Sooo, that “funny” package I told you I was picking up yesterday??
It was a free year supply of eggs!
HA! Yes! 52 coupons, for 52 free dozens of Eggland’s Best eggs! Foodbuzz had sent me a coupon for a free dozen awhile ago,
which I used to make a Tofu Veggie Scramble. Apparently the recipe got entered into a contest they were throwing…and it won!

Oh man, life is so funny. Now the real question is – what am I going to do with a free dozen eggs each week?? Better get those recipe ideas crackin’! (pun intended.)
In other news – this may be the luckiest week ever, because not only did I win a free year supply of eggs, but I got to have oats in a jar twice! Wheee!
I was actually pretty sad to see this jar of Roasted Flaxseed Almond Butter run out. I got it in Chicago at Trader Joe’s the last time I was there, and it’s pretty much the best thing ever.

This pretty much made my sadness disappear!
In the mix:
- 1/3 cup old fashioned oats
- 2/3 cup water
- 1 banana (1/2 sliced in while cooking, 1/2 on top)
- vanilla extract, cinnamon
- Almond butter jar
So.Amazing. Viva OIAJ!
I packed a HUGE Spinach Salad for lunch.
In the mix:
- Baby spinach
- Cauliflower
- Carrot chips
- Pepper jack cheese cubes
- Sliced almonds
I just cut up a pepper jack cheese stick to make cubes. I HEART cheese cubes in my salads.
Also packed a cup of grapes for 2:00pm snackeage.
Only the snappiest ones made the cut!
So last night I consulted my trusty 1,000 Places to See Before You Die book to see what they had listed for Italy!
I’ve had this book for years and always highlight/date the places that I’ve been to, as I visit them. Such as Las Vegas…viva!
Coronado Island and San Francisco.
Washington D.C.
New York City (a couple times!)
New Orleans (miss it soooo much!)
The Iowa State Fair - whoooop!
Hawaii & Denmark
And my beloved Japan!
GUESS what I found when I turned to Italy?!
I had already dog-eared all of Rome and the Amalfi Coast – EXACTLY where Ben and I will be traveling to this Fall!!!
I have NO idea when I did it, but clearly this part of Italy has been on my mind for a loooong time.
I cannot wait!

There is such a love/hate relationship with empty nut butter jars. Obviously, OIAJ is one of the best things, ever. On the other hand, the jar is GONE and your next chance for OIAJ is a ways away. Time to open a new one and do some damange then, huh?

I like a sort of base plan for vacations…like when we went to Disney, I liked to know which park we were going to each day, but we picked out rides and attractions each day

Free eggs for a year?? Lucky!! My husband and I can easily make it through a dozen eggs in a week. We have omelets for dinner on a regular basis and I’m always up for and egg sandwich. As far as vacations go–it depends on the destination. Some places just need to be planned out, but really I’m more apt to figure everything out once I get there.
That’s a lot of eggs! I see lots of frittatas in your future… and meringues…
Try to think of things you can use them in that can be frozen? They take prepared meals (frozen) at the Ronald McDonald House. I bet one of the shelters would take some of your coupons too. Congrats!
I forgot the questions at the end. I have won quite a few things, mostly small things though. The biggest is probably a $500 bar tab I won on my 21st birthday! And I am in the middle on the planning vacations… I’ll plan out a few things but definitely leave some wiggle room for those fly-by-the-seat-of-your-pants moments!
I grew up in San Diego and my senior prom was at the hotel del on coronado island! Its so pretty there!

1. I haven’t been lucky at winning anything for several years now. When I was younger I won LOTS of things…radio contests, random drawings, etc. I’m thinking I used up all my luck!
2. Typically, I’m a planner, but when I get to my vacation site, I like to take things as they come. I find it much more relaxing! Don’t get me wrong, I still prepare, but it’s not a scheduled out type of thing

I love any kind of egg and eat a ton of them, but I don’t know about that many.
I’d donate some of the coupons to the local food bank/pantry, a charity, a special needs camp, and/or a soup kitchen.

My husband and I are also going to Italy this fall – in September! So excited. I’ve been to Venice before, but nowhere else. This trip we’re doing Rome – Florence – Venice… We’ll have to get to the Amalfi Coast and all the other wonderful places in that country next time!

Umm, I can’t remember. My parents have. Once they entered into a drawing for a free meal at all the restaurants in this one area; there were like 20 of them; mexican, Italian, Greek, a brewery, etc. They’re altogether in this one strip mall. AND THEY WON!

Yes I won once….well twice at the same time. I won 20k at the virginia horse races…not betting. By having the lucky key that opened the suitcase. THEN I drew my own name for the second drawing for $5k for a charity of your choice. I sent it back to Mn to the U of M pediatrics.
I will never be lucky again! But it was fun.

I love your idea of highlighting and putting the dates. I bet going through it brings back great memories! I am usually a fly by the seat of my pants person when I travel but my boyfriend is the exact opposite. So much so that when we went to Austin for a weekend and I didn’t have any plans it drove him crazy nuts.. so needless to say lesson learned! Now we plan almost down to every detail.

My parents have a copy of that book in their basement bathroom. There are a lot of interesting places in there. But with vacation, I like to mostly plan, but it’s also nice to leave some time for spontaneous moments or doing what comes up during the trip.

I highlight all the places I’ve been in my “1000 places” book too! I can spend hours planning out future vacations. In the past I had very detailed itineraries. But I think I’d like to travel with no plans. Just explore a neighborhood, ask locals for recommendations and spend afternoons having picnics in a park or sipping tea at a cafe.
I’ve never won anything but I do foresee potato crusted quiche? Or actual homemade crust quiche? How bout putting some of that string cheese as a topping? Or the chevre?
A traditional Vietnamese dish is to stir-fry some minced shrimp and lean ground beef/pork and cook it like an omelette but not flipping it. OR, make a steamed egg cake eaten w/ broken rice and grilled beef and eggrolls.

I only plan my meals for the workweek! I try to have some ideas for where we want to sight see, make some flexible/broad plans and just go w/ it. I’d like to utilize a tour(guide) just to see and hear local tidbit information you can’t always get from a book!
