How’d your Monday go? I got out for a fabulous 35 minute walk during my lunch hour to twirl around walk normally by the tulips that bloomed over the weekend.
Aren’t they wonderful? They’re lining the streets downtown where I work, and are about as cheerful as my Mom’s daffodils. ;)
It ended up reaching a steamy 78 degrees here with rain clouds in and out, so I took a chance and went for a speedy, two mile run after work. It was warm, cloudy, humid and every so often a few wisps of cold air would come by from the looming clouds. Aka – perfect running weather. 8)
I came home and got right to work on dinner – it was a GOODIE: Turkey & Pumpkin Butter Panini!
I started with a store-bought ciabatta roll. These guys come two to a pack for just $.99, and are so much more special than just regular bread. Ya’ know? I smeared mine with some luscious pumpkin butter, then layered on muenster cheese and low-sodium deli turkey.
Ben’s was a wee bit more manly, if you will. Muenster cheese, swiss cheese, turkey, tomatoes, spinach and Bisignanos Italian Dressing.

Into the Cuisinart Griddler we go!
About 5 minutes later, our paninis were done. Look at Ben’s cheese ooooozing out – gooooey!!
To go with, I roasted up some wonderfully crunchy roasted Brussels sprouts. These were tiny little fellows which I seasoned with ~1/2 Tablespoon extra virgin olive oil, garlic salt & pepper.
Oh, quick tip, on Sunday’s I cut up all the veggies I’ll need during the week for dinners, salad toppers, etc. I can’t tell you how much easier it makes life during the week! Does anybody else prep their veggies ahead of time?
I spread my b-sprouts out on a non-stick sprayed & foil-lined baking sheet, then roasted @ 425 degrees for ~25 minutes, flipping half way through.
Thank Heavens for the Cuisinart Griddler!! I am absolutely obsessed with this thing. It takes a sandwich from good, to great.
I can’t seem to try anything besides this combo though – pumpkin butter, turkey and cheese. If it’s not broke, why fix it? Know what I mean? Bean?
These Brussels sprouts are unbelievable too. I popped them into my mouth like popcorn. ;)
They’re so savory and yummy – and are just excellent when paired with the sweet pumpkin butter, melty cheese and crispy panini!
I LOVE THIS MEAL! ‘Nuff said. :)
I downloaded an Abs/Core Class from YogaDownload.com today that I’m off to do right now. Then I’m going to give the Yoga for Weight Loss track another go. My arms finally feel back to normal today…FOUR days after trying the 20 minute session. Holla!
Oh, but first, how could I forget dessert?!
I’m breaking into the Skinny Cow Chocolate Truffle bars that Ben got me last week. Jazzed…need I say more?
