These cookie bars are SO decadent, but pretty healthy! I like to have an arsenal of healthier baked goods to make at home when we want something sweet. And while these are better than some huge pre-packaged muffin or cookie, they’ll still leave you feeling satisfied. Plus…chocolate and butterscotch are never bad ideas.
Brandi’s Cookie Bars
2 cups oats (I used 1.5 cups quick oats, .5 cup old fashioned)
3/4 cup wheat bran
1/2 cup brown sugar
1/2 cup unsweetened applesauce
1/2 tsp salt
1 tsp cinnamon
1/4 cup chocolate chips
1/4 cup butterscotch chips
1. Mix oats, wheat bran, sugar, salt, and cinnamon. Add in applesauce and eggs. Fold in chips.
2. Bake at 350 for 25-30 minutes.
