Pie for Dinner

Well the title of this post pretty much sums it up. I had, you guessed it, pie for dinner!

I guess it’s technically a tart, but who’s telling… :)

Confession: I’ve felt funky all day. SO tired for no reason, (I went to bed at 10:00 last night and slept well??) with a raging headache to boot.

I came home wanting comfort food, but alas, the ingredients for Grandma’s Chicken Noodle Soup eluded me. I settled for the next best thing…the homemade Rhubarb Tart that just happened to be sitting on my countertop!

This 4 ingredient tart is the same one I had at my parent’s house earlier this week. It was so dreamy and delish, that it’s the only thing I wanted to make with the rhubarb stash my Mom gave me. I whipped this bad boy up last night, before the Idol concert.

Rhubarb Tart

Ingredients:

2 beaten eggs

1 cup sugar

1/4 cup flour

3 cups chopped rhubarb

1 frozen pie shell

Directions:

Whisk first three ingredients together until well blended. Add rhubarb and mix until combined. Pour into the pie shell and bake at 350 degrees for 60 minutes or until set.

Talk about creamy, luscious and comforting!

The rhubarb is just barely tart, while the sugar, flour and eggs create a sweet, almost custard-like filling.

Because, sometimes you just need pie for dinner.  Know what I mean?

In case you were wondering, no, I didn’t eat 1/4 of this pie tart tonight. I had the other slice for an after-idol snack last night. :mrgreen: The rest of it IS all mine though. Ben hates rhubarb!

I’m off to go lounge on the couch and perhaps give my peepers a rest before my shows come on?!

What are some of your favorite comfort food dishes?

A big bowl of my Mom’s homemade Macaroni and Cheese comes to mind. Oh yeah – you know the kind. Big, soft, elbow macaroni with that creamy, oozy, cheesy sauce. omg.

    i know how you feel, sista. ive been in such a funk all day. nauseated and a killer headache. and im exhausted! but i definitely think id feel better if i had that rhubarb tart! ours is all gone :( hope you feel better by tomorrow!

    I love chili, I find it so cozy, especially with some garlic toast! I adore rhubarb pie, I’m sure this tart is even better – my boyfriend hates rhubarb too so I rarely cook with it! I’ll have some!

    I hope you’re feeling better real soon. I’ve caught a bugger of a cold and it knocked me down last night. My kids didn’t know what to do with mom just laying in bed reading. Must be something in the Iowa air!

    Sometimes pie for dinner is a MUST! Some of my favorite comfort foods are also mac and cheese, my mom’s spaghetti, my mom’s chili… notice a pattern? Mom’s food is the best. Nuff said.

    I hope that you are feeling better soon! Some of my favorite comfort foods are homemade chicken noodle soup, lasagna, or anything that one of my parents make! Oh…and ice cream!!

    I couldn’t figure out what I wanted for dinner last night either. I dug around in the freezer and found a frozen container of 15 bean soup made with the Easter ham bone. It really hit the spot. For more comfort food I used to love my grandma’s blueberry cobbler and my mom’s homemade rolls. Mmmm…
    I just printd off your Thai pizza recipe and can’t wait to make it for a potluck I’m hosting next Saturday. I might have to give it a test run this weekend. :)

    Get out! My boyfriend’s co-worker knows we’re planting fools this year so he came home with BUSHELS of rhubarb last night. I whipped up two *tarts* last nite (similar recipe) and I ate half for breakfast because when I woke up I was feeling FUNKY. It WAS comforting. Usually my go-to comfort food is peanut butter/banana sammies. They just make me feel better. :)

    Homemade turkey dinner……hand made mashed potatos….hand made stuffing…..hand made gravy…..all put together with a nice roasted turkey!! Mmmmmmm

    -my mom’s recipe for scallopped potatoes
    -Chicken pot pie
    -Roast beef w/ yorkshire pud, gravy and mashed potato

    It’s crazy because before reading the recipe I thought you were showing a ham and pineapple pie/tart. Goes to show that looks can be deceiving. I actually just came across some rhubarb and have never cooked with it before – thanks for posting this recipe!!

    Do you think your “funky” feeling could be from your low iron levels? I’ve had low iron in the past (I take a supplement now) during my pregnancies and it really makes you feel wiped out!
