Hey guys!
Sad news, I ended up feeling pretty crappy this afternoon so I came home, relaxed and made the ultimate comfort food dinner – Kale Chips & Grilled Cheese!
These babies are the brain child of Kath, and are the perfect substitute for potato chips when you’re craving something to crunch.
Start with a big head of fresh kale,
then strip the curly leaves off the thick steam.
Compost?!
Give your leaves a good rinse and whirl in a salad spinner,
or…blot with a paper towel, the low-budget way.
Next, shake your leaves in a plastic bag with 1 teaspoon of extra virgin olive oil and garlic powder,
then lay them out on a foil-lined baking sheet and sprinkle with some parmesan cheese.
Mmmm, cheese!
Finally, bake at 375 degrees for 15 minutes,
until you’ve got a lovely dark brown, red hue on those purdy curly edges.
These things literally shatter in your mouth, they’re so crunchy! Seriously give them a try – they are a hoot to eat.
I made the coziest sandwich I knew of – a “grilled cheese”. “Grilled” because it was actually broiled!
I lined up mozzerella and pepper jack cheese sticks to create alternating rows of cheesy yumminess.
Then broiled to gooey, melty deliciousness!
Oh, and dunked in cold ketchup. I actually hate tomato soup – the standard grilled cheese partner – but I love the sammie dipped in ketchup!
This actually DID help make me feel better!
Just to be sure, I better go curl up on the couch and watch Dear John. Have you seen it? I heard it was quasi dull, but I HEART Amanda Seyfried!
Channing Taytem isn’t so bad either…
