Malk lives!
In case you are a newer reader, every morning in the Spring, Summer and Fall my Mom and I, who lives about 5 blocks away, go on a 1.5 mile walk in the morning! Mom walk = malk.
It rejuvenates us both mentally and physically, and I look forward to them every morning. What a way to start your day, right?
Today’s walk was the very first of the season and was brilliant, I’m telling you! The birds were singing their little bird songs and boy was it warm. Even at 5:30am it was close to 70 degrees! It also whipped up a fierce hunger that I squashed with some Kashi Honey Almond Flax Cereal!
I received a sample of this stuff in the mail earlier this week, fell in love and bought a box the next day. Since then, I’ve, um, almost eaten the entire thing in four days…!
It’s great for a quick breakfast, or an evening snack when you need something to crunch on. The nutritional stats are good too, a lot of protein!
It is seriously delicious, to boot. I’m actually not a huge fan of the regular Kashi Go Lean Crunch, but the honey in this makes for some really big granola-like clusters that I adore, and the taste cannot be beat.
Beware – this is the crunchiest, loudest cereal I have ever eaten, so it’s not suitable for an office or classroom setting. Your co-workers & peers will be highly annoyed!
Paired with a banana, this makes for a great, on-the-go breakfast.

For lunch I packed a Raspberry Vanilla Yogurt and a Roasted Veggie & Tofu Salad!
I save my yogurt to eat around 2:30 – when the afternoon munchies hit the hardest.
But this baby will be out in full force come noon!
It’s got leftover roasted broccoli, squash and asparagus from last night’s dinner, plus some of that baked tofu that Ben has fallen hard for. I topped the whole thing off with some freshly sliced strawberries, because clearly I cannot have a salad without something sweet.
If you’ve never tried a salad with cold, roasted veggies – I highly recommend! I think they get even more intensely flavored as they sit in the fridge overnight. SUPER yum! Oh, and cold tofu is bomb as well. Make a big batch on Sunday night and add it to your salads during the week!
Soooo, I’ve been so busy with catching up since getting back from New Orleans, that I completely missed the biggest IGE milestone yet – my 1 year blogiversary!
I kicked this little blog off on March 31, 2009 with a welcome message and some Banana Bread Pancakes (which I seriously remember sitting down and eating, weird!) The past year has been so much fun and I truly enjoy hearing from each and every one of you. Every comment and email I get from you guys brings a smile to my face. Thank you for reading!

Congrats on one year! Woo hoo! I’m a huge fan of the honey almond flax too…probably my fave. Or, have you tried the Honey Sunshine? Those are delightful too, but not enough protein or fiber to keep me full until lunch!
Kashi Crunch w/ honey, flax and almonds is my FAVORITE cereal. I LOVE saving all of the big clusters to crunch on straight out of the box. My favorite thing about the cereal is that the clusters absorb the milk, but they don’t get overly soggy! The milk also kind of thickens after awhile, making the last bit of milk left after you finish the cereal a really tasty way to end a great bowl of cereal

I actually found out about your blog last November from a few good friends who just stumbled upon your blog and became so impressed they started telling everyone they knew about! About grits, I know that you “dislike” them but I’ve got an amazing recipe for cheezy grits that are baked and are perfect side for hamburgers or steaks. I like alot of Kashi products, like the go lean cereal(a little bland-tasting on it’s own, but I like it because of the protein content and it goes well with almond milk and banana slices!), also the kashi pumpkin pie bars, as well as their cracker line! Their trail mix granola bars are very bland to me, though.
And congrats on the blogiversary! I started reading last spring sometime, I can’t remember exactly. I stumbled upon it after seeing the link on another blog and started reading regularly.

Please forgive me if this is explained in another post that I can not find, but how exactly to you prepare your tofu? I want to find out a way to make it where it tastes delicious but not a lot of sugar and or fat is added to it ! Thank you so much!

I like Kashi too. Every time I hear Kashi, I instantly think of their commercials, “7 whole grains, on a mission…” Hahaha.
I had just finished eating a bowl of Kashi go lean crunch right before I read this post – in the office no less! Luckily, my coworkers are used to me eating crunchy things throughout the day, and didn’t seem to mind…but it is definitely noisy!

I like Kashi products okay, but I am not a big cereal/bar fan. I did just try the Dark Chocolate Coconut and it was good but I would have preferred it be with Chocolate Chips, I am not a frosting fan and that is what it seemed like to me. But that cereal looks like a good replacement for granola which I love but don’t love the nutritional facts of granola. I am not sure how long I have been reading but I read daily and have learned some neat things from you and just adore how you describe things. I am fairly certain I linked to your blog from CookinFanatic’s blog. And I am sure I found her when doing google search on Chobani Greek Yogurt – I work for them and like to read what the bloggers are saying about us.

Kashi is even more delicious when you add nuts, such as walnuts or pecans. I do that all the time to my Frosted Mini Wheats.

I love Kashi- that cereal is one of my favorites. I don’t buy it every time I get cereal, though, bc it’s super sweet! Sometime I buy the more “boring”, lower-sugar kashi cereals. The ones with the ‘fiber twigs’ and stuff like that

I love Kashi’s Honey Almond Flax! Good choice! The cereal is the main thing of their that I eat, but the brand in general is awesome.
