Dried apricots are nature’s candy, but they’re also nature’s kryptonite. What is it about them that makes me powerless to stop at just 1 3 5 7 9??
What’s your kryptonite? My list also contains sugary cereal, granola and/or chips of any kind. We don’t keep them in the house because it’s just too tempting!
While attempting to keep the apricot snacking to a minimum, I got dinner reheating on the stove. Yes, reheating – I actually made it yesterday. Coconut Chicken Chili!
I really like making chilis, soups, stews, even crock pot meals ahead of time – I think the flavor gets 50% better the couple days after it’s made.
Tonight I merely took the big chili pot out of the fridge and let it bubble it’s way back up to temperature!
I cooked up some nice and chewy brown rice alongside.

The breakout star of the dish was a can of Lite Coconut Milk. Coconut milk is finely grated coconut meat, steeped in hot water and squeezed. After cooling, the coconut cream rises to the top. To make lite coconut milk, they just skim off some of the cream before packaging!
Since the lite coconut milk has less cream, it’s less thick. To compensate, I let the chili cook for an extra 20 minutes this afternoon while the rice was cooking. The result was a super creamy, thick and decadent coconut chicken chili!
Two words: TOP. NOTCH.
This was outstanding! Like I said, the coconut milk gets super thick and creamy, and lends just a hint of that exotic flavor. This chili kind of, kind of reminded me of a coconut curry!
I followed this recipe, except I used lite coconut milk, and a couple shakes of dried basil, instead of fresh. Oh, and I served it over brown rice. ‘Cause that’s how we roll.
Four thumbs (mine and Ben’s) WAY up for this dinner!
Speaking of Ben, his little paw is currently buried in the dried apricot bag. I guess its particular brand of kryptonite is strong enough to effect the whole household! I’m about to snatch him up to go get a special dessert. I’ll fill you in, in the a.m.

Dried fruits = sugar bomb. However, I love the taste of it, but have yet to find a variety that doesn’t have sugar added and has natural sweetness.

Um yeah.. will have to try that chili as I have coconut milk in the fridge with nothing to do with it. Looks good!

Cereal is my kryptonite for sure! Last night I woke up in the middle of the night because I couldn’t sleep, so I came downstairs and downed 3 bowls of cereal before falling back to sleep. Damn those nights of mindless cereal binges. LoL

Yum! That chili looks good! Love the unique coconut twist!! I too love dried apricots but I know my limit because too many=upset stomach!! Sweets are my kryptonite! Specifically anything chocolate!
my kryptonite would have to be either dried tart cherries or roasted cashews… they’re both so addicting! i also really, really love goldfish and teddy grahams… funny i know, but those little guys just have a special place in my heart
and that chili sounds faboulous! i live chicken chilis and the addition of coconut milk is definitely something i’ll have to try out next time!

If you like dried apricots…you need to try dried kiwi and dried peaches! I recently discovered them at The Fresh Market, and they’re my new obsession!

Dried apricots..I hate them!! I think they’re nasty. Dried DATES on the other hand- now you’re talking! They’re my kryptonite of the dried fruit variety:)

I personally love dried fruit and chips. Though I’m pretty good if they’re in the cupboard. Lately we’ve been into Popchips, so I don’t feel bad eating them! Puffins are great, too (the PB kind).
I try not to keep a lot of junk in the house, so it’s usually fresh and/or homemade stuff in our kitchen!
