Sweet Potato Punishment

I think this pretty much sums up how it would feel to be exercising outside right now: uncomfortable.

In case you didn’t figure it out, it’s snowing. Again. Really hard, too – sigh! :?

And it just keeps coming down harder and faster…! Oy vey – what am I going to do with you, Iowa? I’ll tell you what I’m going to do…I’m going to make some Sweet Potato Fries!

Guess I’m on a sweet potato kick these past couple of days, huh? ;)

I started with one sweet potato which I cut into fries, then tossed with a drizzle of extra virgin olive oil, garlic salt & pepper.

I roasted them in a 425 degree oven for ~15 minutes (I don’t know the actual length of time because the timer on my microwave never started!) then I flipped the fries, turned the oven up to 450 and roasted for 5 more minutes.

Served with Vegetarian Baked Beans for dunkage and maximum awesomeness!

K – sweet potato fries are where.it’s.at. – they are SO good!

The punch of olive oil, pepper & garlic are amazing contrasts to the sweetness of the potato.

And definitely needed when you’ve got sweet baked beans too! I’m telling you, sweet potato fries were born to be paired with baked beans.

Oh my gosh – IGE reader Elizabeth sent me this YouTube video of her boyfriend that I just had to share – it is hysterical!! They entered it in a contest to win a 1 carat diamond engagement ring and the more views the video gets, the better. The couple with the most, wins! :D

    Where did you find that weather page with the “exercise conditions”? Awesome! We’re still waiting for the snow just north of CR…but it’s 36, rainy, and windy, and we’ve seen a few flakes! Oh crap, I take that back–it is now snowing! And I just bought my new running shoes today (happy birthday to me!), but I guess I’ll have to wait a few days to break them in!

    You should try the sweet potato fries with cinnamon next time! We always bake them w/cinnamon & cracked black pepper. Then sprinkle a dash of sea salt on @ the end. SO good! :)

    Sorry, I think the system that’s hitting you started in the Rockies. Yesterday in Denver it was 55 and sunny….today there is already 6 inches of snow and it won’t stop snowing!

    SNOW!?! Not cool! Sometimes I hate this time of year…it’s such a tease! One day it’s 70 and sunny, and the next is snowing! I kind of wish that once the weather got warm, it stayed that way…none of this back and forth!

    Ew, you can keep that snow in Iowa, we don’t want it in Illinois!! It was really nice today and about 65-ish but it’s supposed to be in the 40s and rain tomorrow and a chance of snow on Sunday :(

    More snow!? Crikey, it never seems to end in Iowa! We’ve got mild warmness, but slightly rainy…not too bad, I just hope it doesn’t rain on my half marathon tomorrow!!

    It’s the perfect cool-ish temperature in Germany for a run (going after my iPod charges a bit) but it will probably rain later. Your sweet potato fries reminded me of going to Jethro’s with my parents over Spring Break, and THANKS for the mac ‘n cheese recommendation! Loved the pulled pork, and that mac was TDF!

    I hate to say it, but I miss snow! I guess the grass is always greener right? We just hit full on spring in Rabat, Morocco and it’s in the 80′s w/ mild humidity. Humidity is a real problem in the winter so the lower numbers are getting a warm welcome from us! Sorry to hear about so much snow though…

    Well, I am here in DM, so I have the same snow! I can’t believe I wore sandals to dinner on Thursday night and was back to boots on Friday. Oh well, now I can feel no guilt as I hunker down to watch UNI this afternoon!

    We also make sweet potato fries, but with paprika and cinnamon… SOOOO GOOD!

    I am making the sweet potato fries for dinner tonight. They look too good to be ignored.

    And the weather in Fargo is hopping, like always. It looks like the snow passed us for the most part and went into your yard, I apologize. We are in “flood mode” still as we wait for the Red River to crest and start lowering. Today it has been in the thirties for the most part, but it’s supposed to get into forties and fifties in the next few days. I can’t complain because sometimes it’s still in the teens and twenties here in March.

    I hope your snow melts again soon so you can enjoy the outdoors!
