2 cents. I LOVE brussel sprouts. But they do not compare to good french fries (I’m not talking fast food ones, but GOOD ones from places like Gateway Market).

    And while I’m disagreein’. Ugh: Hawkeyes. That’s all I hear about. I’m a Cyclone all the way and they got nowhere near the hype, even though they finished MUCH better than people thought they would. So count me tired of the Hawks. I’m not feeling the in-state love this year. (Mostly because all I got was grief from that crowd)

    Need to add to the cereal list: Frosted Flakes. The only cereal I would (or still will) eat with milk!

    Totally with you on the college athletics! I don’t care much about the pros, but I love college (especially football!). It’s just purer somehow–love it!

    We’re camped out on the couch for the game, too…GO HAWKS! (I’m a UI grad) LOVE watching the Hawkeyes & Vikings!
    Now if only I could convince my family to embrace the roasted b sprouts! Hubby tolerates them, but the kids protest quite loudly. It’s not worth the trouble to argue with them, so I just make them for myself.

    Gah, I just ate dinner but your post totally made me hungry again! I agree with you on the roasted brussels sprouts > french fries thing, with one exception. Oven baked sweet potato “fries” might be the best food on earth.

    College sports ALL.THE.WAY. MN Gophers hold a special place in my heart….except I leave a lil spare room for my MN Twins. That’s the only professional sport I watch and LOVE. Can’t wait for our outdoor stadium. Mom if you’re reading this- Tickets to a game would be a great welcome home from Japan present.

    P.S. I’ve never had Brussel Sprouts, but definitely going to have to whip up a batch. They look AMAZING! Along with that salmon- it’s gonna be my dinner now tonight! Can’t wait.

    This is a sensational dinner! I had salmon for lunch and it was just wonderful. Such a powerful food full of incredible nutrients and tastes outrageous! Love this fish more than life itself! :)

    Hubby is watching the game. Go Hawks! :) Just as long as they are not playing PSU, I’m all for them! ;)

    Do you think that the glaze for the salmon would work on chicken, because I am allergic to seafood?? Even the brussel sprouts look awesome, maybe I will try them someday, because I have hated them my entire life but that might be because of the way that my mom makes them!!

    I just made this – AMAZING!! I substituted cinnamon for the ginger (I can’t stomach ginger), but did everything else, and it was the BEST salmon I’ve EVER had!     I am in total agreement! I love your brussel sprouts. I have made them at least once a week for the last few months…since I started reading your blog. They are so yummy!!! Just wish the kids and DH would eat them. They won’t even try…they are missing out! HA

    Well I must thank you. I haven’t eaten brussel sprouts since I was a kid. Somewhere along the way I decided I don’t like them – but decided to get some and give roasting them a whirl. I like Brussel sprouts again and I am always looking to add more veggies to my meals and snacks so this is great.

    Where do you get your brussels sprouts? Are they fresh or frozen? I only found the bag of fresh ones in the HyVee produce section but the sprouts are HUGE! I like your little bite sized ones better. :)

    I made this salmon without the ginger, didnt have any, but it still turned out great! Will definately make this one again.
    I sometimes bake fillets marinated in seasame ginger dressing that I get at Target, the archer’s farm brand.
