Disaster Averted!

Oats in a Jar kept me full for a full five hours today! 8O Yet another reason why I just adore and look forward to it every time my almond butter jar gets low. ;)

This afternoon was cold, rainy and just plain gross, so after work I hunkered down in my yoga room and completed Yoga Sculpt #1 from Yogadownload.com. This class was taught by my fave instructor, Dawnelle, who turned out to be a friggin’ mad woman in this class! We used free weights to deepen our poses and incorporate more cardio and strength training into the flow, and it.was.brutal. My arms are toast!

Speaking of toast…I made Goat Cheese Pasta with Parmesan Garlic Toast for dinner tonight!

Last week, when I asked you guys for goat cheese recipes, reader Lindsay sent me a link to an Asparagus Goat Cheese Pasta recipe on RealSimple.com. One look at the picture and it was over. Done. Sold!

I used broccoli and wilted spinach in the recipe instead of asparagus because, to be honest with you, I’ve had way too much asparagus lately and couldn’t bring myself to buy it at the store. Plus it was $3.99/lb – oh hells no!

Broccoli + spinach was the way to go, though! They were the perfect sidekicks to the nutty, whole wheat spaghetti I used in the dish.

7g of protein and 6g of fiber - love that!

The preparation of the meal was actually kind of disastrous. The chicken broth wasn’t whisking in with the butter and flour, so I had to transfer it to my mini food processor to get everything bound together. Then when the sauce wasn’t bubbling away like it was supposed to, I realized it was because the skillet was on the wrong burner. Oof!

After several more trials and errors, the dish finally came together and it was absolutely incredible!  A grown up version of your childhood fave, mac & cheese, if you will. So fab!

Next time I’ll probably break up my spaghetti before cooking it, or use a short pasta like cavatappi or gemilli (my two faves!) because the cheesiness did make it hard to twirl the longer pasta. Somehow, I still managed. ;)

My parmesan garlic toast was simply 100% whole wheat EarthGrains bread, smeared with a little butter, topped with a little garlic powder and parmesan cheese, then broiled ’til golden brown. Heaven!

For dessert, my knight in shining armor business clothes (aka my husband) brought me a delectable piece of brownie cake home from work. Swoon!

Aaaand now said husband is trying to put the parmesan cheese away in the spice cupboard. Oh dear.

Brie used to be my fave, but now that I’m seeing how versatile and delicious goat’s cheese is – well, brie might be taking a hike.

And no, I loathe stinky cheese. Ooooogh!

    Ohhhhh cheese — where to begin? I looooove gouda, feta, cheddar… The only cheese I don’t particularly like is Velveeta (does that even count?) but even that has it’s time and place!

    That looks delicious, and well worth the disaster scare! I avoided cooking disaster too, making homemade whole-wheat hamburger buns… long story! Favorite cheese… I prefer Camembert to Brie, but I love smoked gouda too…

    I like all cheese. Seriously. I have yet to meet a cheese I didn’t like! A current fave is Morbier, a sweet French cheese with ash in it. Oh, and burrata… just try it, i promise :)

    Yummy – we will have some goat cheese left over from our pesto chicken goat cheese pizza tonight and might have to try this. I am a fan of basically any cheese other than American, Swiss or anything smoked. Some all time faves though are goat, blue, Manchego and goat Gouda. Okay, I will shut up about cheese now!

    Goat cheese is my favorite. I actually had it with ramps, peppers and onions, and eggs tonight on a bagel. So delicious and fresh from the farmer’s market.

    Your dinner looks FAB! So, being here in Japan, I don’t have a good selection of pastas- so I’ve turned to Soba in place of pasta noodles- 14 grams of protein!!! I know it’s a little pricier in the states, but I highly recommend the wheatiness of buckwheat noodles. Yum.

    Dinner looks delicious (and that brownie even better!). I’m a bit of a cheese wuss – I like colby and chedder (non-scary cheese!). I can’t do Camembert or anything like that, and I really don’t like the smell of parmesan but I can still eat it. My favourite cheese would have to be cream cheese, rolled in herbs and spices – YUM!

    My husband loves stinky cheeses–He tried to convince me the other day that once you get past the smell, Limburger is delicious! I don’t think I believe him, though. I myself, am a cheese coward, and I stick to things like cheddar or colby…Or Co-Jack or Mo-Jack.

    that recipe looks delicious! i just bought a huge amount of fresh goat cheese from the local farmers market, so this is DEFINITELY on my menu for the week! my favorite pasta shape is gemelli too! i love it with garlic, broccoli, and parmesan. yummm! i love brie too – the stuff at whole foods with all sorts of fun embellishments is my holiday fave! (even better if you make it yourself!) and no stinky cheese for me! my mom gets a huge ball of smelly provalone and HANGS IT FROM THE POTS/PANS RACK in our kitchen! sick

    That brownie cake looks amazing!!!!

    My fave cheese is brie, but I only tend to eat that on special occasions. I also love havarti, especially on panini sandwiches. I love munster on nachos, omelettes, and to eat plain. I love feta on pizza and salads. And I love pepperjack for snacking. Okay fine, I just love cheese, but preferrably not the stinky kind.

    hahahahaha I have definitely lost my brain a few times while cleaning up and put items away where they don’t belong. Milk in the cabinet, sure. OH SHOOOT NO! haha.

    I cannot even tell you how many dishes I have royally messed up by putting the wrong pan/pot on the wrong burner! Glad you were able to turn this one around. It looks just delightful!

    You have been doing yoga a lot more these days! Good for you. How many times per week would you say you have been practicing?

    I don’t let my boyfriend put clean dishes away anymore, because he just sticks them any where they fit! And then I can’t find anything.

    Mmmmm Cheese….where tobegin. I love all different kinds, but not stinky….growing up in an italian family they always had the sharpest and stinkiest provolone and I mean SHARP & STINKY!! It literally felt like it was cutting your tongue from the sharpness. No thanks, I’m over that. I also love cavatappi and gemelli pasta too. Awe, how nice of Ben to bring you home a sweet treat!! ;)

    I admit that I never liked Brie until recently when my boyfriend took me out for a romantic dinner and we had their house specialty champagne brie soup. Oh wow.. I never knew brie could taste like THAT!! Hands down amazing. My all time favorite cheese would have to be munster though. Cold or melted its the BEST :-)

    Sharp cheese is my favorite. White Cooper Sharp cheese is the ONLY cheese I like in a grilled cheese!!! I am going to have to get me some goat cheese at the farmer’s market though and make that pasta! Looks yummy… and even the boyfriend said he would try it! Oh, and thanks to you I have been on a HUGE apples and peanut butter kick (and I had to buy some kiwi today too lol)! YUM!!!

    I only like stinky cheese in itty bitty bits on something that can stand up to the taste… like a tiny bit of blue cheese over a nice steak and mushrooms, but very little!

    I’m a huge fan of feta and smoked gouda or mozzarella. :) The smoked ones are really great paired with crackers and summer sausage (gouda), or (mozzarella) in a chilled pasta salad from the Whole Foods cookbook.

    Definitely NOT a fan of stinky cheese – or anything with a pungent/overly strong flavor. We were on a date once at this fabulous jazz club and wanted something from the appetizer menu, so ordered a cheese platter. It was so disappointing! I always want to love more cheeses than I do, but I just don’t. Lesson learned.

    Made this tonight, but with all the veggies in my fridge that needed to be cooked and ate or else. Carrots, zuchs, spinach and broc…and used gemelli pasta since my daughter dumped the spaghetti all over my family room. Fun times. Super YUM result. Now I can have ice cream :)
