Ahh, it’s been a perfectly cozy Sunday so far!
This morning I woke up to the soft rain outside, transferred over the couch and hunkered down to watch some HGTV with a big blanket and hot carbs.
Ah yes, a toasted Multigrain Bagel smeared generously with rich almond butter and sweet blackberry jam.
Nothing more comforting on a rainy, Sunday morning!
A couple hours later, I tore myself away from learning how to “get it sold” with Sabrina Soto (love her!) to have lunch at my parent’s house. I already knew what we were having for dessert (my Mom and I got it at the store together yesterday) so I was rearing to go!!
Everything was hot and ready when we arrived…
Actually, cold and ready too – there was fresh salsa and tortilla chips out to munch on! My Mom combined fresh tomatoes, cilantro, garlic and some other ingredients in her mini food processor, whirled and served. Easy as pie salsa!
And super tasty to boot!
There was a squeeze of orange juice in this recipe, and while you couldn’t necessarily pick out the flavor, it definitely rounded everything out. Really yum!
Zee main dish was Baked Penne Casserole and Crunchy Asian Salad.
This salad had crisp romaine lettuce tossed in a sweet-soy based dressing and tossed with crunchy ramen noodles, almonds and sunflower seeds.
I just love salads with layers of textures like this. Don’t you?
And the penne casserole – omg – it tasted exactly like pepperoni pizza! It had layers of penne pasta, local Italian sausage, ground beef, pepperoni and cheese. Lots, and LOTS of cheese!
My Dad and I love the burnt edges of casseroles. Chewy and crunchy, ohhh yeah.
Are you a corner or middle casserole piece kind of person?
Finally…the piece de resistance…the most incredible thing I’ve had in a loooong time – Peanut Butter Cookie Ice Cream!!
We’re talking peanut butter ice cream, swirled with a peanut butter ribbon and mini peanut butter cookies!!!!!

Blue Bunny has really out-done themselves with this flavor, and it’s come at just the right time – we ran out of peanut butter cookie Girl Scout cookies this weekend! 8O
Combined with a small square of chocolate brownie, it was like peanut butter cup paradise in a bowl. Absolutely divine!
Clearly, lunch was one to be remembered…for awhile…I’m so full! I’m going to attempt to digest for a bit before heading out on a run. The rain has stopped and I’m bound and determined to get out there!
