I’m happy to report that we had another gorgeous day here!

This morning I packed a bag to go to the gym during lunch but, when 12:00 rolled around, I decided I was just not feeling it (some days you just can’t bear to step foot in the gym, know what I mean?) Luckily, the sun was shining bright and I had a pair of comfy shoes on (loafers, icyww!) so I bundled up, hit the pavement and went for a lunch time walk around the city!

The weather was even more incredible than I thought, and I ended up blowing right past my turnaround point. I just kept on walking! Past the sculpture garden (looks a little bit different than it did earlier this Fall, huh?)

all the way to the state capital building! 3 miles and 45 minutes later, I had worked up QUITE the sweat. 8O I didn’t even care, because it has been months since I’ve been able to walk outside. It was everything I remembered, and more. Spring is close, people! :)


In other news, I’m wrapping up my 3-day cookie making process tonight – decorating those bad boys – which means I didn’t have a ton of time for dinner. Luckily, I planned ahead and made the base of my easy Turkey Taco Salads last night, by browning and seasoning up my turkey!


Tonight I quickly and easily built my salad by combining:

  • Romaine lettuce
  • 99% Fat-free lean ground turkey breast + taco seasoning
  • Tomato
  • Carrots
  • Cucumber
  • Pepper jack cheese
  • Avocado
  • Salsa + ranch

Oh yeah! Fresh, light, creamy, crunchy and bursting with flavor!


Can we talk about this cheese?! I don’t love spicy foods, but I have a serious soft spot for pepper jack cheese for some reason. This particular variety had just the right amount of heat and was so creamy. It paired really well with the mellow, cool avocado. Yum!


Can we also talk about how much I love the salsa that I used?


Graddy’s salsa is all natural, fresh and made locally right here in Iowa! It’s my top salsa pick if I’m not making it from scratch.



Tonight, I mixed it with a little bit of ranch for my salad dressing, and plopped a hefty couple of spoonfuls of just the salsa on top. Ahhh… :)
