I think Buddy’s reaction pretty much sums up the way I feel about these bad boys:
Dried apricots: guess what? I love you , I love you, I loooove you!! Seriously, I could have eaten this entire bag – they’re like candy, I tell ya’!
I munched on a few way too many of these suckers as I was cooking dinner tonight and, as a result, wasn’t very hungry for my luscious entree.
I savored it anyway because it tasted so.dang.GOOD! – Teriyaki Salmon with Fried Rice!
Take two salmon filets and marinate in teriyaki sauce for 10 minutes (make your own by combining 1/2 cup soy sauce, 1/2 cup mirin & 2 T sugar.)
Sauté your filets in some non-stick spray in a skillet… (skin side down first, so you can easily peel it off when you flip!)
and serve over fried rice made with brown rice, veggies & an egg.
OMG NO WORDS! This was seriously one of the best – and easiest – dinners I’ve made in a long time.
These far east flavors are so delicious, and - I repeat – so incredibly easy to whip up! So easy, in fact, a caveman could do it! (That will make more sense in a second…)
Seriously, who needs to go out to a restaurant when you can make dishes that taste this good in the privacy of your own home?
YURM! I want more…
In other news, tonight I’m staying in and watching Year 1 (caveman reference) with Jack Black and Michael Cera.

These two are so hilarious that I started laughing out loud as I picked the movie out at the Red Box (true story.)
I’m also going to attempt to finish up my book The Kite Runner – awesome story!
And finally I’ll get around to eating the rouge navel orange that I have been carrying around for the past two days, but have yet to eat!!

When eating a saucy entree with rice, do you prefer to mix your rice and entree, or keep things separate?
I like to keep things separate. That way if there’s too much sauce on the entree, I don’t muck up my rice with goopy sauce. Ya heard?


































I keep them separate. We actually had something similar tonight: honey citrus salmon. And on the side I had oatmeal because I had a craving while others ate potato. But our salmon wasn’t great quality and stuck to the pan too much. Oh well, still tasted orangey

OMG that salmon dish is looking fantastic! I love making teriyaki salmon but I have always grilled mine so we really only have it in the spring/summer. Now you have given me hope that I can enjoy this favorite meal all year long!

If you liked Kite Runner, you must check out his second book, “A Thousand Splendid Suns”. I loved Kite Runner so much I got his second book the day it came out and had it read within 24 hours. SO GOOD!

fried rice is SO easy and delicious!
Dried fruits are like candy to me too.
As for your sauce and rice questions…I eat the entree first and then mix any leftover sauce on the rice in the desired consistency.
Mm dried apricots are one of my favorite dried fruits of all time!! I think dried peaches take the crown for me though.. have you tried them?? Soo chewy, juicy, sweet, and delicious!!
Loooove making homemade fried rice! Haven’t done it in a while – I should get on that!

That salmon looks amazing! And Year One is hilarious, I actually saw it twice in theatres.
I only eat rice if it’s mixed in some sort of sauce. My favorite thing is to dump rice into the sauce when I get cashew chicken at Thai places.

How did you like the movie? It did have funny parts to it. I love Jack Black! The #1 reason my family and i wanted to watch it is because the movie was filmed right behind our house, pretty much in our backyard. Which is funny, because it’s the swamps of North Louisiana
The desert scenes were filmed in the “sandbars” – a place known for its many alligators!

I like to mix it in if I’m making it b/c I know just how much I want. If someone else is cooking I keep them separate. The Kite Runner is such a great book. One of my all-time faves.
