Mornin’!
I had to skip my morning Mom walk today! For the past three nights I have been waking up literally every hour, which leaves me utterly exhausted in the mornings. My left eye twitch is out of control! I think it’s the pollen in the air. Apparently we’re in the middle of the worst pollen season on record, which isn’t jiving with the fact that I am deathly allergic to it.
At any rate, I think Grandma’s going to bed at 8:00 tonight. Seriously! I kind of can’t wait, actually…
Well for breakfast today, I whipped up some luxurious French Toast with Fruit – which took me tons of time to make, right? Wrong! I cooked these babies up last night!
Last night I combined:
- 2 egg whites
- Maple extract (~1/8 teaspoon)
- Vanilla extract (~1/4 teaspoon)
- Cinnamon
- EarthGrains 100% Whole Wheat Bread
This is another one of those eco grain breads made with wheat grown on fields that use minimal amounts of fertilizer. (Check out Kate Gosselin in the background. It’s now clear to me that Dancing with the Stars is completely rigged – she STILL didn’t get voted off last night! The jig is up, DWTS!!)
I dunked my bread in the egg mixture (which, don’t start analyzing the fact that these are sweet eggs, which makes me kind of naush!)
And cooked them up on a flat top skillet until they were golden brown on both sides.
Wow, these smelled Heavenly and filled my kitchen with the aroma of cinnamon and maple syrup!
I let the French Toast cool on a cooling rack until…cool…then put them into a tupperware container and into the fridge.
This morning, all I had to do was pop the French Toast into my toaster, top with a sliced banana, some blackberries and a drizzle of agave nectar!
Ahhh, who says there’s no time for a great breakfast in the morning?? This took less than two minutes to heat and assemble! I especially loved the addition of maple extract in the French Toast – it gave me that signature FT flavah which was so nice with the fresh fruit and berries. Winner!
I’m literally so excited for lunch today. I’ve got leftover Vegetarian Korma!
Gosh this stuff is great! The pouch was only $2 so this whole meal, which made 4 large servings, came in at around $5 for the entire thing!
This would also be really good made with chicken or even pork.
I’ll be snacking on yesterday’s apple today too. She’s in the fridge at work.

Oh and three Starbursts. Easter candy is still haunting me. Which…I kind of love.
In the News: The Best Vanilla Ice Cream. Do you eat vanilla ice cream? I think I actually kind of hate it! Why eat vanilla when you can have Sweet & Salty Cluster??
A Starbuck’s caffeine boost is in need, me thinks…
Have a great humpday everyone!

What’s your favorite flavor of ice cream? Do you prefer ice cream, fro-yo, custard or other?
I’ll never forget the thick, tongue coating custard I had in Germany – it was unforgettable. However, sweet & salty cluster Blue Bunny ice cream may be the best flavor I’ve ever had!

Your breakfast looks delicious:) And my favorite ice cream is birthday cake remix … such a treat:)
I don’t really like ice cream too much, but if I had to pick, I think I’d go with custard!
Fab idea to do the French Toast the night before! A life of luxury
Hmm my favourite ice cream flavour is Ben & Jerry’s chocolate fudge brownie – but there are thousands of flavours which sound AMAZING but which I’ve never got round to trying – I have an extremly limited ice cream experience! Banana ice cream is good though, I had that once
I’m definitely an ice creamaholic. So Delicious makes the best ice creams with coconut milk! Soooo creamy
I love French Toast, but never get up in time to cook breakfast. So it’s usually something on the go (smoothie, granola bar, fruit). I need to take your tips and fix in advance, because that looks delicious!
My current favorite ice cream is the Chocolate Raspberry Truffle from Brusters. It is to die for!!
seriously – I was going to use this SAME post title today! so funny
favorite flavors TIED: mint choc. chip and coffee.
Great idea to cook up french toast the night before and pop in the toaster the next morning! I love all kinds of ice cream, frozen yogurt, custard, etc….I do not discriminate.
The french toast looks really good! haha I went through a period a few years ago where my eye would NOT stop twitching! It was uncomfortable
My favorite “ice cream” is the So Delicious chocolate coconut milk ice cream!
Great idea on prepping the French toast ahead of time! I may have to try that sometime.
I like good vanilla ice cream as a topping for other desserts, such as apple crisp. For just eating straight-up, for a long time, our “rule” was no ice cream in the house—if we want ice cream, we go to the local shop and have a scoop. My go-to flavor at our favorite ice cream shop is peppermint chip.
My all-time favorite flavor is the now-discontinued (at least in the U.S.; I believe it’s still sold in Canada) Mayan Chocolate by Haagen Daz. Cinnamon and chocolate combined is my kryptonite.
Last week I made “one ingredient ice cream” (pureed frozen banana) for the first time, and that was delish.
I’ll sprinkle a few chocolate chips on top, or blend it into a smoothie with plain yogurt and cocoa powder.
I like vanilla but only with toppings
My favorite is probably cookies and cream! I love them all, fro-yo, ice cream whatever!!
Sweet and salty cluster sounds incredible! I’m a fan of vanilla, always have been, and adding toppings if I feel like it- especially hot fudge! My hometown has an amazing local custard that I always have my first night home. It’s so rich and creamy that the plain vanilla is enough on it’s own.
If I’m going to eat cold stuff I love frozen yogurt. But I don’t eat it often. And Vanilla is only good to add stuff to it.
Obviously ice cream. And, please don’t ask me to choose a favorite flavor. I have equal lovin’ for all! It depends on my mood! Question for you – when you bake your tofu, do you press it first?
My favorite kind of a ice cream is really custard and not ice cream at all! I second the amazing taste of the custard in Germany!!! BUT..then add the custard in Tokyo and the custard at Dumser’s Dairyland on the boardwalk in Ocean City, Maryland to the list. Nothing compares to these so far!!
My favorite ice cream to buy is Edy’s Slow Churned French Silk Pie! OMG SO good and addicting! I also love TCBY though…white chocolate mousse all the way (with butterfingers on top of course)!
My new favorite is Edy’s Limited Edition Samoas Girl Scout Cookie ice cream. YUMMY! I am not a huge ice cream person, but my husband and I finished off this container in three days!
i love the walmart brand sugar free vanilla ice cream! i know it’s plain, but it tastes JUST like pillsbury vanilla icing! rich, creamy, and totally sinless! 70 cals & 0g fat per 1/2c. serving! just sayin’
ps- did the french toast still taste fresh? ya know, like crisp and all, even after the refrigeration?! i may have to try this! i’m all about QUICK breakfasts in the morning. the more sleep, the better!
My favorite REAL ice cream flavor is cookies and cream. Haven’t had in forever!
I make a big batch of french toast and after they cool put them in a freezer baggie and freeze. They are great straight from the freezer to the toaster.
Wow, those look incredible! Great idea with the prep last night as well.
What a good idea to cook your french toast the night before and just heat and reheat in the morning. It still looks delicious.
And I am a huge icecream person. Froyo just doesn’t cut it for me a lot of the time. And my favorite flavor would have to either be cookie dough or birthday cake.
My favorite ice cream is Ben & Jerry’s Chubby Hubby, hands down! I may have to check out that Blue Bunny ice cream you mentioned – I do love sweet & salty combos!
Ohhhh ice cream, how I love thee! Cookie dough is amazing, quite frankly. So is coffee. I love vanilla though!
Your french toast looks so good, miss! Clever to do it the night before too!
Props to you for making your breakfast the night before!!! I wish I could do that but I think it would just make me hungry before bed and I would end up eating it!
I love ice cream but I agree that there is so many wonderful options out there other than just plain ol vanilla. However, my favorite will always be mint choc. chip.
Have a wonderful day!
I love vanilla ice cream, it’s great side with desserts
Dude Kate must have a HUGE fan base. How on earth is she staying??? OMG huge ice cream/froyo person here. I can never decide, but I think I like the texture of ice cream better (since I don’t like melty froyo), but like froyo because you can eat more of it
Favorite flavor? Cookies & cream of course! Followed closely by cake batter and mud pie.
Ok, maybe it is the “pollen” that is everywhere our house that is keeping me up at night TOO as I have been litterally waking up every hour or so for nights now……it amazes me I make it thorugh the day! =O
I LOVE “COFFEE” ICECREAM! Haagen-Dazs makes it in “frozen yogurt” (much less calories, fat, etc. then the regular icecream version) and it is REALLY GOOD!
I love frozen yogurt or custard. There’s a good place on SE 14th St – the name is escaping me right now – that my parents used to take me when I was little. I think I might scope it out on the way home tonight!
haha. vanilla bean is actually my favorite flavor! i am even having it at my wedding. although, i am not picky.. i will eat any flavor
i love pre-making pancakes and FT~ makes for a quick & easy gourmet meal on the fly. have a great day!
Anyone with bad allergies should try using a Neti Pot. It’s a little plastic tea pot thing that you use to flush all the bad stuff out of your nose & sinus cavities. I got mine for $15. at Walgreens. It came w/50 little salt packets. It’s easy to use & I find it rather soothing! It does not feel like you are drowning, as some folks have reported on various web sites. It says to use distilled or filtered water…I just use very warm tap water…I figure it’s already filtered at the water plant! Now on to more pleasant things……ICE CREAM! Chocolate or a good quality strawberry for me, although they are all pretty tasty! Due to a slight lactose intolerance problem, I can only do one scoop at a time, which may be a good thing! Ha!
Oh wow, you are a genius girl!!! The French Toast idea is amazing!!! And I need to get some maple syrup extract, stat.
I looove ice cream! I used to hate vanilla but now I actually like it. Right now, my favorite all time ice cream is Ben and Jerry’s Brownie Batter!
I LOVE ice cream and or frozen yogurt. I eat it EVERY day. My favorite flavors are: peanut butter cup, cookies and cream, and coffee.
At night, I usually have 1.5 cups of ice cream where 1c is low fat/fat free ice cream of yogurt and 0.5c is the real deal. I alternate it in a mug and enjoy!
I love Fro-yo and anything in a coffee flavor has my heart!
Im all about soft serve (froyo or regular)!
I have to ask…what the daylights is a “sweet” egg???? I’ve never heard the term before in my life…and I’m not a complete stranger to the farm!
Ok, a few things. 1- I have been using a neti-pot for awhile as Machelle metnioned and it does work!! I also got mine at Walgreens. 2- I don’t eat much ice cream but when I do my favorite is vanilla… haha I know, so boring. I would say the worst I ever had was in Indonesia and the flavor was durian. It’s this “fruit” grown down there and quite possibly the worst thing I’ve ever tasted.
Neti pots for me just didn’t work, messy and yucky and I felt like I was drowning. I take a zyrtec as needed and I am fine!
I always cook up a batch of pancakes and have them in the freezer, I actually just zap them for me Daughter in the mornings and she smears on mini chocolate chips. She’s happy and I feel like I sort of made breakfast, but its soooo fast.
My favorite is B & R Pralines and Cream, but I have been going to a place called Yozan Frogurt here in so. cal and they have lovely fat free and you put on all kinds of toppings, fresh fruit or carb fest, you pick. They wiegh it and you pay. Its wonderful. Sometimes we do that for dinner.
Kate really is awful dancer, but I can’t help but hate/love her! I am still not sure why or what it is about her.
I ADORE sweet & salty cluster — and I wish I were kidding when I share the following info: I emailed Blue Bunny and shared that it shouldn’t be seasonal ! A girls gotta do what a girls gotta do
My current favorite — at Whitey’s (local) ice cream: Coconut Joy. Coconut ice cream with chcolate covered almonds (in a waffle cone). Delish!
Have you tried using local honey to help with your allergies? My boyfriend swears by it and from what I’ve observed its made a huge difference in his allergy symptoms. It has to be local honey (not commercial) and not be heat-treated, he takes a tsp or two every morning. I’m just glad I don’t suffer from seasonal allergies – I HATE honey!
Chocolate chip cookie dough is my kryptonite. Ahhh love. Can’t get enough of it! Mmm, I love all icecream, let’s be serious. Have a great day & week!
Thank you, thank you for another quick and brilliant breakfast idea… or dinner idea I feel that way inclined
Favourite ice cream flavour- probably some type of kulfi- mango, or maybe pistachio. Especially homemade! Hate, hate hayfever- luckily I’ve grown out of it a little, but I used to rely on antihistamines to get me through the summer!
