Ahhh, I woke up to the sound of the rain this morning.
A gentle thunderstorm, actually! It started coming down here around 7pm last night and hasn’t really stopped since! Morning Mom walk was canceled, but the extra sleep to the soothing rain didn’t hurt.
After Ben and I ate dinner last night, we did our grocery shopping and I got some fun new things to eat! First up is a Thomas Bagel Thin with Almond Butter and a Banana.
I’ve been seeing these bagel thins everywhere, and finally decided to give them a go.
I like thin buns so why wouldn’t I like thin bagels?
What really sold me was the fact that there were 6g of protein, 5g of fiber and no high fructose corn syrup/artificial sweeteners. Plus they’re only 110 calories – regular bagels are at least 3x that much!
After toasting and slathering with crunchy roasted flaxseed almond butter and a sliced banana – I dug in. Verdict? Loved! It’s just like it sounds – a thin bagel. You get all the chewiness of a regular bagel, but it’s just slimmed down.
I would have liked the bottom half to be a wee bit thicker, but the top half was top notch.
A little sweetness in the morning never hurt anybody, so I had a dish of sliced strawberries as well.
Great tip from a couple of you regarding slicing strawberries with an egg slicer!
I shall hate to see strawberries go back out of season – they are perfection right now!!!
Lunch is also incorporating a new (to me) find – Kashi Lemongrass Coconut Chicken and a Pink Lady Apple!
The last two Kashi entrees I tried were suuuuper good so, since I love savory coconut dishes, I decided to give it a whirl.
Plus this baby’s packin’ 18g of protein?! Sweet!
The rest of the nutritional stats looked good too.
As always – here’s the “pre” shot. I was very surprised by the large portion size and massive amounts of chicken.
I am usually extremely suspect when it comes to chicken in frozen entrees (it never tastes good/I feel like it’s fake or something) but the chicken in my Kashi Chicken Pasta Pomodoro entree was excellent, so I’m excited to give this a taste!
With a crunchy, juicy apple for snacking.

I am definitely the main cook. The only thing my husband can do is brown ground turkey and make egg whites. And grill something that I’ve already marinated.
i watched the today show this morning and saw it was raining in des moines, and i thought of you! that lunch looks super good – i LOVE lemongrass coconut dishes. cant wait to hear your verdict on lunch! thai is my favorite cuisine. and i have to try those bagel thins. i always scoop out the inside of my bagel anyways, so this might be perfect. is it bread-y? i hate bread disguised as bagels haha. enjoy your lunch!!
I love the Thomas bagel things. They are a great for hot sandwhiches, cold sandwhiches, breakfasts…the list can go on and on!
I do most of the cooking, but my husband loves to cut things up-I like to think that I am the head chef and he is the sous chef. I sent him to a knife skills class at a local cooking school for his birthday last year-he talked about it so much that 3 friends went with him!
Haven’t really tried anything new lately-I have just been enjoying all the fresh fruits and vegetables.
Don’t know if you have an Einstein Bros. Bagels near you, but they make the most fabulous sandwiches out of the bagel thins… I am addicted!
I am definitely the chef in our house, but my boyfriend lends a hand a few nights a week and it’s fun to have us both in the kitchen

I’ve seen those bagel thins in the store and have been tempted to buy them! Maybe I’ll give them a shot, now that I know there are good. I’m the chef in the house. My hubby’s skills in the kitchen aren’t up to par yet…unless I want to eat BLT’s or hot dogs all the time.
The bagel thins are so awesome. I bought a huge pack of them at Costco and they are only 1 Weight Watcher point. I have been incorporating them in my daily meal plan!

I tried roasted kohlrabi last night – it was pretty good. My new favorite obession is roasted beets – they are so good – you need to try them!
Actually, my boyfriend and I cook together a lot! I’d definitley do cook MORE than him though! I didn’t like the chicken in the Kashi Pomodoro dish. It tasted “off” to me. oh well. I’m glad it works for you!! Also Thomas are my go to bagel. now I neeeed to try the thins. thanks for sharing.

The bagels look delicious with the roasted almond butter. That stuff is totally awesome! Love the thin looking bagels; haven’t tried them yet. Have you ever thought of making your own bread? I’ve had a Zojirushi “Mini” breadmaker that makes one pound loaves (about 7 slices) of bread. It’s great because you can control the ingredients (sugar, butter, salt, flour) and the portion sizes are small. I regularly put flaxseed in my bread and you might like to add your chia seeds as well (can’t wait to try those).
LOVE the tip about using the egg slicer for strawberries. There will be no living with me now, lol!
As for your questions, I am the only cook in my home and cook for myself. My favorite food finds recently are two things: 1) Dakota Farms Bison at Whole Foods (I bought it once and it was the best ever! Tried to buy it the last two weeks and they are always sold out! It comes pre-packaged but also can be bought at the WF meat counter.) 2) Snyder’s of Hanover Organic Honey Wheat Pretzel Sticks. They were on sale yesterday at WF for $2.00!!!!!!! A serving size is 9 pretzels and they are 110 calories, 2 grams of fat, 3 grams of fiber and 20 grams of whole grains/serving. They are made with organic whole wheat flour, organic honey, organic blue agave syrup, organic sunflower oil, organic sesame seeds, etc.) They are also delicious! It’s great to have a snack that tastes good and has 3 grams of fiber too.
I love those bagel thins for my egg sandwiches. I love tasting the egg instead of the bagel so much.

Strawberries with an egg slicer…that’s genius! I’m definitely using that trick from now on. I tried a new frozen meal from Trader Joe’s yesterday, roasted veggie couscous, and I was very impressed. The portion size was great and it was packed with lots of veggies! I’m excited about your FB cooking school!
Using the egg slicer to cut a strawberry is SUCH a good idea!!
I did try a new product recently and sadly it was a no go for me. I really like the Chobani greek yogurts, and I found a different brand called Oikos. They came in little 4 packs which were a good size to pack for lunch. I got the honey flavor and it was the worst yogurt I have ever had. It tasted like the yogurt had spoiled and the “honey” at the bottom was a thick goo-like substance which tasted nothing like the real thing. Save yourself the money if you ever see this brand.

So a question for you on strawberries… I was at my aunt’s house the other day (she lives on a ranch in Van Meter and does a ton of farming and 4-H stuff in their household) and she mentioned to me that many of the strawberries in grocery stores are “chemically ripened.” That’s why they only eat garden strawberries from their neighbors. Have you heard anything about that? I never knew. I buy strawberries in that plastic container from Hy-Vee all the time and they aren’t organic, so I feel like they probably are chemically ripened! It made me not want to buy strawberries from the grocery store anymore. Just wanted to know your thoughts.

I recently tried cashew butter and I LOVE it… I am also loving Amazing Grass. But my wallet does not.
I am definitely the main chef in the house! Nick helps out from time to time, which is nice! But being in culinary school, if I don’t bring the food home I am cooking it!!

New food/product: My husband and I have had the hardest time finding a bread we can both live with (since we’ve been married), so about 2 months ago, I realized our grocery store carries EarthGrains and decided to try it out. We LOVE it – both of us. The Whole Wheat and Wheatberry Honey are our favorites.
When we’re on even job fields, the cooking is his domain, and the baking is mine. I LOVE to bake!
Cook: I do most of the cooking during the week since I get home earlier, but Carl actually likes cooking more than I do, so I pass off the responsibility as often as possible.
