WOWZERS – thank you guys so much for all your book recommendations! I have a nice little summer reading list to look forward to now.
I was actually up and at ‘em pretty early this morning, as I’m heading up to St. Paul, Minnesota today, to see my brother graduate from Bethel Seminary! He will be receiving a Masters of Divinity degree. Umm, cool!
It’s been a long road to graduation day, and I don’t think any of us can believe it’s finally here. We couldn’t be prouder of him!
I packed some snacks for the road in lieu of a hot breakfast. It’s fun to snack while you’re driving long distances and helps beat the BOREDOM that comes along with car trips!
I’ve packed a nice colby jack cheese stick. I bought these because they were on sale at the store – but I really love ‘em and think I’ll keep purchasing. They’re such a no brainer snack. Just grab and go!
A Pink Lady Apple. To be eaten whole, which I don’t prefer, but what are you going to do…
And carrot chips with roasted flaxseed almond butter!
My Mom recently told me she thinks carrot chips are more fun to eat than their baby or regular sized counterparts. I have to say that I concur!
Plus, they’re easier for scraping out that luscious almond butter and licking it off. MMMMMMMMMMMM!!!
Time to hit the road. I think I may grab a Starbys on my way out of town – wheee!
Have a GREAT Saturday!

Where did you go or where are you currently going to college? What was your degree in?
I went to the University of Northern Iowa and majored in Marketing with an emphasis in sales and advertising. I think it was just last year that I finally stopped being depressed everyday that my college days were over. I LOVED it!!

I currently go to Harvard (going to be a sophomore) and im going to major in Sociology with a minor in Statistics!!!
have fun on the trip!
Mizzou – go Tigers!
I’m at Essex uni in the UK, doing psychology- 1 more year left then I can FINALLY leave! I hate it…
Have a good day
Congrats to your brother! I have a friend that went to Bethel Seminary! As for me:
Iowa Wesleyan College – Bachelor of Music Education (2006)
Western Illinois University – Master of Music (2010)
Congrats to your bro! My two brothers both went to Bethel for undergraduate (my youngest is still there) it’s a beautiful campus. Enjoy your day!
I went to Drake University and majored in Public Relations.
I’m a U of MN student – Go Gophers! Enjoy St. Paul!!! It’s a shame you ever had to leave the wonderful Twin Cities in the first place!
I went to Houghton College which is a small Christian college. I majored in Spanish Literature and Foreign Language education. I did actually teach for two years before going back to seminary. Now I want to continue and get my Master of Divinity while I’m pastoring. I just love school.
I now live in Phoenix, but I grew up in Iowa, and went to school at the U for pharmacy. My brother, though, went to Bethel, too! He graduated with a teaching degree, and loved it so much up there that he decided to stay in MN. If you’re still looking for a good summer read and haven’t yet, I strongly recommend “the Glass Castle” by Jeannette Walls.
YAY for your bro! Hope you have a wonderful day celebrating with him!
I went to the University of Michigan for English & then got my teaching certificate at Eastern Michigan University. I am going back for my masters in the fall–I love being a student! If only it didn’t cost so much, I think I would take classes forever!
Rutgers! RAH RAH
yeah knights! <3
Mizzou! I LOVED college, which is probably why I stayed for 7 years.
I have a B.S. and M.S. in animal sciences (emphasis in dairy cattle nutrition for my master’s). However, I’ve embarked on a career shift, and will be teaching high school science this fall!
Oh, college graduation is so bittersweet… it took me a while to get over being out of college, too.
I graduated from Iowa State University with a degree in Marketing.
I have a BS in IT. Loved college, but was glad it was over because I did it later in life with a 4 year old at home. Can you spell exhaustion?
I agree with you and your mom – carrot chips even taste better to me!
Have a wonderful trip.
Congrats to your brother!
I did my undergrad at the University of MN with a BA in Political Science, Criminology and Communications (’03) and did my MBA with an focus on Marketing at Saint Mary’s University (’09).
Leaving uni is so hard isn’t it?! I only just got over the sadness and I graduated in 06! I went to the university of sheffield in northern england and spent one year studying at the university of texas at austin-best years of my life! I majored in American Studies, which my american friends always find HILARIOUS.
Congrats to your brother!
I did my undergrad at Capital University, a tiny Lutheran school in Columbus, OH, and got my BA in Criminology (I also minored in History). In 2001, I went to Capital Univ. Law School and got a certification in Paralegal Studies. I’ve said many times that I would never redo high school, but I’d go back to college in a heartbeat!
Simpson College in Indianola and I loved it.
I was all set to go to UNI (in the fall of 2001 – maybe would have been there around the same time as you!) but instead decided to go to Creighton University because it was closer to home. Good thing I did because I interned at (and later worked for) Berkshire Hathaway and that is where I met my husband!
Funny how things turn out. My degree is in HR Management.
Congrats to your brother! I go to Columbia University and am doing pre-med, though I will probably major in English.
I am currently attending Illinois State University and I am majoring in Actuarial Science.
I think carrot chips are so much more fun too! I actually just graduated from college about a month ago from the University of Georgia with a degree in Marketing. I still really miss college, but I still don’t really feel like a graduate yet…hopefully it’ll come soon!
Have a great road trip!!
Those carrot chips look like fun!
I went to a polytechnic in Helsinki, Finland and majored in Communication, my degree is Multilingual Management Assistant
I went to University of New Hampshire. My major was in Health Management & Policy. (I work in health care finance in Boston). Gosh, i feel you, leaving college was rough. many many tears were shed post grad….
Congrats to you brother! What an accomplishment!
I graduated from Kansas State in 2007 with a degree in Elementary Education and started by at K-State (through distance ed) several semesters ago in Dietetics and I’m really enjoying it!
Kirkwood: A.A. Liberal Arts
UNI: B.A. English-Teaching (2005)
UNI: M.A. English (teaching emphasis) 2012
Have a fun trip!
MSU-Moorhead for Speech Pathology (undergrad)
St. Thomas-Minneapolis Special Education (masters)
Have a great time up in MN! I was a College of St. Benedict/St John’s University grad and I wish I could go back everyday. I just graduated last year, but definitely could have stayed another 4. Best years of my life so far!
College of St. Benedict/St. John’s University is pretty much the best place in the world – I wish I could pull a Van Wilder and never had graduated =)
I graduated from UW-Madison with a nursing degree!! P.S. Tell Minnesota hi for me – I lived there for 2 years after college. <3
Just graduated from Duke University with degrees in English and psychology!
Hello! I have been reading your blog for quite sometime and wanted to tell you that I LOVE IT! I am at the start of my health-journey. I’m quite a bit older than you and have lots of weight to lose. Your recipes look delicious and the food you eat in every day life is enlightening and so helpful! Thanks for the effort you put into your blog…
I went to St. Olaf College in Northfield, MN and graduated in 06 with a degree in American Studies. And like you, I’d definitely go back any day…though if I’m being completely honest, there are certainly pros to no longer living in a dorm.
Congrats to your brother! I also went to UNI–loved it!! I got my Bachelor’s there in Earth Science, then went to Creighton University in Omaha and got my MS in Atmospheric Sciences.
Congrats to your brother! I didn’t go to college, I’m still attending the school of life, though! LOL
Jenn
I went to Luther & majored in biology. Then went to university of Iowa for med school. I had more fun in iowa city!
I went to UConn and majored in English – or as I like to say, Reading :0)
I went to UC Santa Cruz (GO BANANA SLUGS) and finally majored in Molecular, Cellular, and Developmental Biology after freaking out midway through my Junior year and making the switch from Art.
Also, I have what is probably a dumb question. How do you schedule your days/life to make time for such lovely food and healthiness? I find myself flush with intentions of eating well and cooking meals and having breakfast, only to wake up 10 minutes after I should have already been at work and scrambling out the door rather than scrambling eggs. I’m envious of the ease with which you manage your life, haha!
I went to Iowa State (Go Cyclones!) and majored in Communication Studies with a emphasis in PR.
Carrot chips definitely look a lot more fun than baby carrots!
Congrats to your brother!!
I got my undergraduate degree from the University of Toronto with a specialist in political science and history and graduated in 2005! I just started law school this past fall at the University of Windsor and the University of Detroit and I will graduate with both an American law degree and a Canadian law degree! It’s a pretty one-of-a-kind program- because of the geography of Windsor & Detroit (and them being 10 minutes away from each other), it allows for an integrative program! It’s been challenging but amazing!
I went to Saint Mary’s College, Notre Dame IN and started off hating it and ended up LOVING it….tears and all. Majored in Political Science because I couldn’t major in Portguese…I hate politics and have no desire to go to law school. My passion is language. I currently live in Brazil with my husband and our two little beauties. I love your blog and would love to eat everything you make….but, alas, I don’t think my Brazilian (meat LOVING) husband would stay with me if I made him tofu for dinner
Don’t worry, though, we have a lot of life ahead of us
BTW, have you ever eated at a Brazilian churrascaria??? I highly recommend!
Congratulations to your brother! One of my friends from high school is at Bethel and she loves it. I am presently at Minnesota State University Moorhead for an English Writing degree. I should be graduating this year, but with a break I took and working full time I will be going for a couple more years.
Have fun in Minnesota!

I also went to UNI and majored in… Marketing w/ an emphasis in sales and advertising! I’ve only been reading your blog for a few months, and had no idea you were a Panther Marketing alum. Were you in any student orgs? AMA? Favorite prof? Corbin?
I graduated from University of Iowa w/ a BA in English and Secondary Ed. After 9 years in the classroom and a few at home with kiddos, I am thinking of pursuing an OT degree.
