Good morning, and happy February 1st! The month of luuuuuurve is upon us. ♥ ♥ ♥ Only 13 more days until Valentine’s Day! What are your thoughts on Valentine’s Day? An excuse to show your loved ones even MORE love than usual is fantastic, in my opinion. I embrace it with open arms…literally. Hugs are free on Valentine’s Day! :D

I’ll never forget the first Valentine’s Day Ben and I celebrated together as a couple, in college. I slaved away making him oodles of cupcakes that I decorated with little frosting hearts, sayings – you know, the works! I stored the cupcakes in the oven so my roommates at the time wouldn’t snag ’em before I had a chance to give them to him. Well, later that day someone turned the oven ON, and my precious cupcakes melted like sugar lava. Soo tragic!! :(  Needless to say, I never made the mistake of storing things in the oven again!

Speaking of fail’s – remember my pumpkin pie oatmeal fail last week where I forgot to add the brown sugar and half the amount of oats? Well, in true serendipitous fashion – I actually LOVED The result! The oats were super creamy and custardy, and the brown sugar that I ended up having to sprinkle on top resulted in an awesome, crunchy, bruleed crust. Today, I recreated – on purpose – and made Apple Crisp Oatmeal!



In the mix:

  • 1/3 cup old fashioned oats
  • 2/3 cup unsweetened vanilla almond breeze
  • cinnamon
  • vanilla
  • 1/2 “baked” apple (1/2 peeled, chopped apple nuked for 90 seconds with cinnamon, honey and a splash of water)

Bake at 375 degrees for 14 minutes, top with sliced almonds, 2 teaspoons of brown sugar and bake for 14 more minutes.


Oh, you guys, so fantastic! Just look at that brown sugar glazy crunch!


How do you like that for a Monday morning breakfast? It certainly got me up and at ’em! Oh, if you don’t want to use almond milk, you could totally use water and skim milk, or all water, or whatever combo you prefer. Whichever you use, I promise you’ll love it! It’s got all the classic Apple Crisp flavors. So yummy.


Speaking of recreations – I recreated my Mixed Fruit Salad from a couple weeks ago, for lunch today. :)


In the mix:

  • Dried cranberries
  • Dried apricots
  • Navel orange
  • Pink Lady apple
  • Sliced almonds

Drizzled in Annie’s Lite Raspberry Vinaigrette, this salad is seriously refreshing and so nice to eat when it’s bitterly cold out and there’s so.much.snow.on.the.ground.! Over it!

Bikinis! Is it really that season already?! I mean…dang!


Instead of moaning or dreading, lets talk about happier things. Bikinis in stores signifies warm weather ahead…Spring…and, Spring Break!

Spring break plans are still in the works (muwahaha!) but my favorite warm weather destinations are Hawaii, and amid the hoards of college students, (I used to be one of them!) Cancun, Mexico is one of the most beautiful places I’ve ever been to!
