A Dinner Best Eaten with Your Hands!

Oooo buddy – we’ve got a scorcher on our hands today! Weather.com has us at 82 degrees right now, though my house, which is oddly impermeable to heat in the Fall & Spring, is keeping me at a comfortable 69 degrees, thank you very much! ;)

I decided to go ahead and nix a workout this afternoon because along with the heat, we’ve also got 40 mph gusts of wind running rampant. Seeing as how my second most hated weather element behind rain, is wind…I decided to keep my sanity intact and pass. PLUS I’ve got a cookie order to deliver AND a nephew to babysit tonight – all before 6:00!

Since I needed to chow on an early dinner, I kept it simple and made Pumpkin Chia Pancakes! I’ve been thinking about these babies since the last time I made them. Honestly! They are that memorable.

I mixed everything up the same way I did last time (used 1/2 cup mix this time), and cooked my pancakes up on a flat-top skillet.

omg, you seriously have to pick up this mix, if you can. We’re talking dense, creamy, chewy pumpkin pancakes. They are insane.

I poured some agave nectar in a cup for dippeage but, to be honest, I used mere dips and dabbles because the pancakes were so decadent on their own.

To be even more honest, after the first bite – I ate the rest with my hands. Aren’t some foods just best eaten with ya’ mitts? :mrgreen:

Oh, I have to report with some sadness that the Trader Joe’s Raspberry Vinaigrette couldn’t hold a candle to Annie’s version. Sorry TJ’s!

    We had 80 degrees and wind yesterday then this morning I woke up to 3 inches of snow. Here’s hoping you don’t get the same.

    I strongly advocate eating all pancakes/waffles with your hands. It makes the experience so much better.

    Tonight I had whole wheat penne with spinach and roasted broccoli. A little bit of garlic, lemon juice and roasted red peppers! Yum :)

    I can’t tell you how much I want those pancakes right now. I had a late ice cream cone snack with my niece and nephew tonight, so I haven’t eaten yet. Looks like I’ll pull together something quick. Glad I make several chicken breasts on Sunday to fill in the rest of the week when needed.

    Is that a Sticks cup I saw in your last post? I love and truly miss Sticks! It is such awesome art. I hope you get to feeling better. There is nothing worse than feeling low iron levels. I had low iron levels last year and started taking prenatal vitamins. It has helped a great deal! Hope you get back to feeling your energy soon. How are the Chia seeds? I’ve noticed them a lot on other blogs, but have yet to try them.

    Our wind was just as wicked! My running friend and I parked a vehicle south 6 miles and ran back to her house with the wind at our backs. We felt like we were flying!

    We had pizza with friends and lots of kids since my friend and I were having a garage sale tonight. The kids played and played………ahhh, the careless evenings of spring/summer!

    I typically work out in a gym each morning but take my dog for a walk at nights… poor thing didn’t get her walk tonight b/c I was not about to go up against those crazy winds!! A person could blow away in those!

    As for pumpkin ‘cakes… they’re my favorite breakfast! In fact, since being married, I’ve happily enjoyed a stack of pumpkin ‘cakes for breakfast on my b’day — however, sans chia seeds. Sounds like a delicious add!

    Definitely need to purchase that mix next time I am at TJs. Question though, what’s the sugar content? I have been paying a lot more attention to sugar content lately, I hope it isn’t too bad, I really want to make them! For dinner I made turkey black bean burgers (diced onion, garlic, ketchup and soy sauce in the mix!) and roasted some sweet potatoes to make sweet potato wedges. DEEE-lightful!
