The 3-Day Workout Challenge was a success!
I leisurely slept in ’til 9:00 this morning, then headed straight to the gym where I modified my 60 Minute Mix-It-Up Cardio Workout to be 50 minutes long (I took out the 10 minute stairmaster interval – too much for a Sunday morning.
) I was rocking and rolling the entire time and it was one of the best workouts I’ve had in awhile!
Sometimes saying out loud “I’m in a workout funk” is the first step to fixing the problem. Write down your goal – such as my goal to workout 3 days in a row – and hold yourself accountable. Ask friends and family to help keep yourself accountable too. You’ll feel so much better after you just do it! Swoosh…
After I got showered up, Ben and I headed to my parent’s house for lunch. I immediately smelled my Chicken Tortilla Crock Pot Soup recipe bubbling away as we walked through the door!
The recipe for this soup is ridiculously easy and so yummy. Add crushed tortilla chips and shredded cheese on top for the perfect soup lunch on a cold winter’s day.
Great go, Mom!
We also had some fresh fruit – pineapple, strawberries and kiwi.
Just what we needed to take our minds off of the sub-zero temperatures and 10 foot snow drifts outside! I had about a billion more pieces of pineapple – you can never have too much fresh P-apple in my opinion!
Then, she did the darn thing. My Mom whipped out homemade, warm Kentucky Derby Pie for dessert. O.M.G.
This was basically the ooiest, gooiest, chocolate chip cookie I’ve ever had, served warm in a deep dish pie crust. Absolute insanity!!
See?? Like barely cooked cookie dough…drooooooool!!
Obviously, I hated it.
Kidding! This was truly one of the best desserts I’ve ever had – chocolatey, sweet, doughy perfection!
Ahhhh.
Ben and I are going to go walk off our pie comas at the grocery store. It’s good to go grocery shopping when you’re full, since you’re less likely to make impulse purchases based on your growling stomach. After this fab lunch, I don’t think that will be a problem…

What’s your favorite kind of cookie?
I would literally eat any cookie you put in front of me but, if we’re going to get specific, I have 2 favorite cookies:
1. DoubleTree Hotel chocolate chip cookie – the warm, saucer-sized cookie they present to each guest as they check in makes me weak in the knees. I have a copycat recipe, and it’s unbelievable!
2. The Perfect Chocolate Chip Cookie recipe from the New York Times. This cookie recipe will change your life!





























GAh. The soup AND the cookie – I mean pie – look amazing, and neither are things I eat anymore. However I’m sure they could be ADAPTED. (My IL’s are both KY natives – I KNOW Derby pie. You are right. It is heaven.)
My favorite cookies are all of them as well, but standouts are peanut butter, snickerdoodles, gingerbread, and chocolate chip (that someone else makes), and I always prefer soft chewy cookies to crisp ones, always.

I’m not a huge fan of cookies…but I do love cookie cake…

One night a group of my girlfriends and I were all having a get together weekend in KC and staying at the Doubetree and loooooove those cookies! But, you know what? They don’t have them at 2am. We literally begged for them when getting home from the bars. BOOO! lol

I agree about the Doubletree cookies, those are fantastic! I used to love Starbuck’s M & M cookie, but I haven’t had that in awhile. I love pumpkin chocolate chip cookies!

I really have never met a cookie I didn’t like….but I would say a good Christmas sugar cookie can’t be beat!
The restaurant at my Student Union stopped serving the Kentucky Derby Pie they made and I was devastated! It’s so delicious. My favorite cookie is oatmeal chocolate chip .. you can pretend its healthy!

I’m a big fan of the peanut butter cookies w/hershey kiss in the middle. Peanut butter and chocolate = dreamy.
We had our wedding reception at a DoubleTree Hotel and they had recipe cards with their famous chocolate chip cookie recipe on it. I got lots of compliments on the cookies / our wedding accommodations!
Good gosh that pie looks incredible! My favourite cookies are either Maryland cookies – tiny and sooo addictive, I think they must have added nicotine…or Millie’s cookies, which are massive and soft and come in fabulous flavours…on the website, you can even get Cookie Sandwich cakes for birthdays! I got one for my sister’s 21st, apparently they’re amazing
