Welcome back, everyone!

What was the highlight of your long weekend?It seemed, thankfully, to last foreeeeever, and I am actually feeling ready to head back to work! :D

After several days of indulging, I always welcome getting back into a routine. Eating at set times throughout the day, always knowing there’s healthy options available, and of course, making time for exercise! That started early today with a fabulous morning Mom walk, and Blueberry Banana Overnight Oats!

In the mix:

  • 1 banana, smashed
  • 1/3 cup dry old fashioned oats
  • 1 Fat-Free Raspberry Cheesecake AE yogurt
  • Frozen blueberries
  • Sliced almonds

Made the same way per usual. Gotta love a cool, creamy breakfast, that’s ready for you when you walk out the door. :)

For lunch, I’m taking my leftover salad from Upstream Brewery. Who knew so many of you had eaten there before!?

Chewy prosciutto, tangy artichokes and fresh veggies. Oooo, I should have added some of my fresh goat cheese on there! Oh well, that just means there’s more for later. ;)

This was definitely a two-meal salad if I ever saw one. :)

My Mom is still in “3 children” mode whenever she cooks, so there’s always a TON of leftovers to take home when we eat at my parent’s place. Luckily, that means fresh fruit salad for me!

Nerd alert: I brought American Wife with me today to read during lunch time. I’m already getting sad as I’m starting the second half of the book. I HATE finishing good novels. It makes me depressed for a couple days – I get so wrapped up in the characters and their stories, I never want to say goodbye – know what I mean?!

    I am loving the roasted chicken sub on wheat, with provalone, lettuce, tomato, green pepper, onion, black olives and a little mayo. I eat this at least once a week and crave it all the time…I think I know what I’ll be eating for lunch today!

    This is so funny! They have been making breakfast sandwiches here in Canada forever!!

    I get a veggie sub (vegetarian) on 9 grain honey oat, with lettuce, tomatoes, green peppers, cucumbers and green olives.
    Usually not toasted and never any sauce! They always put too much but I do love the sweet onion sauce!

    I always mix up the toppings, but there’s usually some spinach or lettuce, banana peppers or jalapenos, red onion, green pepper, and olives.
