There Was Only One Choice for Dinner!

There was a fierce battle for which Mexican themed dinner would mark the close of Cinco de Mayo 2010!

Would it be a Tortilla Egg Scramble?

Cheesy, gooey Vegetarian Enchiladas?

How about spicy Chili Verde?

or maybe even Crock Pot Santa Fe Chicken?

Sorry, lova ya’, but none of these meals would do, of course, when Homemade Chipotle Burrito Bowls were waiting in the wings! It only takes 4 steps, didn’t you know?!

Nothing captures the celebration and zing of Cinco de Mayo quite like brightly flavored rice, spiced chicken and fresh salsa! Ok, maybe a margarita…or two. ;)

I made my burrito bowls the same way I usually do.

Oh, this was new actually, today I started with a bed of torn up baby spinach as my base.

Then I layered on lime, cilantro & salt seasoned brown rice, smoky, spicy black beans, grilled chicken seasoned with the same spice blend as the beans,

and salsa! I used my favorite, 5-minute salsa recipe, which tastes so incredibly fresh, and literally takes 5 minutes to make. Nice!

    Mmmm, excellent choice! My hubby and I just start P90X and we’re following the nutrition plan, which is high protein/low carb. These burrito bowls would work out great! Thanks for the idea. :)

    aw, a mom/daughter night sounds fun! My chili verde is in the crock pot. I hope it’s good that way…my first time trying it in the crock rather than per your stove top recipe. Happy Cinco!

    We did the full fiesta at our house tonite! I made roasted tomato salsa, guac, poblano chicken sausages, and sweet potato salad w/ caramelized onions & smoky chipotle balsamic dressing over romaine. Oh, and flan for dessert! My hubby even picked up some Cuervo and sugar-free margarita mix for me…yum!

    can i tell you i searched through all of YOUR recipes for my cinco de mayo dinner, before ultimately settling on chicken tacos (it was wednesday night pantry raid). i also made frozen strawberry margaritas, and fried ice cream. the whole post is up on my blog. it was amazing!!! hope you had fun :)

    I had Mexican Lasagna with homemade guac and salsa with friends… delicious! If I wasn’t pregnant I may have thrown a margarita in the mix also, maybe next year.

    I spend half my life eating Mexican or Tex-Mex inspired meals but I had ravioli last night. Go figure! It went on a bed of spinach too ;)
    Later I may or may not have had some sangria and tequila. Arriba!
