If It Ain’t Broke…

Hello!

How’d your Monday go? I got out for a fabulous 35 minute walk during my lunch hour to twirl around walk normally by the tulips that bloomed over the weekend.

Aren’t they wonderful? They’re lining the streets downtown where I work, and are about as cheerful as my Mom’s daffodils. ;)

It ended up reaching a steamy 78 degrees here with rain clouds in and out, so I took a chance and went for a speedy, two mile run after work. It was warm, cloudy, humid and every so often a few wisps of cold air would come by from the looming clouds. Aka – perfect running weather. 8)

I came home and got right to work on dinner – it was a GOODIE: Turkey & Pumpkin Butter Panini!

I started with a store-bought ciabatta roll. These guys come two to a pack for just $.99, and are so much more special than just regular bread. Ya’ know? I smeared mine with some luscious pumpkin butter, then layered on muenster cheese and low-sodium deli turkey.

Ben’s was a wee bit more manly, if you will. Muenster cheese, swiss cheese, turkey, tomatoes, spinach and Bisignanos Italian Dressing.

About 5 minutes later, our paninis were done. Look at Ben’s cheese ooooozing out – gooooey!!

To go with, I roasted up some wonderfully crunchy roasted Brussels sprouts. These were tiny little fellows which I seasoned with ~1/2 Tablespoon extra virgin olive oil, garlic salt & pepper.

Oh, quick tip, on Sunday’s I cut up all the veggies I’ll need during the week for dinners, salad toppers, etc. I can’t tell you how much easier it makes life during the week! Does anybody else prep their veggies ahead of time?

I spread my b-sprouts out on a non-stick sprayed & foil-lined baking sheet, then roasted @ 425 degrees for ~25 minutes, flipping half way through.

Thank Heavens for the Cuisinart Griddler!! I am absolutely obsessed with this thing. It takes a sandwich from good, to great.

I can’t seem to try anything besides this combo though – pumpkin butter, turkey and cheese. If it’s not broke, why fix it? Know what I mean? Bean?

These Brussels sprouts are unbelievable too. I popped them into my mouth like popcorn. ;)

They’re so savory and yummy – and are just excellent when paired with the sweet pumpkin butter, melty cheese and crispy panini!

I downloaded an Abs/Core Class from YogaDownload.com today that I’m off to do right now. Then I’m going to give the Yoga for Weight Loss track another go. My arms finally feel back to normal today…FOUR days after trying the 20 minute session. Holla!

Oh, but first, how could I forget dessert?!

    Send some of that lovely weather you’re having up north!!! =)
    I have a freezer packed with frozen food for year round enjoyment – my parents have a HUGE garden and we freeze or can everything. Nothing beats home grown green beans!
    I make black bean & cilantro quesadillas, sprinkled generously with green tabasco like there is no tomorrow!

    I get into a habit with things for lunch and just make them over and over. Lately it’s be a salad with random sauteed veggies. Over the winter it was an egg burrito.

    I love frozen foods anytime of the year!
    I wish I was better about prepping, but I’m just not. I guess right now being home all the time I don’t see the point though!
    I go through stages where I eat the same thing constantly, then get sick of it for a few weeks, then start right again with it!

    This must be a good sammie because I have been seeing it on your dinner menu quite a bit these days! :) I love adding pumpkin butter to savory sammies. It’s really the key ingredient!

    Oh, I have so many repeat dinners! I try not do have the same thing in a row too often, but I do find myself turning to some old favorites–tortilla pizzas, humnut/veggie burger salad, burritos…Your sandwich looks lovely! Have a great night!

    I make sweet potato fries over and over and over. For some reason whenever I don’t know what to make for lunch or dinner, they are my (delicious!) crutch!

    I definitely eat frozen foods year round. I love icecream too much not to. Plus I live in the South so even cold isn’t super cold here. Usually at least.

    I used to prep veggies and things, but now that I am a stay at home mom I don’t bother. Sundays are my do nothing days. :D

    I love frozen treats year round. The Laughing Cow Mint Ice Cream sandwiches are my favorite. So delish!! I’ll have to try those Truffle ones. They look tasty.

    I finally learned the value of prepping last year. Now the moment I get home from the grocery store I cut up all my veggies and store them in tupperware in the fridge. Perfect for quick cooking. Plus I’m more likely to snack on them if they are ready to go.

    1. I eat asian cabbage salad at least 3xweek. It’s my go to lunch and it is packed with fiber. I’m telling you………crack open any of those church cookbooks and you’ll find a great recipe!

    2. frozen stuff–it’s all about popsicles and ice cream bars for the kids in the summer. I’m not that into those things.

    I had the same post title today too. Haha.

    I dont think I could ever get sick of frozen treats…winter or summer. I LOVE ice cream and fro yo.

    I definitely prep veggies ahead of time. When I come home from the grocery store, I wash everything! I know people say it goes bad faster but honestly, I end up eating it all in a decent time and I honestly dont recall the last time I threw away a single veggie or fruit that has gone bad.

    Yes – anything with roasted squash/parsnip!! My ultimates :) or oatmeal…I always make oatmeal!

    I eat ice cream whenever I hear it call my name, come wind, rain, snow or sun!

    That sandwich looks divine! I want a panini maker :) As for “go to” meals, I tend to get into ruts a lot. Currently I am in a stir fry rut and loving it! I am also a year-round frozen treats eater. I don’t care if it is 30* below zero – I like my ice cream :)

    We have been stuck in a pizza rut lately. But TJ’s has the best home made pizza dough and it is so affordable. At least with pizza you can switch up the toppings so it is always different. Last week I made one with spinach, portabello mushrooms, broccoli, red peppers, and onions-it was amazing!

    I love how you’re such a healthy eater, but still indulge in sweets!

    I make red potatoes often… I boil a bunch, and then slice them up and cook them in olive oil. Sometimes I’ll eat them with ketchup, or add mushrooms and mix with cheese and sour cream.

    I don’t often eat frozen foods unless they’re vegetables; we don’t own a microwave.
