Ah, To Be Young!

29

Goooood afternoon, friends!

I’ve been a busy bee today! I woke up early and hit the gym. I’ve had gym anxiety ever since I started running outside a couple weeks ago – not wanting to go back and have to use the treadmill, etc. – but, sometimes you gotta do what you gotta do. The 4 inches of snow we got last night meant it was gym or bust!

I completed the always fun and effective 3-2-1 Treadmill Interval Workout.

Time Speed
0:00-20:00 4.0 and 2% incline
20:00-23:00 6.0
23:00-25:00 6.5
25:00-26:00 7.0
26:00-50:00 repeat mins 20-26 4 more times
50:00-53:00 3.5
Total: 4.7 miles

I knew I hadn’t been to the gym in a while because I completely forgot the necessities like headphones to watch TV, and my free weight circuit printouts. Blast! Ah well, I made do trying to read lips on CNN to pass the time. Good times, let me tell you! ;)

Once my sweat sesh was over, I scurried home to shower and change because my Mom and I had mother/daughter day at the mall planned! We browsed, we talked, we bought and we ate – at Champps!

logo[1]

Champps is a hybrid sports bar/upscale-ish grill, and we hadn’t eaten there in ages. Their selection (although pricy for the type of restaurant, imo!) is really good, and we split the Bleu Cheese Steak Salad. Bleu Cheese dressing for mumsie, Balsamic Vinaigrette for yours truly!

omg I loathe bleu cheese and asked for it to come on the side, which they messed up, but there was something about the combination of the creamy cheese, zesty onion rings and savory steak that just worked. Completely and utterly satisfying! You got lucky, Champps (shaking my fist!) ;) Do you like bleu cheese?

We continued our shopping bonanza at Target, where we treated ourselves to some Starby’s. :) One short, no-foam, skinny vanilla latte. Yum, yum!

Ben’s little brother just returned from Spring Break in Mexico, so we’re going to go over to his parents house to hear how it went. Ah, to be young again!! ;)

See you tonight – I’ve got a num dinner planned!

~~~~~
Did you go on any fun spring breaks in college?
I was a Cancun child through and through. Yep, one of those spring breakers. Muwahahaha – you’re only young once!!!
    I am so jealous of your day! I love starbucks but live a 3 hour drive from the nearest one, which is also where all the shops are! I may have to plan myself a wee trip that way next weekend. :)
    My friend used to work at Champps in Nebraska. I loved it when she would bring me food after her shifts. I remember really enjoying the salads!
    I went to Cuba last year via Cancun… and worked this year, I’m trying to save up for more travels!
    I’m with you usually… I can’t stand bleu cheese!
    I always WANT to like bleu cheese, so try it every-so-often, but it always ends with the same result – just too strong. Feta is much friendlier to my taste buds.
    My favorite spring break (well, two of them actually) ever – Cozumel, Mexico. The year my family did an all-inclusive resort there was the most relaxing experience ever. I’d go back in a heart beat.
    I always used my spring breaks for missions work with my church college group. We went all over the place and did different events for the week.
    GO UNI!!! I’ve never been so happy to have my bracket blown by UNI. Being from Missouri we don’t like Kansas!
    No foam? No foam! That’s the best part. Freshman year of college I flew to Santa Barbara, CA to visit girlfriends. I’m enjoying my last day of Spring Break today at home sweet home : )
    Was that your UNI that just beat my Mizzou’s arch nemesis Kansas? Go panthers!!
    P.S. I don’t like bleu cheese either ;)
    Lunch looks great! I made the sweet potato fries and beans for dinner, and it was a huge success. Thanks for putting that out there!
    I am in college now, and I have to admit that I don’t do a thing for break. I have been plugging away at the job all week (we’re on spring break now). I am going to England for two weeks in May after the semester, however, so I am considering that my spring/summer break.
    I love blue cheese! But just the cheese, not the dressing ;-)
    I say “eeww!” to blue cheese! Something about it that I just can’t take…you’re much better than me for even giving it a chance today!
    I am not a fan of bleu cheese but I can tolerate it in certain combination. So very strange.
    We always did Spring Breaks in South Padre and the last Spring Break trip I met my Husband :) hahaha Good times.
    I am with you – I hate Bleu Cheese! I didn’t do anything for spring break this year. Just hung out at school and tried to get ahead on my classwork … I am pretty boring :)
    Totally agree with you – Champps is a little pricey for the style of restaurant it is. And I have had some “not great” meals there, but some of the items they do well, they really do well! Love their gyros and the philly steak!
    Haha Kim, I’m from Missouri too (mizzou). What an upset! Between that and AT&T getting 3G in Iowa I’m freaking out. I never got to go any where for spring break. Hoping to make up for the traveling later in life. Blue cheese and steak/burger is good. Maytag is always on the menu in iowa resturants. I saw I recipie for rochford cheese and chicken I want to try.
    OMG I found your site a week ago, and I’ve seriously just about read through ALL of your entries! I LOVE your site and your recipes are delicious – in fact, you inspired me to try sauerkraut and I LOVE it! It gives sandwiches such a nice crunch! This might sound a little icky, but i topped toast with some BBQ sauce, mozzarella cheese and sauerkraut…deeeelicious! Anyways, I look forward to reading your site everyday!
    Nice pictures! I love “salads” that have things like steak, blue cheese, and fried onion rings on them. They make you feel healthy even though you know deep down inside that it isn’t. Cobb is my favorite. Oh, and why does Champps have an extra P?
    Man, I haven’t seen a Champs since I lived in Minnesota…they don’t have them down south as far as I know. And I’m a lame spring breaker. I had mine last week and I just hung out at home with my family.
    This was the first year I didn’t go on a trip since I started college (yes, I was one of “those” people that went on trips even AFTER graduating, lol). Florida, Costa Rica, Mexico (X2!), and one year to Denver. Ah. I miss it.
