It’s the Most Important Meal of the Day!

Good morning!

I woke up with a fierce hunger today, but luckily I had a master breakfast waiting for me to whip up – Cheese & Veggie Egg Skillet!

You can’t have a skillet without eggs, natch, and I used these Eggland’s Best eggs in mine.

Last night I prepped the ingredients for my skillet by portioning out some tofu, steamed broccoli, and cracking one egg + egg white + hot sauce in separate dishes.

This morning all I had to do was sauté the tofu in ~1 teaspoon of butter for a couple minutes, throw everything else in the pan, scramble, and top with some cheeeeeese! Served in a skillet because that’s one less dish I have to clean up, and because…it’s fun. :)

You know I like my sweet breakfasts like overnight oats and apple crisp oatmeal, but there is definitely something to be said for starting out the day with a hot, hearty savory breakfast. :)   Ok, there’s still something to be said for a little sweet in the morning, so I took care of it with a piece of whole wheat bread + raspberry jam!

This dish also rocks because it reminds me of my Dad. Growing up, on the weekends, he always made my brothers and I eggs topped with cheese and they were so special. Thanks Pops! :D

For lunch I’m packing the freshness – a big, Kitchen Sink Salad!

In the mix:

  • Mixed greens
  • Baby carrots
  • Raw broccoli
  • Roma tomatoes
  • Dried cranberries

Usually I can’t take raw broccoli, or raw cauliflower for that matter, but I like it chopped up real small like this!

I’ve also got two yogurts?

Nah – one is used for transporting my salad dressing! Do you reuse containers for other purposes?

Ahhh – scrambles in the morning rock! They are faster to make than oatmeal, and have serious staying power. Especially if you sneak some of that tofu in there! ;)

    I always use old containers for storage. We actually have so many that it drives us crazy! I eat for about 20 minutes or so in the morning, and I always eat breakfast. I always have- I can’t imagine not!!

    I leave 35mins ish for breakfast, without fail – I NEVER skip it! Agreed it is the most important meal :) I like a nice long leisurely breakfast :)
    I re-use containers all the time! I had ‘smoothie in an old pesto jar’ for breakfast the other week…it saves buying loads of new containers!

    I’m all about re-using/recycling….I swear our trash has gone down so much since I started being a FREAK about it. I will literally pull something out of the garbage, that my husband put in there, wash it, and reuse it!

    I don’t really eat breakfast suring the week. My stomach doesn’t like food until about an hour or so after I wake up, so I eat something when I’m at work. On the weekends, though, I have plenty of time to get up and make a yummy breakfast!

    While it’s the most important meal of the day I generally only give myself 10-15 minutes to prepare it. I’m a slug-a-bed. So I tend to eat the same things although I did learn some new quick tricks for my challenge last week.

    Breakfast is my favorite meal of the day. It usually takes me about an hour to eat. But this is the only time I have to myself so I enjoy every minute as much as possible. EVERY DAY!

    I definitely eat something for breakfast–is it well-rounded and perfectly healthy each time? Not necessarily, but I’ve got feed the kids before they head off to school so quick is king. I love toast with a dollop of coleslaw on top. So random but I love it with a cup of coffee.

    I had almost the same meal last night for dinner! Except I had bacon instead of tofu and peanut butter instead of jelly. Breakfast is my favorite meal! Usually I have about 15-20 for breakfast on a weekday and I always make it a point to eat something for breakfast.

    I sometimes reuse containers and I should definitely do it more often. As for breakfast, I usually have time to make it at home, but rarely have time to eat it at home. For me, it’s usually a smoothie with either toast and PB or, as of late, a chickpea blondie. If I’m at home, it’s oats, or eggs with toast, or a yogurt mess.

    It’s probably my favourite meal of the day!

    At school I only take about 5 minutes to put breakfast together since I make my oats in the microwave and then just have to wait for the water to boil for tea. At home, however, I can take up to 15-20 depending on what decadent favorite meal of the day treat I have in mind, I’m a sucker for steel-cut oatmeal ;) . Have a great day!

    I usually have about 10-15 minutes for breakfast which means quick oatmeal, yogurt or eggs. Some days when I hit snooze one too many times I have to wait to eat breakfast until I get to work. Either way I always make sure to eat something within an hour of waking up. If not I get very crabby and start craving a not so healthy lunch.

    I never have hot breakfast in the morning but I did have it for dinner last night! I usually have a yogurt with some Nutty Nuggest (Hy-Veee cereal… it’s like Grape Nuts) on top. Today I had half a grapefruti too.

    I eat breakfast every day. And I never eat anything that takes over 3 minutes to prepare!

    I reuse all of my containers…almond butter jars are for flaxseed, hemp seed, and chia seeds. Big yogurt containers are for rice or beans.

    I’m not a morning person, so 15 minutes or less…TOPS! I do eat something every morning to get my low blood sugar up & running. It’s best if it consists of 2 parts carbs to 1 part protein. Sometimes I accomplish that ratio, sometimes not! If I do…I can go much longer before feeling crappy & needing to eat again. I’m laughing at Bridget’s toast & coleslaw sandwich! I like a little Fareway ham salad on Fareway Multi Grain toast!(this is the best bread EVER!!). Breakfast of Champions!

    I absolutely eat breakfast every day and I always have oatmeal, oat bran, cereal, etc. I LOVE eggs and scrambles (your looks incredible, btw) but not in the morning.
    I’ve never seen that brand of yogurt before!

    I do eat breakfast every day, although many days it’s usually just a loaded green smoothie (quick and easy when I’m rushing out the door!). It usually takes me 15 minutes at the most to make breakfast if I’m making eggs or oats.

    I can’t function without eating breakfast, I have to eat three meals a day! I spend about 15 minutes total on breakfast, making it and eating it. Eggs, oatmeal, cream of wheat or toast are usually my breakfast.

    I have always been a breakfast girl, it’s definitely my most favorite meal of the day and lucky for me it’s also the most important! I can’t even remember a time I’ve skipped out on it. That being said, I usually don’t have much time to make breakfast (10 minutes?) so I typically make a quick bowl of oatmeal with apple

    Yes, I eat breakfast EVERYDAY!!! If I don’t I am starving later and usually eat “bad” food……=(

    I usually don’t have enough time during the week days to make a skillet breakfast but I try to on Sunday’s if I can, I call them Big Breakfast Sunday’s! =)

    heck yes I reuse containers!! they are the best to bring things to work and what not! cottage cheese containers are the perfect size for oatmeal!! your breakfast looks awesome! i usually crave SWEET breakfast (think oatmeal with PB and berries) but that looks like it would be a perfect meal any time of the day!

    I guess I’ll be the only guy chiming in here. :) I generally eat a Banana and Yogurt before my workout. Then, about an hour or so later I have a wheat bagel with Peanut Butter. Then, every two or three hours I try to get a protein and carb mixture to keep the old metabolism a-churnin.

    I always eat breakfast but I never leave myself any time to eat it. I start prepping it at about 5:55 am and am full and out the door by 6:08. Craziness.

    Am I the only one who likes a good old bowl of cold cereal? ;) I stay away from super-sugary cereals but I like my breakfast to be at least a little sweet! My FAVORITE breakfast ever is French-style – croissant, fruit, and hot chocolate. Yum! And, since my boyfriend is German, I’ve also gotten accustomed to German style breakfasts which involve making little meat and cheese sandwiches on good bread.
