Eek, I overslept! Perhaps I should add “waking up” to my a.m. time management tip list!? ;) I was having the craziest, most vivid dreams that completely captured my attention, apparently. Do you remember your dreams?
Ok. Baking last night. It all went according to plan and the Chocolate-Peanut Butter Layered Cupcakes for today’s Super Bowl potluck at work came out beautifully!
Chocolatey cupcake batter and gooey peanut buttery goodness make up the layers of these indulgent cupcakes, which are then topped with peanut butter & milk chocolate chips!
Pop in the oven for 25 minutes and you’ve got GORGEOUS, delicious cupcakes…right?
WRONG! These had no taste! I’m talking – none! It was the strangest thing! How could something that has massive amounts of chocolate and peanut butter NOT taste out of this world? Well, I can’t tell you how, but they didn’t. And I didn’t forget any ingredients either – I triple checked. I read the reviews of the recipe I used before I made these, and there were a couple of people who said the same thing. I thought they were off their rockers because the recipe sounded SO good and I figured it couldn’t be true. Well, unfortunately, it was… :(
Then I went into panic mode. It was 9:00pm and there I was cupcake-less for my potluck today! I pondered and pondered, then it hit me – The Ultimate Cookie stash I had in my freezer – perfect!
Plus, I’m excited to have one – I’ve been doing a good job at keeping my hand out of the cookie jar freezer.
In anticipation of today’s potluck, and because I’m running late, I kept breakfast simple with a Cashew Cookie Larabar and a Navel Orange.
Usually I am 100% for NOT going to a potluck hungry – it is truly a recipe for disaster. But sometimes it’s nice to not have a plan. Indulge, enjoy, give everything a nibble. It’s ok!
So, that’s what I’ll be doing today. Tasting, enjoying and nibbling. I’m excited. :)
There was literally nothing in the house that struck my fancy for lunch today, so if I’m not full from the potluck, I think I’ll venture down to my work cafeteria for some soup and a salad. They’ve always got the best chicken noodle soup on hand.

Fun Friday Activity: Plot your run!
I’ve come across a lot of websites that let you map and track your running routes outside – but the Livestrong Create-a-Loop tool is really great. It’s super easy to use and gives you a whole plethora of stats regarding your run. Check it out!
So, per the trail run I plotted above (which is another great feature – you don’t have to follow roads/sidewalks,) I can see the different elevations I’ll cover during my run, how long it should take me, how many calories I should burn, and more!
This tool is another reason why I’ve been playing with inclines in my workouts lately. I mean, look at the elevation chart above for the route I generally run in the warmer months. Clearly this route is anything but flat – yet I usually run on the treadmill with an incline of 0. Incorporating inclines into my treadmill runs will only set me up for success when I’m ready to hit the trails – which is hopefully soon!! :D
