34 Quick & Easy Memorial Day Recipes

I woke up feeling like the Pillsbury Dough Boy Girl! I guess the advantage of making chipotle burrito bowls at home, is that YOU control the salt content. Lots of water for this girl today! :)

In other news, breakfast was absolutely luscious Almond Butter & Banana Oatmeal!

In the mix:

As the almond butter melted over the piping hot oats, it created a gooey layer of molten almond butter. AMAZE!

This was actually one of my better bowls of oatmeal in awhile. I give credit to the super ripe banana I used – which was extremely hard to cut up. As you may know, I’m a banana diva, and any sign of browning on my bananas makes me gaggy! 8O

The deep roasted flavor of the flaxseeds and almonds were the perfect flavor contrast to the sweetness. Oh yeah!

I was semi counting on having the other half of my burrito bowl to take for lunch today but, well, you know how that went… So I packed a classic Turkey Sammich instead!

2 slices EarthGrains 100% Whole Wheat Bread, 2% cheddar cheese, roasted turkey and dijon mustard.

Love that dijon zip! Do you like mustard? Ben loathes it!

  2. VeggieGirl 05.28.2010

We ALWAYS host the get-togethers at my home, so I really don’t know what it’s like to just be the guest, haha ;) But I prefer it that way.

  3. Janna 05.28.2010

Thank you for the recipes!!! They look wonderful!

I would much rather host! I love hosting parties and I used to do it all the time. But I never get to do it anymore because my NYC apartment is the size of a closet! But one day!!!!

  4. Machelle 05.28.2010

I’d rather be a guest! Any day! FYI-It’s strawberry time! I bought a little box full from a guy selling out of the back of his truck in front of the Drug Town in Ankeny last night. He let me hand pick from the many buckets he had instead of buying what he already had pinted up. My sister made one of those graham cracker crust vanilla pudding banana whipped cream desserts, so I tossed a few sliced berries on top. Holy Moly it was good!

  5. Sarah 05.28.2010

I loooove mustard! Yellow mustard, honey mustard, brown mustard, dijon mustard, bring it on! My husband loves honey mustard but isn’t so much down with the other kinds. The big debate in our house is mayo (me) vs. miracle whip (husband)…we have started marking our sandwiches with an “S” or “C” in the morning to avoid any lunch time gag sessions!!

  6. Sara 05.28.2010

Turkey and cheese sandwiches are my favorite go-to lunch! I love, love, love mustard. I’d rather be a host! I love cooking and baking all the food for a get together.

  7. Yum! You better believe those turkey burgers are on my list of things to try!
We usually end up hosting things for some reason..

  8. Erika 05.28.2010

I prefer being a guest. I like hosting too, but I don’t like cleaning up! BTW – I went for an amazing bike ride last night with plenty of hills.

  9. Christine 05.28.2010

Do you ever put veggies on your sandwiches? I love thin sliced cucumber, sprouts, tomato, and lettuce on mine. Try it, it really adds flavor!

  10. lovely a.m. oats pics. that blue bowl is great.

  11. Dawn 05.28.2010

    I love mustard too!
I would rather go to a gathering then host, I just have more fun personally, cause I worry too much about my guests comfort!

No plans this weekend, I will be busy putting my home back in order after having to deal with a kitchen remodel all week! Ugh!

    Looks super though.
    Have a wonderful weekend.
P.S. I am now a converted apple slicer upper! ;-)

  12. Larissa H 05.28.2010

i am making your pulled prk II. I am going to be a guest so i am bringing this. I made this over the winter for my family and it was sooo good. I used an 8lbs shoulder and everything was great! we even freezed what we didnt eat an had great left overs a few weeks later! thanks for sharing

  13. I looooove turkey sandwiches, that looks soo good.

I’d MUCH rather be a host than a guest. I don’t really like being waited on, and I’m a control freak, LOL. :D

  14. Ashley S 05.28.2010

Hello! I just started reading your blog and Love it! Did you get your blue bowl from anthropologie? Just wondering because I have the same style just diff colors! I also used 1/3 c oatmeal, banana, vanilla, pnut butter and made almost the exact same thing this morning (on the stove!) and they weren’t near that fluffy! I even used a touch more water than you. What the heck???? How do you get yours so big? (TWSS–nevermind! lol!)

    • Ashley S 05.30.2010

Tell me, it’s killin me! I LOVE me some volumous oats! :D

  15. Melanie 05.28.2010

I think that I would rather host a gathering. I love getting things together and organizing ! There are definitely pros and cons to each though, because when you’re a guest you don’t have to worry if everyone is having a good time ;)

It’s going to be a pretty low-key weekend, but I may have to jump on a few of those recipes! YUM!

  19. Those oats do look pretty amazing and so does that sammie!

Great recipe ideas! I hope you have a wonderful Memorial Day weekend! I thoroughly enjoy hosting people but it is nice to go a party hosted by someone else (to save on all the cleaning and hosting duties :-) )

  20. I love hosting, but it’s so expensive!! And, I love mustard! I’ve never met anyone that didn’t like it! Haha.

  21. gigi 05.28.2010

I’m kinda new here…the baked oatmeal pulled me in!
Cook outs are my favorite, I would love to host one but the inner city has left me yard-less and I just found out charcoal grills on a back porch are a fire hazard. Maybe someday but for now being a guest is good enough for me!

  22. kate 05.28.2010

    Enjoy your weekend!

  23. Lee 05.29.2010

Cool, thanks for the easy recipe list. I need to bookmark that. I’d rather be a guest though – it’s way easier!

I like mustard but only the plain yellow kind.

  24. Veronica 05.29.2010

Wow! So Awesome Kristin, thanks for these recipes! Also, New Pure Bar packaging is being launched in June so hopefully within a month or two it will be in your stores. Maybe this summer when we launch next month we can do a giveaway??? xoxoxo

  25. LAURYN 05.31.2010

GIRL! I made the BBQ and the snickers salad….I LOVED IT!!! The husband loved it!!!! And my guests loved it!!!!! Thank you soooooo much!

  26. AP 06.01.2010

I like to host, but the key is recruiting other people to bring some of the goods aaaand getting someone else (boyfriend? ;)) to clean up. Either way my place is too small right now, but now that it’s warmer the courtyard has been fun!
