You know those times when replacing the decadent, dreamy dessert you really want, with a piece of fruit, just isn’t going to cut it? I’ve got the solution for you: Chocolate Covered Orange Slices!

YES! 3 minutes is all is takes to whip up this naughty-yet-nice, incredibly satisfying treat. :) Start by peeling and separating one orange.

Melt 2 Tablespoons milk chocolate chips (or dark chocolate!) in the microwave for 50 seconds, or until smooth & creamy, stirring every 10-12 seconds.

Dip your orange slices in the melted chocolate and lay on a piece of wax paper.

Who doesn’t like chocolate and fruit? And who knew it was so easy to make your own chocolate covered fruit?! What a great way to get your chocolate fix, and still keep it relatively healthy. This whole thing clocked in at 200 calories! :D

Spunky citrus and sweet milk chocolate – this was seriously the best 3 minutes I have spent in a long time, and will certainly be repeating in the future. FYI – this would make an awfully nice Valentine’s Day treat for your sweet! ;)

After whipping up my new favorite dessert last night, I made a big bowl of Blueberry Overnight Oats for breakfast this morning.

Told you I liked those sweet breakfasts! ;)

In the mix:

  • Fat-free Blueberry Cheesecake yogurt
  • 1/3 cup old fashioned oats (uncooked)
  • 1 banana
  • Sliced almonds

Refrigerated overnight to chewy, creamy, sweet & crunchy perfection. Everytime I make a bowl of overnight oats, I just can’t get over how awesome they are!

For lunch I’m taking some leftover Chili Verde, an Apple Pie Larabar and a Navel Orange.

I made this batch of Chili Verde a little thick since it was going over our chili cheeseburgers, so I added a splash of chicken broth in my to-go container to make it a little more soupy/chili-y for lunch. FYI, I can’t for the life of me figure out why this chili won’t photograph green- cause it really is!

The Apple Pie flavor of Larabar was one of the first flavors I tried when I started eating these bars. It’s remained one of my absolute faves – you never forget your first love!

6 ingredients to spicy, apple pie goodness. :)

This is the last orange from the bag I bought at the store last weekend, and I kind of want to save it for another chocolate covered orange tonight! We’ll see if it makes it through the day. ;)

For some reason the sky is positively PINK today, which reminds me, I picked out a Valentine’s Day dessert to make – Red Velvet Whoopie Pies!!! I am literally giddy in anticipation of making these! After whipping up a billion Pumpkin Spice Whoopie Pies earlier this year, I’m hopeful that this recipe will turn out just as fabulous. (Oh, don’t worry about this spoiling the surprise for Ben, he already found out what I was making. :( My bad for leaving the recipe up on the computer!!)

Tomorrow’s FRIDAY – have a great day!

What’s your favorite chocolate covered fruit?

Milk chocolate, white chocolate or dark chocolate?

After last night’s dessert – chocolate covered oranges are currently holding rank above all other chocolate covered fruits! My faaaavorite chocolate is white chocolate, followed closely by really good milk chocolate. I still can’t devlop a taste for the dark stuff!
