Veggie Diet Secret & TQT!

Good Heaven’s, the birds were chirping so loud this morning, I could hear them all the way in my bathroom as I was getting ready! 8O

If you could be an animal, what would you be? I think being a bird would be a pretty good choice. Chill out in the south for the winter, head north for the summer. Fly anywhere you want to go… Sounds like a pretty nice gig, if you ask me. ;)

In other news, last night I whipped up this morning’s breakfast of Banana-Berry Overnight Oats!

In the mix:

  • 1 Raspberry AE yogurt
  • 1/3 cup old fashioned oats (uncooked)
  • 1/2 Tablespoon chia seeds
  • splash almond milk
  • 1 banana
  • frozen raspberries
  • frozen blueberries

Overnight, the berries melted into the yogurt and created an extra special berry sauce. Omg, no words. Ok, one word - Tropical! Plus, raspberry + banana is my favorite combo mmm, ever, so this breakfast was legendary!

Here’s my “how to” guide on overnight oats. Basically, you mix the main ingredients together and put it in the fridge overnight. How simple is that? :D

For lunch, I’m packing some leftover Spring Stir Fry!

This stir fry made four, massive portions, clocking in at around 320 calories a portion – nice! I just read a quote yesterday (I forget where) that said “I’ve never seen anyone gain weight from eating too many vegetables.” It’s true, vegetables are our friends!

This shall be a healthy, and filling lunch. I can always tell when I incorporate healthy fats like almond butter or, in the case of this lunch, olive oil, because I feel satisfied longer. What about you? I can even tell that with salad dressings. My salads last me longer, fullness wise, when they’re dressed with a simple, olive oil vinaigrette vs some brand of Kraft dressing with a million ingredients.

This snack duo of popcorn and a Fuji apple was a total winner yesterday. I spaced them out for snacks at 1:30 and 2:30 – which worked out great. No rogue, iced, office brownies for me. :)

Well I have to head out a little bit early today. A friend of mine just had a baby girl and I need to drop off a gifty for her. ;) Oh babies – they’re so cute! I had so much fun looking at all the tiny little baby booties and pink outfits. Squeal! Don’t get any ideas though… :D

    I think if I could be any animal I’d be a horse. I’ve been riding since I was 6 (I’m 23 now) and they’re amazing animals!!

    Yes, I want children. twin boys and a girl (I’m a twin)– in that order. haha! Wouldn’t it be nice to decide..? haha

    Aliens?!… maybe… it’s interesting to question why, out of billions of galaxies with planets in them, Earth would be the only one to form life

    I eat veggies all the time for snacks because I can eat an entire pepper and not feel guilty. And I love viniagrettes instead of store bought dressings. Especially since most are made with sugar and mess up my digestive system.

    I don’t have any children yet, but I’m 9.5 weeks into working on one bun in the oven. I want 10, realistically I’ll probably have 3-5.

    I don’t believe in aliens.

    The last thing that I ate was a cup of low-fat cottage cheese 5 minutes ago. Being pregnant I get ravenously hungry and have to snack between every meal.

    Your overnight oats always look so much better than mine! Perhaps Iowa fruit is just more excited to be there than North Dakota fruit, who knows!

    My answers…
    1. I am a twenty-two year-old college student, so I am happy to say that I don’t have any children. Between work and school full time, that would not be a good addition. I want to have one or two children, but probably not until I am thirty or so. I want to graduate and get comfortable in a location and job before any of that “other stuff.”
    2. Aliens? Yes! My mentality is that I believe in anything that could come “get me” for not believing in it if it actually did exist. Aliens, ghosts, vampires (no, not Twilight vampire, but the real ones)… I stick to saying “yes” in believe in stuff like that. If the end of the world comes from aliens, I’d like to think they’d remember me.
    3. The last thing I ate was a nibble of a friend’s muffin last night (banana nut). We were having a late night coffee so I could finish an essay I’ll been procrastinating on for a while. I need to eat breakfast still…so I’ll get on that. I’ll probably eat and apple and a Larabar.

    I have a son now, he is 10!!!!!!!!!!! I had him when I was 17, very young! I do want one more, but in like 3 years!! maybe 2, my fiance really wants two but told him lets start with one first, I know how hard it is to raise a child, he has not gone through that yet : )

    I love salads with full fat dressings because they are so much more satisfying. And simple is definitely best. :)

    1. I have one 1.5 year old daughter already who I LOVE so much and can’t imagine life without her. And we are trying to conceive our 2nd now. I’m pretty sure we will be done after two.
    2. I don’t believe in aliens, but I did have a freaky experience in 4th grade where I had a dream I was abducted and woke up throwing up. It was so real so that freaks me out. They better not be real!

    You’re messing with my mind. The veggie quote is from your doppelganger blogger Carrot ‘N’ Cake. I started reading your blogs around the same time and they overlap. (Case and point: Starbucks’ Free Pastry Day. You got the pumpkin bread; she wanted the pumpkin bread but got the Iced Lemon.) Plus the strange love for coffee and chia seeds…

    Ah well, you both rock. To answer your questions:
    1. I want kids (but am in no rush). I’m leaning towards three (so I can have a middle child to love!)
