I’ve told you before that while I love to walk and lift weights with other people, running is generally a solo sport for me.
I was feeling a little dangerous today, though, and randomly asked Ben if he wanted to join me on my afternoon jog! Unfortunately, he did not (
) but fortunately, he WAS up for a game of tennis instead! (
)
Here’s the thing – I could lie and tell you that Ben and I are really good at tennis. That we’ve taken extensive lessons, played competitively in high school, and dominate the courts!
The truth is…we stink. We stink bad! Although, Ben claims he hits the balls all over creation so he can help me get a good workout. Riiiight.
Hehe.
Anyways, it’s the company more than the score that we’re concerned about, and we had a great time. After 30 minutes, Ben became permanently blinded by the sweat dripping in his eyes, and I thought my legs were going to give out from sprinting so much, so home we went…
to devour Shrimp Korma!
I used my favorite Tasty Bite simmer sauce, Good Korma.
It’s a flavor mixture of coconut, cashews and Indian spices. IT. IS. AMAZING!
In a salt-packed world, it still blows my mind to see the fabulous stats on this pre-packaged sauce. Love seeing that 0% DV in the sodium category.
I started our dinner by sautéing some summer squash and broccoli in ~2 teaspoons of peanut oil on high heat.
Just long enough to get a little bit of color on ‘em.
Then I added shrimp and the sauce + 1/2 cup water, and simmered for 10 minutes. I ended up having way too much liquid, since the veggies and shrimp gave off so much, so I let it boil on high for several minutes after it was done simmering, adding some additional garam masala and garlic powder to season it back up!
Served over brown rice and garnished with green onions and peanuts!

Exotic, slightly spicy and so fresh. Perfect for a dinner just off the courts.
Oh, HAAAAA. If you’ve been reading my blog for awhile, then you know I am a candy addict. I would eat it all day, every day if I could. Lately I’ve been really trying to cut back (with success!) and haven’t had any in…weeks?! Well Ben knows I miss it sometimes so he got me a pack of Nerds so I could have a “quick hit” of candy when I need it. Ohhh gosh, I am just dying laughing. He is so great!
Tonight I’m watching The Bachelorette – they’re heading to Iceland! I would LOVE to go to Iceland – I’ve heard such incredible things about it!!
ps have you heard about the new Bachelor/Bachelorette show where they’re bringing back infamous past contestants to compete for love/money?? Sounds so lame…but I’ll probably watch… Yikes!
