Evenin’!

I feel like I’ve been here, there and everywhere today! I lounged in bed for awhile this morning, ocassionally doing laundry while listening to the rain pitter patter, then headed over to my parent’s house to make Gyoza with my Mom. I have a post in the works with an explanation, recipe & how-to, so bear with me – it’ll be up soon! At any rate, it’s always a good time hangin’ with the ‘rents…know what I mean?

Afterwards, my Mom and I went to the grocery store. We talked, we shopped, we checked out…and stopped dead in our tracks when we saw that it was pouring outside! Instead of getting drenched while loading our groceries into the car, we waited it out with some warm and dreamy lattes from the in-store Starbucks.

Two tall, no-foam, skinny vanilla lattes for zee ladies. You should hear my Mom try and order the aforementioned drink. It’s like a foreign language to her – she knows what she wants, but just can’t spit it out. Don’t worry, I came to her rescue – it’s a mouthful! We had a nice view of the floral department while we sipped. Look at those daffodils, aren’t they gorgeous? They smelled even better than they looked! :D

I did some computer work the rest of the afternoon, stopping when I got hungry around 4:30. I had some veggies that were on the verge of use or lose, so I raided the pantry to see what I could come up with. Vegetable Fried Rice was the result!

I cooked up 1 cup of brown rice and, when it was done, “fried” it in a dash of sesame oil with mixed veggies, eggs and seasonings. So easy!

The veggies consisted of 1/2 head of broccoli, a bundle of asparagus cut into thirds, and ~1/3 cup frozen corn. All microwaved with a splash of water for 3 minutes until barely tender.

The seasonings du jour were garlic powder, ground ginger, soy sauce and chili garlic sauce. Just a teaspoon of the chili garlic sauce will do ya’!

Gosh, I just can’t get over how easy, yet flavorful this meal is. It’s really substantial too! Kudos to the brown rice for that. :)

Vegetarian Fried Rice makes two nights of Chinese food in a row… I know, I know – I just love it so much! See?

I still have 20 minutes of movement, per my 40 Day Challenge, to rip through tonight! I’m feeling like I need some strength training in my life (NEVER thought I’d say that!) so I think I’ll be doing Jenna’s killer, total body circuit. My abs have finally recovered from the double whammy of shredding x2 + the Women’s Health Mag workout combo. 8O They were killer!

THEN, I am so excited you guys, I rented The Invention of Lying to watch! You know my love and semi-stalker obsession with Tina Fey, so I’ve been religiously checking Red Boxes in my area to try and find this baby for the past couple weeks.

I audibly squealed when I saw that it was available and I am SURE it’s going to be hilarious. It has to be, right?! Wait, Tina’s not on the DVD…is she in this, or just produce/direct it?!?!?! Eeek, I’ll find out soon enough, I guess!

Do you ever buy fresh flowers?

I never do – even when I see them at the Farmer’s Market for super cheap. I think they really add to the ambiance of a household…perhaps I could get into it this summer!

    I hate cut flowers. They are pretty but die too quickly. I prefer to have potted flowers.

    I buy myself flowers all the time.
    Its surprisingly inexpensive if you go to the right grocery stores. I liek the potted ones best and if I pay attention I end up having them for years!

    I LOVE fresh flowers! They are so beautiful & just make the whole house brighter! My husband won’t buy them, so I get them for myself anytime they look really good at the grocery store!

    I’m looking forward to seeing what you think of the film. I have liked nothing that Ricky Gervais has done since The Office so was reluctant to pay to see it. Fresh flowers are the best, I can’t keep a plant alive but if cut flowers die it’s ok- it’s expected!

    That fried rice looks and sounds amazing…. yum! I love chinese food.
    I wish that fresh flowers could be a part of my grocery list, but, on a college budget, they are too expensive. They lift my spirits so much, especially after a long MN winter!

    I can’t remember if I watched that movie or not, but I love a lot of the people who are in it.

    I really like your fried rice! I’ll have to try that sometime. :-)

    I do buy fresh flowers on occasion, usually when we’re having company over for dinner or something. I just love the aroma!

    First: I’ve been reading your blog for a while now and I really enjoy it! Your food makes me drool, especially the oatmeal creations … yum!
    Oh, and then a (stupid) question: How many servings does your fried rice yield? I’m quite bad at estimating “normal” serving sizes … Think I’ll give the recipe a try very soon!
