And it was GOOD!

Gooood evening!

IME (Iowa Mom Eats) once again did not disappoint today. :) The table was all set when we arrived for lunch (still rocking the Valentine’s Day tablecloth – totally adds a festive, cheery touch!)

Since it’s been so cold and nasty out, my Mom had a big pot of Chicken Corn Chowder bubbling away on the stove!

Thick, hearty – but also very light. There wasn’t any cream in here, yet it was wonderfully rich. How does she do it, I wonder? We gobbled it down – finished the whole big pot between 6 of us! 8O Finn politely declined a bowl. ;)

Alongside we had a wonderful Spinach & Pasta Greek Salad.

This was torn spinach leaves mixed with mini bowtie pasta, fresh tomatoes, feta cheese and Italian vinaigrette. It was fantastic! The whole family went back for seconds. :)

You know there was dessert too - Blueberry Pie! My Mom, and Ben’s, favorite.

AND she made stewed blueberries to go on top!! This was luscious – ’nuff said!

Oh my gosh, I have to show you guys – look how high the snow drifts are in my parent’s backyard – they’re up over the 6ft fence! You could basically walk up them and over into the neighbor’s yard. Can you imagine the fun you’d have with these drifts if you were a kid? Forts galore! ;)

After lunch, Ben and I hung around for a couple hours so I could get my 20 minutes of movement in – a power walk @ 4.0mph and a 2% incline on my parent’s treadmill – and watch the Olympics. It’s official, I’ve got the bug. I really like them now! Team USA! I still, however, cannot forgive Apolo Ohno’s soul patch. I just…can’t.

At any rate, we came home to the wonderful smell of dinner in the crock pot. I just adore how the scent fills the house and welcomes you home. It’s so cozy!

Crock Pot Santa Fe Chicken!

I made it the exact same way as last time, except after I took out and shredded the chicken, I let the remaining mixture bubble on high for about an hour. Just so the flavors could concentrate even more.

Served over chipotle rice – we proclaimed it GOOD!

To make rice that tastes exactly like Chipotle’s, I add a splash of lime juice, some salt, a small pat of butter and a ton of cilantro to cooked rice. It is seriously TDF! :D

And I’m telling you – shredding that chicken after it’s been slow cooked for 7 hours is like running a warm knife through buttah. It pretty much shredded itself!

I absolutely adore this crock pot recipe. All you do is pour everything in and press “on”. It’s literally that easy. No extra steps, no nothin’!

And if you are looking for a low-fat, healthy & satisfying dinner – this is your recipe. The only added fat is a tiny bit of butter in the rice, and the cheese on top – if you choose to put it on (although I would heartily recommend it!) :D

The rest of the evening shall find me blissed out with this Hershey’s Milk Chocolate Almond Bar. I just love the silky smooth, melty goodness of Hershey’s milk chocolate. It is so good!

    Ooh, love your mom’s brunch spread! Do you think she could share her chowder recipe?

    At least we didn’t get the horrible snow that they had originally predicted. I see that it’s supposed to be over 30 by next weekend–wahoo!

    What was “good” about my Sunday? Our delicious supper! We had roast beef in the crock pot (speaking of crock pots, which of your crock pot books is your favorite for recipes?), fried potatoes (sliced potatoes fried on top of the stove in canola oil until just barely done) and some Rhodes rolls! ;)

    you have to admit though, the soul patch is rememberable – “..you know, the guy with the soul patch..” “ooh Apolo Ohno!”.. but it is pretty dirty.

    Sunday is a day of balance – I worked really hard and got all of my to-do list done; but I also slept in until noon =), sometimes it’s just really comfortable to sit there and listen to the rain and fall back asleep… =)

    That snow is outta control! We’d be buried in for weeks in VA if we had that goin on haha ;)
    I love that crockpot recipe, and agree that chicken outta the crockpot shreds so beautifully and tastes even better!
    The best part about my sunday was that I somehow didn’t have that much pain from my tonsillectomy friday, even though “day 3″ is supposed to the be the worst… and I was even able to eat solid foods today for the first time since Thursday night! Hey, it’s the little things right now :)

    Ooh, I need to make that Santa Fe chicken some day very soon! What was good about my Sunday? I made stewed blueberry pancakes for breakfast! And after working out, the bf and I cleaned and moved our bedroom furniture from one room to the front room we just painted. Nice to get that project done! And, it was sunny and in the 50s here.

    My Sunday was good cos my horse did some of the best work she’s ever done, even though it was freezing cold, wet and windy! Horses can totally make or break your day :)

    ooooh… that chicken corn chowder looks good! i tell ya sometimes i wish i could live where the cold weather actually stays for a significant amount of time. i live in south texas, it’s 70 degrees and sunny right now. I’ve been wearing flip flops all this month. anyway, i love all kinds of chowder, did your mom ever shared her recipe with ya?!
