It’s a Leaf…It’s a Chip…It’s a Crunchy Leaf Chip!

Hey guys!

Sad news, I ended up feeling pretty crappy this afternoon so I came home, relaxed and made the ultimate comfort food dinner – Kale Chips & Grilled Cheese!

These babies are the brain child of Kath, and are the perfect substitute for potato chips when you’re craving something to crunch.

Start with a big head of fresh kale,

then strip the curly leaves off the thick steam.

Compost?!

Give your leaves a good rinse and whirl in a salad spinner,

or…blot with a paper towel, the low-budget way. ;)

Next, shake your leaves in a plastic bag with 1 teaspoon of extra virgin olive oil and garlic powder,

then lay them out on a foil-lined baking sheet and sprinkle with some parmesan cheese.

Mmmm, cheese!

Finally, bake at 375 degrees for 15 minutes,

until you’ve got a lovely dark brown, red hue on those purdy curly edges. :)

These things literally shatter in your mouth, they’re so crunchy! Seriously give them a try – they are a hoot to eat. :)

I made the coziest sandwich I knew of – a “grilled cheese”. “Grilled” because it was actually broiled!

I lined up mozzerella and pepper jack cheese sticks to create alternating rows of cheesy yumminess.

Then broiled to gooey, melty deliciousness!

Oh, and dunked in cold ketchup. I actually hate tomato soup – the standard grilled cheese partner – but I love the sammie dipped in ketchup!

Just to be sure, I better go curl up on the couch and watch Dear John. Have you seen it? I heard it was quasi dull, but I HEART Amanda Seyfried!

    Your grilled cheese looks so yum! What did you think of the movie? I feel like I was the only girl I know who HATED it! And I heart Amanda Seyfried too. I was disappointed. Anyway, feel better Kristin! Hope u have a good weekend!

    I hope you are feeling better. I wasn’t feeling too hot earlier but took a nap and a walk with the pup and feel loads better.

    I always dunk my grilled cheese triangles in ketchup. I think tomato soup is a good acompaniment to a grilled cheese but i do not partake in the dunking.

    Amanda Seyfried was also in Veronica Mars with Kristen Bell!! I’m telling you, you are SUPPOSED to watch that show :)
    I was so intrigued that we are trying the Kale chips tonight…can’t wait to experience them!

    I loved Dear John! As chick flicks go, I thought it was exceptional. Nicholas Sparks is a bit of an arrogant jerk, but his books/movies are usually pretty entertaining.

    I also don’t like the grilled cheese/tomato soup pairing. I’ve always dipped in ketchup!

    I will DEF be making those “chips” sometime this weekend. I <3 Kale!! That gooey cheese sandwich doesnt look too bad either :-D I have yet to see that one, but its on my netflix list. I love her too and I ALWAYS love drool.. i mean watching channing ;-)

    i STILL have yet to make kale chips. i do love this avocado kale salad whole foods salad bar makes though, so i should just try it myself with the chips!

    I just recently saw “Letters to Juliet” with Amanda Seyfried. It was a great chick flick; I highly recommend it! I love tomato soup; I wish there was a canned kind that wasn’t super salty.

    Hope you’re feeling better! Those leaf chips look..interesting. I would love to give it a try! I love Amanda Seyfried. The movie was not as good as the book, which is usually the case, but it was still good and a tear jerker.

I haven’t posted before but I had to tonight because ironically enough I just finished Dear Jon lol!!!!!! I rented The Road for my husband and I rented Dear Jon for me lol!!!   17. I have seen Dear John. I did not like. I did not like it for a couple of reasons. 1. Much like PS I Love you, I do not enoy movies where I seem to cry for the whole movie. Starting off with the first scene made me think the movie was going in one direction making ever scene that much sadder for me. 2. The movie did not have the happy ending I was expecting. Forget that the movie did not turn out to be at all what I expected. :-\. but Mainly reason #1 is why I did not enjoy this movie, despite loving A.S and C.T

      To Lisa @ Bake Bike Blog in Australia…try growig your own kale…lots of site about growing kale in your country on the internet….we grow kale in our garden here in Canada and I try to make enough to juice then freeze so I can use it in the winter.

    After reading the comments, I seriously cannot believe how many people put ketchup on grilled cheese. Seems a little weird, but I guess I will have to try it….

  28. Yeah, I saw Dear John a few weeks ago and it was a little long….but I wouldn’t call it “dull”, it tugs at your heart strings and was sad at the end (hate those kinda movies) but I like both of the actors a lot too so I watched it. The are ADORABLE together. =)

    Yummy! I adore tomato soup with my grilled cheese. Not so much ketchup, but mustard is a must on my grilled cheese (spread inside with the cheese before grilling).

    I make kale chips all the time. I make a batch in the morning leave them on the counter to munch on all day…..for me it is: 1 head of kale, 1tbsp olive oil, 1tbsp apple cider vinegar and a little sea salt. You can add anything you want with this basic recipe….red pepper flakes, garlic powder, nutritional yeast…..anything you feel like eating on the day you make them.
