For some reason, the weekend literally could not get here fast enough. I am so pumped that it is Friday!!
I kicked things off with an awesome workout this morning. I’d been holding off on cardio from being sick, but there’s no time like the present, so I ran through this great, 41 Minute Interval Workout for the treadmill, from FitSugar.

I’ve said it before, and I’ll say it again, I love a good Friday workout. A lot of people think of Friday as the end of the week, but sometimes I like to think of it as the beginning of a healthy weekend. A great workout on Friday morning really does the trick!
I brought some more Pumpkin Pie Oatmeal for breakfast. Oh, yeah!
Aliens must have temporarily taken over my body as I was making this, though, because I only put in half the amount of oats that I should have (how you forget part of the oats when you’re making oatmeal is beyond me) and forgot the brown sugar entirely! I was wondering why it was taking forever to cook – it’s because it was mostly liquid!
There was nothing I could do about the missing 1/4 cup of oats, but I sprinkled 2 teaspoons of brown sugar on with my almonds, half way through baking. It still tasted yummy – just a little more custardy than usual! For the complete recipe – click here.

Leftover baked beans & BBQ tofu (seriously awesome) with tortilla chips for dunking.
And roasted asparagus with a Pink Lady apple!

It is such a good thing it’s Friday–long week for no reason other than yucky weather. My latest mishap was trying to make your butternut squash ravioli! Awesome magazine cover and article–you’re famous!
I also love a good Friday work-out. It’s like sweating out all the stress from the week
My latest mishap in the kitchen would be when I put veggies in the oven to roast and forgot about them. Whoopsss
haha oatmeal without the oats, love it!! I was making a chicken main course not all that long ago, and completly forgot the chicken..it came out and I was thinking ‘this looks awfully small…’ BAH!

I like the look of those intervals. I’m going to give that a try. Also, cracking up at you making oats with no oats. Remind me of when my son made chocolate chip cookies with no flour. Something is just not right.
My latest mishap was last weekend when my pumpkin oatmeal bread would just not bake through and was dense and not that tasty- boo!
I made your recipe for Turkey link sausage/apples/sweet tater. I just couldn’t get the turkey done in the middle. Ended up slicing it lengthwise & cooking longer, then I didn’t like it anyway! I should have known that, since I really don’t care for things with a “skin” on it. But the cooked apples & tater were wonderful together! Might try those two things with some baked thin pork chops or pork steak! YUM!
I completely forgot to season the chicken the other day and it was so bland. Only a little BBQ could help.

It would make a really interesting post. You seem to fit a lot into each day and it would be helpful to hear the specifics. Do you have any time management tips? I’d love to hear more about your day job too! And what are your plans for the blog this year?

Latest kitchen mishap would have to be when I sprinkled cinnamon on my oats and did not realize that the (clear) plastic lid came off…oh yeah, i microwaved a plastic lid in with the oatmeal. mmm…melted plastic…

Last mishap was forgetting the sugar in the pumpkin pie! Even though everyone ate it…my family is awesome that way in trying to like without complaining whatever I cook…but this one was too big of a mistake to miss!!! Bad thing was it made 2 pies!!! We sprinkled sugar on top and used LOTS of cool whip:)
I have a question, I so want to try this Oatmeal and clicked to the original recipe and just want to make sure that Pumpkin Puree is just canned 100% Pumpkin. Please let me know – can’t wait to try.

funny, i printed that same workout today and did it but increased the speeds a bit. i dont think the calorie burn for me was even near what fit sugar listed, darn it! i like what you said about a good workout friday being the start to a healthy weekend. totally agree! that is too funny you left out half the oats. sometimes we have brain cramps! have a great weekend, kristen!
I had TWO kitchen disasters this week: dropped a full plate of eggs and I had an oatmeal explosion in my microwave! It was definitely not my smoothest week

Is this like the P 90 X system. I have been looking for some information on it but this seems like it has potential. Simply want to make the ideal decision
