It’s Grillin’ Time!

Hola! Guess what Ben just said to me? Guess.

"Will you bake me some tofu for my lunches next week?"

HAAA!! Ben has officially, single handedly ruined all your excuses for not eating tofu. If he can like it – anyone can! He’s been snacking on a big big batch of cubed, extra-firm tofu seasoned with soy sauce, honey, garlic powder and sesame oil that I baked earlier this week, and finally come clean that he did, indeed, love the stuff. We’re takin’ ‘em down one at a time, folks! :D

In other, non tofu-related news – it’s 88 degrees outside! 8) Can you even believe that?! I am dying to get outdoors!

Well, I actually already did… Ben and I busted out the grill for the very first time this season, and whipped up some thick and juicy Mignon Burgers for dinner!

My family and I have been buying these mignon burgers for many years at our local grocery store. They’re big beef burgers mixed with feta cheese, cheddar cheese, garlic, onions and spices.

Basically, they’re a burger lover’s dream come true – so special!!!

I had Ben make sure our grill was up to snuff last week, in anticipation of the warm weather coming our way. I’m terrified of gas grills, so making sure this baby wouldn’t blow up in my face when I turned it on after the long winter, was priority one!

I fired it up, then Ben got to work flipping burgers!

Ahhh, look at those grill marks! When the cheese starts oozing out and snapping on the hot grill, you know it’s ready. :)

To go along with our burgers I made us a roasted veggie bonanzaaa!

That’s a tray of yellow squash, asparagus and broccoli, dashed with some sesame oil and garlic powder, then roasted in a 425 degree oven. Squash and asparagus get 10 minutes, broccoli gets 13 minutes.

Ok, these burgers rock my face off. In every single way possible.

They are by NO means (nooooo means) healthy – rather they are extravagant, luxurious and oh-so rich. The perfect thing to kick off the grilling season, IMO!

The roasted veggies took the meal over the top. The yellow squash got super sweet during it’s short roasting time.

And the asparagus retained a perfect snap.

The char the broccoli gets from roasting is divine! I really like roasting veggies with sesame oil because you get more bang for your buck. It’s intensely flavored so you only need a few dashes!

I’m off to babysit my little nephew Finnegan and take him for a walk in the beautiful sunshine. It’s way too nice to stay indoors! 8) (omg, I just almost typed "y’all"!)

    I can’t wait to go home andgrill. All I’ve made in the dorm kitchen is grass-fed beef burgers in a pan(though those have been tasty!). And tofu. I make lots of maple tofu :-) You can tell Ben real men eat tofu

    Wow those burgers look awesome. I like soy just fine, but I take a synthetic thyroid hormone (had my thyroid removed for thyroid cancer) and soy can interfere with the absorption so they always recommend keeping so to a limit. So I just stick with non-soy food for the most part. And yum love roasting my veggies, but usually use olive oil, will definitely give sesame oil a try.

  6. HOW FUNNY! Adam said the same thing to me after I started making tofu… and he is PICKY! Love the looks of those burgers…we really need to get our grill fixed!

    Isn’t it FABULOUS out there today?!! I was tempted to bust out the grill, but the daughter is having a friend sleep over, so I decided to play it safe with spaghetti. :)
    Next time try grilling the veggies–then you don’t have to heat up the house! I just throw a big sheet of heavy duty foil on the grill and roast the veggies with olive oil, salt, & pepper just like I would in the oven.

    SO awesome that Ben is diggin’ tofu! I am lucky to have a guy who enjoys tofu as well:)
    I have been having a lot of fun with my indoor grill lately. I can’t wait until I have access to a REAL grill though!

    I can’t believe it’s hotter in Iowa than VA! Although we did register around 81 today, glorious right :D

    We are def getting a grill this year now that we own a house, I can’t wait to make steaks, pizza and grilled veggies on it!

    And just wanted to let you know that I really enjoyed your New Orleans recaps, looks like you have a fabulous trip.

    I laughed out loud when I read that you were afraid the grill would blow up in your face, because I have the exact same fear with gas grills! Regardless, your dinner looks delicious!

  18. Russell loves the tofu when I make it. He was skeptical because he had bad tofu at WF but now he loves it.

    We don’t have a grill so we don’t grill. I would love to get one eventually and grill up some chicken burgers.

    I thought I was jealous reading about your trip…. now you top it off with fab summer weather and BBQ’s?!? It’s nice enough out here in Portland (and the cherry blossoms are beautiful!) but man, what I wouldn’t give for 88 degrees and some grilling right about now!
    I mean, wasn’t it blizzard-y and snowing like, just last week??

    Mr. M would never try tofu, so I haven’t even bothered buying it for myself. Don’t like cooking different meals. haha

    We bought our grill (finally) last Sunday and christened it with some ribeyes. Last night we grilled chicken. I’m a little sad that here in SoDak, it’s supposed to be chilly & rainy for the next few days, so I don’t think we’ll be using it again for a little while!

    We have busted out the grill already! Our first meal was barbecue chicken, baked potatoes, and salad. Yum!

    I’m not a big fan of red meat ~ but the burgers with the cheese….!!! :)
    I’ve never roasted veggies before, but it looks super simple and easy, and not to mention delicious!

    Looks like you had a GREAT time in New Orleans! I’m very jealous! And your burgers look great.

    Unfortunately, we are moving to West Des Moines, where there is a ban on charcoal grills, and the apt. complex we’re going to live in won’t let us have a propane grill. Sadly, we’ll be eating our grilled goods when we visit our parents! Oh well, it just makes the anticipation even more delicious!

    Your dinner looks divine! I want to break out the grill…but i dont have one :( If I did though, my favorite is plain old grilled chicken breast. It tastes sooo much better grilled than cooked in a pan!

    I live in the city and the closest thing I have to a yard is a roofdeck (def no grilling allowed on a common roofdeck!) Soo…I dont bring out a grill. ever. sad i know.
