What a great Sunday this has been.
My Mom and I had a very successful shopping trip and I am all stocked up with fun outfits for New Orleans. It’s supposed to be in the low 70s the whole time we are there – SO STOKED!
I came home starving so I snacked on some simple and complex carbs for lunch, aka a Fuji Apple and some Tator Tots!
I had planned on eating my apple with some almond butter, but Ben was putting a big pan of tots into the oven as I was cutting it up, so I Napoleon Dynamited some of them – muwahahaha!
They were just as good as you remembered them.
Ok ketchup, I guess I do need you in my life after all.
After eating, folding a million loads of laundry and getting the rest of our Sunday chores out of the way, I donned one of my new Old Navy finds (a $5 sweatshirt with the word “Joyful” going down the sleeve, how cute, right?!)
and Ben and I escaped into the sunshine. It is a spectacular Spring day out!
See? Even Ben’s excited!
We walked and talked.
Over bridges,
and on flooded trails!
We even realized both of our sweatshirts had things written on the sleeves! Hers: see above, His: Independent!
We walked a little over an hour and a little over 4 miles. It was perfect. Friday, I forgive you!
Then I got to work on dinner – BBQ Chicken Pizza!
I still had a whole wheat pizza crust left over from the pack I bought to make Rueben Pizzas last week, so I shredded up some rotisserie chicken and combined it with BBQ sauce.
Topped with some cheeeeese pleeeeeease,
and baked on the bottom rack (for an extra crispy crust) for 10 minutes!
Soooo flavorful! Rotisserie chicken is buttery, tender and delicious on its own and combined with zippy BBQ sauce, it was just incredible. The chicken sticking out of the cheese even got a little char crisp on it from the oven. Awesome!
omg I just realized I bought a package of Cinnamon Rolls at the store today that I need to pop into the oven! They’re a “half pack” of Pillsbury brand cinnamon rolls that only come with 5 rolls, which is nice when you’re only baking for two or three people. Then you don’t have a big pan of tempting, leftover cinnamon rolls sitting around! Hmmm tots, pizza and cinnamon rolls…good thing I got that walk in!
Take care!

This weather is such a relief, isn’t it?! WTF was that snow yesterday though? EW! I love tater tots
Tator tots! Yes!
The weekends were made for splurging
I typically splurge more on the weekends, just because that is usually when there is more social activities that involve delicious eats.
I am not opposed to living it up a little during the week either though. It is all about balance. Which is why I love your blog. You are a great example of that!
I definitely splurge more on weekends. I have a schedule during the week so I tend to eat well but on the weekends I don’t want to cook as often so my food varies.
I kind of splurge on the weekends- I have a slice of veggie pizza, which isn’t that bad (I get it from work for free:)! I consider it an indulgence because I wouldn’t choose pizza on my own. But other than that, I’m boring- not really!
Hi there for California!
What a nice day you had.
Me and Daughter Lauren had a great day. Went to Weight watchers and I lost 2lbs. YAY!! Came home an put some ribs in the crockpot! Uh Oh!!! Go Figure. Well, will only eat a few then freeze some.
Really enjoy your blog and seriously considering creating one too!
Yay for a great shopping trip! Love when you find great deals.
OMG I use to eat Tator Tots almost every day! Soooo sooo good!
Sounds like a lovely Sunday hun. Glad you enjoyed some sunshine with your man.
I definitely splurge on the weekends, especially after long runs. The sunshine has been great and my kids have loved every minute of it. We survived another Iowa winter and it’s only going to get better!
Again, GO PANTHERS!! What an exciting game and a great time to be a UNI alum. I don’t think a lot of people knew that CF existed!
I splurge a little more, but not too much
That pizza looks SOOOOO good!
We got out and enjoyed the wonderful weather with a long walk as well!
I do splurge a bit on the weekends. I eat rather healthy on a day to day basis, so I like to cut myself some slack once in awhile!
I definitely splurge more on the weekends! I am very disciplined on the weekdays but on weekends I blow it all because I’m with my boyfriend 24/7 and eat out a lot!
I do well when I cook at home though.
I got one of those sweatshirts too, except it is the light pink dream one. =)

You and Ben are so cute!

The sweatshirt suits you- You seem like you are a joyful type of person
I want to see what else you got! Was there much?
I tend to splurge a little more on a Friday night and a Saturday night. Though if I know I’m going out for a meal sometime I’ll save my splurge till then.
Get that Christmas sweatshirt out of here – it’s SPRING!
That hoodie is adorable! I love that both you and Ben had sleeve writing
Try adding some red onion to that barbecue chicken pizza! It’s my favorite way to make it.
