Now I love going grocery shopping for many reasons, but one of the biggest is that I get to come home and make something fabulous from all the new loot I pick up! For dinner, I rounded up some cottage cheese, a navel orange, Braeburn apple, blueberries & Grape-nuts…
And made a Cottage Cheese Fruit Bowl!
I mixed a cup of cottage cheese with a dash of cinnamon (might be my new favorite thing, ever?!) then loaded all the other ingredients on top.
The addition of these Grape-nuts on top was super key. Their unmistakable crunch was such a fabulous texture contrast to the creamy cottage cheese – plus they’re high in whole wheat, fiber and natural antioxidants!
Did you know that Grape-nuts were originally marketed as a natural cereal that could help improve health and vitality? Basically “brain food” – ooooo.
This dinner was a super light, yet filling, and very refresing. YUM!
Alrighty my friends – I am off to pack my life away – I’m leavin’ on a jet plane tomorrow!!! 8)
ps: the Kentucky Derby Pie recipe has been requested of IME – I’ll share with you ASAP!
