It’s That Kind of Morning

Happy Monday to you!

I woke up to another snow blower alarm clock this morning at 5am – we got some of the white stuff overnight! 8O Not a ton, mind you, my neighbor just feels the need to snow blow his driveway after the accumulation of 4 flakes. No lie. Hmmm… 

Here’s what we’ve got goin’ on for the rest of the week…semi bleak…

Someone that lives in the South – spin me some tales of warmer weather where you live!!!!!!

Thankfully, breakfast is much brighter. :) I had leftover pumpkin from my Pumpkin Pie Yogurt adventure so I made the next best thing, Baked Pumpkin Pie Oatmeal!

Made the same way as usual, except I used unsweetened vanilla almond breeze instead of skim milk, and nixed the butter in the topping. Just almonds and ~1/2 teaspoon of brown sugahhhhh.

Baked at 375 degrees for ~18 minutes (almond and sugar toppings added half way through) cooled, refrigerated and reheated for this mornings gloooorious breakfast! Who needs warm weather when you’ve got pumpkin pie oatmeal for breakfast? What’s your favorite “make ahead” breakfast?

Last night I also whipped up a lunch I am SO excited for – Baked Tofu, Rice & Roasted Veggies. omg.

All I did was cube up some extra firm tofu, and marinated the cubes for literally 1 minute in:

  • soy sauce
  • honey
  • garlic powder
  • sesame oil

I laid my cubes out on a non-stick sprayed, foil lined baking sheet, and baked for 20 minutes at 375 degrees.

Firm, chewy and with a perfect crust on the bottom. YUM-E.

For lunch today, I added my tofu to some brown rice (to which I added some of the tofu marinade while it was cooking) and roasted chicken and veggies from Friday night.

I snuck some tofu cubes last night – SO GOOD! It’s amazing how one minute in a marinade is really all it takes to totally flavor tofu. :) Plus the marinade in the rice was bomb – no extra sauce needed after it was done!

For freshness, I’m packing a rather unfortunate looking Pink Lady apple. She’s got bumps galore – but I can look past it and see the true beauty inside. ;)

I am praying that I will be game for it least a light workout tonight – we’re talking walking on the treadmill and some light weight lifting. Physically I feel fine, I just get short of breath even walking up the stairs and my nose and cough don’t seem to want to quit. Ay dios mio.

On that note, and after hearing the cold wind whipping outside, I do believe it’s a Starbucks kind of morning. A no foam skinny vanilla latte kind of morning, to be specific. :D Happy Monday!

    Have to try the pumpkin pie baked oatmeal – on an overnight oats kick right now though! My favorite coffee shop drink is probably a skinny white chocolate mocha w/ whip, but I only ever get it at Starby’s. I also love a skinny caramel latte w/ whip and drizzle.

    I used to seriously addicted to Starbuck’s Chai Tea Latte, ordered this way, “Venti Non-fat Chai”. I got it everyday, and sometimes twice a day so the guy knew exactly what I wanted as soon as I walked in the door. Such an expensive habit for 4 months…haha.

    The baked oatmeal looks sooo good. I’m gonna try that soon. I have yet to try “overnight oats” either. I’m seriously slacking.

    Oh, I feel for you… I lived in PA for most of my life and I can safely say that I don’t miss the cold weather! It’s 50 degrees in Atlanta today and I’m not wearing a jacket. Do you feel warm already? :)

    I love to make extra pancakes when I have the time and freeze them. Then pop them in the microwave and toaster oven and wa-lah!!

    Usual Starbies order is an americano with 1 pump peppermint syrup or an iced coffee with SF hazelnut. If I’m “slurging” or need something more filling, I’ll go for a skinny caramel macchiato or sometimes a light caramel frappie – the BEST!!

    When I go to Starbuck’s I order a soy latte. Plain, but oh so yummy!

    I live in Houston, and it’s pretty much always warm(er) here. Right now it’s in the upper 60′s, and that’s a little chilly for me. I brought my jacket, and turned on my heater this morning. Us Texas folk aren’t bred for weather below 70 degrees :)

    I hate to tell you this….but we are suppose to hit 60 here in the Fort Worth area today. We were in the 70′s last week. You would love it here. Maybe your Mom and you would like to come and visit for awhile. My daughter is around your age we could have great Mom/daughter walks!     I love starbucks Tall Decaf Skinny Cinnamon Dolce Latte. They are my go to coffee drinks. If I’m at a cafe I love Irish creme steamers too.

    The Breakfast cookie is my fave “make ahead” breakfast for sure. Thanks again for that!

    Tea is my choice drink at coffee houses. I tried a couple coffee options lately, but they don’t work for me.

    Oh, I tried a Lara bar for the first time the other day (wouldn’t have if you hadn’t sung their praises)… and I LOVED it! So good. But it is a LOT of calories for something so small. At least it’s good calories. ;)

    Our neighbor does the same thing with his snow blower. Last Monday we got about 1-2 inches of snow/ice. I left at 4:30pm to run some errands, he was on one corner of his house with the snow blower. When I came back at 6:30pm, he was still snow blowing the other corner of the house. DUDE! Why don’t you use your shovel!?! It would have taken you at least half the time! Seriously!?!

    I wish i could send you some warm weather, but it’s supposed to snow here in Memphis thurs and fri! So much for the 65 degree weather we had yesterday! My favorite Starbucks beverage is either a nonfat no water chai latte or a nonfat latte with 1 pump of pumpkin spice!!
