Breakfast was outstanding this morning!

Cheese in a ‘loupe! Doesn’t quite have the ring of oats in a ‘loupe, does it? ;)

DSC_0002

We’re talking creamy cottage cheese, stuffed inside a seeded cantaloupe half, then filled the rest of the way up with luscious berries, leftover from my salad bar extravaganzaaaa.

DSC_0008

This is a wonderful breakfast for me because, not only does it satisfy my preference for a sweeter breakfast, but it’s packed with protein from the cottage cheese, which will hopefully keep me full for hours.

DSC_0004

It’s a fact that I prefer my cottage cheese paired with sweeter items like pineapple and berries. How about you?

Oh, ha, actually…my roommate and I had a brief, yet hot, love affair with Taco Doritos dipped in cottage cheese in college, but have since moved on from that tragic phase in our lives. ;)

Love this breakfast!

DSC_0012

Just call it the salad bar that keeps on giving, because I brought MORE extra berries for lunch to pair with a new (to me) yogurt from Cultural Revolution!

DSC_0050

I’ve seen this yogurt many times at my local grocery store, but never bought it because it’s usually $1.65+ for a cup. Uhhhm, no. This week, though, they were 10/$10, so I decided to give them a whirl!

DSC_0056

This European-style, organic yogurt has 1/3 less sugar than other yogurts and, in true Euro style, is much thinner than it’s American and Greek counterparts. Plus it’s made in Kalona, IA!! Sweet!

DSC_0058

I think I’ll pour it over my berries.

DSC_0052

I also brought a bagel thin smeared with crunchy roasted flaxseed almond butter.

DSC_0043

It’s also a fact that I like crunchy almond butter better then crunchy peanut butter because of the different crunch that almonds have. It’s more of a shatter-type crunch, vs the chewy-crunch of a peanut. Does that make sense?!

DSC_0046

At any rate, I made this as a snack a couple nights ago, and it was dy-no-mite.

I wanted to follow up on a couple things I owe you!

Kashi Lemongrass Coconut Chicken review: Lemony, with a surprising hint of lime and bite from jalapeno. LOVED the pilaf/quinoa base and chicken, which both helped keep me full all afternoon. Would definitely buy again.

Iowa Glasses: Many of you have asked where I got my Iowa glasses from! I actually got a set of them as a gift, but you can order directly from the makers at Cat Studio. They’ve got a TON of products representing different states, cities, regions & countries!

Laura Bush Memoirs: I adore getting lost in a fictional mystery thriller, or period piece – full of exciting and wildly descriptive text. Laura’s memoirs, however, are different. It’s simply a woman telling the story of her life, in a way that makes you feel like she’s talking to you as a friend. Regardless of your political views, this is a fantastic read.

Oookie dokie, time to hit the road – happy hump day! (wahoo, I just thought it was only Tuesday!)

See ya’!

  1. Not only does that breakfast look so yummy, but it is very pretty!
I think I do get enough calcium – I take a supplement, plus get a lot of dairy in my diet!

  2. bahahah how does tiny YOU eat that entire melon?? im pretty sure i could crush a watermelon, but canteloupe is definitely filling. such a tasty treat tho. i, too, prefer cottage cheese with fruit. i had a friend in africa who ate hers with s&p and yellow mustard. it made me gag. i go for pineapple, melon, and berries. im so glad u loved the kashi lunch! now i cant wait to try!

i drink skim milk. used to drink soy, but im mildly allergic to it…so i stopped :) went wit almond for awhile, but decided i really hate it. and i am SO with you on the shatter-like crunch of an almond! great call

  3. I did the melon bowl thing the other day – amaze!
I take a calcium + vitD supplement, as well as 2 servings of yogurt a day, and milk, plus LOADS of dark green veggies etc,, tofu…I think I get my hit :)

  4. Barb says:

You can also get the Iowa (and other states and cities) glasses at the local store called Sticks. They have a location in West Glen and the East Village.

I was going to suggest you read the Sookie Stackhouse novels by Charlaine Harris. I know the world has gone crazy with vampire stories but these books are AMAZING (and addicting)!! The HBO series True Blood is based on this series. If you have HBO I suggest you watch that show too or put it on your netflix list.

I’ve liked most of the Kashi frozen meals that I’ve tried, but I didn’t care for the lemongrass coconut chicken. Maybe I need to give it another try? In general, I choose frozen meals pretty sparingly because even the “healthy” ones are thin on fiber and protein for my taste. I still mourn the loss of the South Beach frozen pizzas, which were my go-to when I didn’t have leftovers to take for lunch. Each had about 10 grams of fiber, 30 grams (!) of protein, a good dose of calcium and other vitamins, and was tasty to boot.

Did you like the Cultural Revolution yogurt? I wanted to like it, but I had to choke it down. I guess I prefer a thicker yogurt. When I can’t justify a splurge on Greek yogurt, my go-to is Stonyfield Farm low-fat plain yogurt—served, as part of my staple summer breakfast, with Kashi GoLean cereal and fresh fruit.

I seldom have difficulty getting enough calcium. Breakfast always includes milk or yogurt, dessert is often hot chocolate made with 1% milk, and I choose the Kraft 2% shredded cheeses, which include 40% of the RDA for calcium. Interestingly, I have a harder time hitting the mark for Vitamin D, and I do take a supplement for that.

Cheese, some cheese with my cheese, and then top it off with cheese! ;)

  8. I love cottage cheese paired with fruit. My all time fav combination is with fresh pineapple. I love the zing it adds to the cottage cheese.

And I defienetly know what you mean by the difference between the shatter vs chewy crunch factor. I am a big fan of shater crunch type foods.

  9. Run Sarah says:

Love the cantaloupe bowl! I am not a huge cottage cheese fan but I may have to try that with yogurt. I love those bagel thins – with a smear of nut butter, they make a perfect snack and are similar in stats to a granola bar, just with less sugar!

  10. Run Sarah says:

And for calcium, I take chocolate Vit D and Ca2+ chews daily. Because they’re chocolate, I never forget ;)

  11. FANCY! :-) Love it! I love cottage cheese with sweet things too. Nordica makes great single serving cups with fruit bottoms; much like yogurt! Fresh fruit like you have it is better though!

I definitely have to increase my calcium intake…Need more milk definitely. I do eat yogurt and cheese but that is not enough.
    Any other suggestions?

  12. AP says:

I’m sorry but I think I’d be barfing the whole way through any Laura Bush book. Your ‘loupe looks good though :) I love fruit with cottage cheese!

  13. AP says:

Oh, I forgot the other question. I don’t really drink milk but any time I can buy stuff fortified with calcium I go for it. The Tropicana with calcium + vitamin D tastes just like regular OJ, so why not? AND tons of cheese!

  14. I used to love cracked pepper on cottage cheese but now I prefer to make Almond Butter and berry cottage cheese. Just yummy and tastes like dessert.

I have to be careful to get in my dairy because I am very lactose sensitive.

  15. Samantha says:

Fruit is my favorite with cottage cheese, but sometimes for lunch I eat it with tomatoes, chopped cucumber and pepper, and it’s sooo good!

I eat things like cottage cheese, low fat cheese, yogurt to get my calcium in.

  16. That melon looks awesome, what a BEAUTIFUL breakfast :)

  17. Lauren L. says:

You have got to try the Western Bagel Healthy Bagels if you are digging the bagel thins. The have similar (if not better!) nutritional stats and are SO good. Perfect bagel chewiness. I found them at my local Hy-Vee in the organic frozen foods section. Highly recommend :)

  18. Elyse says:

I am going to have to try those bagel thins. They look so good! And yes, your crunchy peanut vs almond debate made total sense to me! I like cantelope and berries as well with my cottage cheese. Other than that, I like it plain with a little S & P or with brown sugar and pineapple. The brown sugar takes down the tartness of the pineapple just a tad imo.

I eat a lot of dairy in my diet so I am pretty sure I get a good amount of calcium on a daily basis. I have yogurt for breakfast almost every morning, string cheese is one of my favorite snacks, and I go through a lot of milk in my cereal/smoothies as well as shredded cheeses I use at home and mix with scrambled eggs and a side of toast for a quick dinner.

  19. Emily says:

The HyVee salad bar is an awesome deal, but how did you get away with extra berries to take home? I want your secret!

  20. Such a pretty breakfast! Love it.

  21. You definitely had a sweet tooth today. I think I get plenty of calcium between the gallons of Greek yogurt I eat, milk, and of course ice cream. Other things have calcium in them too ya, like broccoli : )

  22. Dawn says:

I think your pictures are beautiful! Looks so yummy!

I have to say that I am a staunch democrat but I have always respected Laura Bush as well as her daughters and her father and mother in law!! Barbara is really great! I think them wonderful people.

I am not a big fan (understatement) of G.W. Bush. I do not hold that against all republicans or his family!

I do think Laura has held herself with dignity and grace and I respect her. I would read her book because I love to read autobiographies and hope I have an open mind most of the time.

Have a wonderful day and thanks for sharing!

  23. I LOVE the cottage cheese/fruit combo…some of my favorites are cottage cheese with pineapple, melon, or peaches!

I’ll have to read the Laura Bush book–memoirs are some of my favorites! If you ever need a book suggestion, email me…I’m a huge reader and have quite a list of books to recommend :)

  24. I don’t know how you do it. Cottage cheese has so much sodium (at least the brands that I find) that I can’t bear to combine it with anything sweet. Blech! I’ve tried it time and time again and it just makes me gag.

I love reading new books – any recommendations are helpful.

  25. JennyV says:

I LOVE “Cultural Revolution”!! I actually did a little research on CR online and was super impressed by the company — the fact that the land where the cattle are raised has never been touched by chemicals, herbicides or pesticides had me sold! It is definitely different that ‘typical’ yogurt — but that’s why I love it.

(I do have to say that I switch between CR and Chobani Greek – if I’m needing something creamier/thicker.)

  26. I’m a crunchy almond butter girl too. I love the texture but also find it to be more flavorful and satisfying. Love the yogurt, I’ll have to give that a try!

  27. That cantaloupe looks sooo pretty!

I think I get enough calcium in my diet, but I probably don’t! I need to get on that, it’s so important. :)

    Jenn

  28. Tracy says:

What did you think of the new yogurt? I have also seen, but not tried. I did notice that there’s hardly any protein in it? Must have a ton of blueberries. I guess I’m just used to the blast of protein in greek yogurt!

  29. Lindsay says:

I looked up that yogurt and since i from the midwest, but ohio i figured i could find it in my area but was sad to say that we dont carry it anywhere in the state! I hope one of our retailers picks it up! Next trip i make to wisconsin or Iowa to visit the fam i am going to give it a try!

  30. So pretty, and yummy. I will def have to try that!
