Good morning, and happy February 1st! The month of luuuuuurve is upon us. ♥ ♥ ♥ Only 13 more days until Valentine’s Day! What are your thoughts on Valentine’s Day? An excuse to show your loved ones even MORE love than usual is fantastic, in my opinion. I embrace it with open arms…literally. Hugs are free on Valentine’s Day! :D

I’ll never forget the first Valentine’s Day Ben and I celebrated together as a couple, in college. I slaved away making him oodles of cupcakes that I decorated with little frosting hearts, sayings – you know, the works! I stored the cupcakes in the oven so my roommates at the time wouldn’t snag ’em before I had a chance to give them to him. Well, later that day someone turned the oven ON, and my precious cupcakes melted like sugar lava. Soo tragic!! :(  Needless to say, I never made the mistake of storing things in the oven again!

Speaking of fail’s – remember my pumpkin pie oatmeal fail last week where I forgot to add the brown sugar and half the amount of oats? Well, in true serendipitous fashion – I actually LOVED The result! The oats were super creamy and custardy, and the brown sugar that I ended up having to sprinkle on top resulted in an awesome, crunchy, bruleed crust. Today, I recreated – on purpose – and made Apple Crisp Oatmeal!


In the mix:

  • 1/3 cup old fashioned oats
  • 2/3 cup unsweetened vanilla almond breeze
  • cinnamon
  • vanilla
  • 1/2 “baked” apple (1/2 peeled, chopped apple nuked for 90 seconds with cinnamon, honey and a splash of water)

Bake at 375 degrees for 14 minutes, top with sliced almonds, 2 teaspoons of brown sugar and bake for 14 more minutes.


Oh, you guys, so fantastic! Just look at that brown sugar glazy crunch!


How do you like that for a Monday morning breakfast? It certainly got me up and at ’em! Oh, if you don’t want to use almond milk, you could totally use water and skim milk, or all water, or whatever combo you prefer. Whichever you use, I promise you’ll love it! It’s got all the classic Apple Crisp flavors. So yummy.


Speaking of recreations – I recreated my Mixed Fruit Salad from a couple weeks ago, for lunch today. :)


In the mix:

  • Dried cranberries
  • Dried apricots
  • Navel orange
  • Pink Lady apple
  • Sliced almonds

Drizzled in Annie’s Lite Raspberry Vinaigrette, this salad is seriously refreshing and so nice to eat when it’s bitterly cold out and there’s so.much.snow.on.the.ground.! Over it!

Bikinis! Is it really that season already?! I mean…dang!


Instead of moaning or dreading, lets talk about happier things. Bikinis in stores signifies warm weather ahead…Spring…and, Spring Break!

Do you have any Spring Break plans this year? If not, where’s your favorite warm weather vacation destination?

Spring break plans are still in the works (muwahaha!) but my favorite warm weather destinations are Hawaii, and amid the hoards of college students, (I used to be one of them!) Cancun, Mexico is one of the most beautiful places I’ve ever been to!

    Wow. Your baked apple oatmeal looks amazing. I have yet to try baking oatmeal yet, but this post may just inspire me to do so!

    I love Valentine’s Day- but I suppose I’m a little biased because it’s also my birthday.

    Isaac and I are going to LA for spring break- I’m so pumped!

  2. I agree with what Brittany said re the oatmeal – looks amazing, I MUST TRY IT!
    I hate Valentine’s..mainly cos I don’t have a boyfriend, so I’m just bitter and jealous :P if I had one, I’d embrace it with open arms and do things like you did – bake!! (Maybe not store in the oven though LOL!)
    My fave holiday destination is the USA. Doesn’t matter what holiday or what weather – I just love it there!!

  3. I LOVE Valentine’s Day. Even in years where I’ve been single. Seriously, a day filled with chocolate, flowers, and candy hearts. How could that be bad? Your cupcake story is hilarious. And of course, tragic. ;-)

    I’m not really “into” valentines day but it is a good excuse to buy chocolate and/or bake!
    Bathing suits already?! We just got 2 ft. of snow haha

  6. I absolutely LOVE Valentine’s Day! When I was tragically single, my girlfriends and I would get dressed up and go somewhere fantastic for dinner and then drink too much wine… now though, Adam and I like to spend the time together sans video games, TV, or computers (at least for a few hours.) This year, I think we’re doing a fondue night at home… cheese AND bouillon :)

    Spring break… I may be taking a road trip for a weekend of it, but I’ll probably just hang home and spring clean!

    Yes! I’m so excited that bathing suits are now hitting the stores; that means warm weather vacations and spring are on their way! I’m headed on a cruise with my friends for spring break; should be an experience for sure!

    I’m so glad you said that Cancun is one of the most beautiful places you’ve been because….I’m going to Cancun on February 10th! My boyfriend and I chose to get away from the New England cold to celebrate Valentine’s Day and I can’t wait to be relaxing in paradise.

    I think Valentine’s Day is silly. Even when I have a boyfriend we don’t do it up. I don’t need Hallmark to remind me to tell my loved ones that I love them, I can do that any day. I never understood people who get down in the dumps about being single on Valentines day…who cares? What makes being single on 2/14 any different than being single on 2/15? Nothing.
    I am not bitter about vday, I promise, I just think it’s super silly.

    I do not like Valentine’s Day this year. I am recently single and the hype is annoying, especially since my roommate wants me out of the house so she can make a romantic dinner for her bf. Puke. I guess I will accept the invite to a red/pink birthday party that night. Puke.

    More so looking fwd to March, heading to Cancun for a friend’s wedding. I looked at swimsuits this weekend too but convinced myself it’s ok to wear one of the 2 I bought last year.

    I’m actually headed to Cancun in 20 days! Just before the Spring Break rush and just before I lose my mind from all of this snow! It’s my first time anywhere that close to the equator in the warm months so I’m a little concerned that with my red hair and no pigment I’ll spontaneously combust but I have friends on burn patrol so hopefully I’ll be fine! I’m not totally sure what all I’m doing while I’m there tho. I think we’re taking an excursion to Xel-Ha and Tulum and maybe a booze cruise. Other than that I’d be okay with just sitting in a beach chair with a good book and an umbrella drink! I’m excited!

  18. I hate bikinis and bathing suits in general. But I’ve learned to find one or two I like and make them last. So I have two tankinis from a few years back and a one piece for exercise swimming.

    My favorite place to go on vacation was always the run down beach house my grandparents had. It even had an outhouse!

    Now I go to my dad’s who lives near Hilton Head Island South Carolina.

    I used to make cookies all valentines day, but I have since stopped. this will be my first married V day. As for spring break, I am heading home to the states around that time, but mroe importantly, I am looking forward to my first full summer living on a European island. To me, this will be a nice vacation.

    Just looked at the calendar and realized VD is on a Sunday, which means I’ll have to schlep the GF out to dinner instead of brewing beer, which is what warms the cockles of my heart.

    VD is just another excuse for women to gorge themselves on sweets and cakes, as if they needed prodding.

  22. I love Valentines Day also! Love me some baked oatmeal! Today’s version looks delish! I tried adding sugar on top to my baked banana oatmeal last week for a crunch and loved it! Think I will try brown sugar next time!

    I wish I was going somewhere for Spring Break but we have a honeymoon to save for!! I am having my bridal shower instead of heading out of town!

    Heading to Mexico, so I am on the prowl for a new bikini and staying in shape. It gets harder in your 40s that’s for sure.

    I love doing a special thing of my kids on VD. I make them heart shaped waffles and yogurt parfait in fancy glasses. After they go to bed my husband and I have a yummy dinner and a splurge bottle of wine. It’s worked for 15 years anyway.

    VD day is too commercial for me. Too much pressure. I’d rather speak my love all year (and hear it, too)!
    Spring break is Down South. Never seen a plantation or explored that part of the country and it’s history. Hope it warms up down there!
    I wish I liked oatmeal, but it is so mushy. If you have a recipe that is sweet and crunchy, I’d give it another try.

    So, question- Im coming to DSM next weekend, and was asked on a date there (weirrrd. with an ex-bf. even more weird) I was wondering if you have had any good suggestions for dinner!? Two years ago we did Vday at Latin king, and last year it was Machine Shed (so clearly our tastes are all over the place and not too picky).
    If you could help that would be awesome!

    My husband and I really aren’t huge fans of Valentine’s Day. I just have a problem with ‘love’ being commercialized and sold. So, we have a pact that no money will be spent on cards for Valentine’s Day, and we highly discourage purchased gifts. Instead, cards MUST be handmade and handmade gifts are absolutely encouraged and preferred. It’s more fun that way. (Also, having a birthday on the 12th means I’d rather he spend money on me for my b-day and we go out to celebrate that rather than Valentine’s.)
    Favorite spring break spot? Tie: Bandon, OR (or anywhere in OR, actually), and Cozumel, Mexico – both are exceedingly relaxing and stunningly beautiful. Good questions today!

    Hi Kristin,
    I just finished making the baked apple oatmeal, I made a double batch so that some can come with me tomorrow when I open the Bux at 530am, the only good thing about that shift is being done early. I was wondering if you bake yours in a loaf pan? I made mine in an 8×8 because of the 2 batches but I guess I could have used two banana loaf pans.
