This weekend has seemed to stretch on foreeeeeeever. You know how you wake up on some Sundays, and you can just tell it’s a Sunday? I haven’t had that feeling at all today! Must be because it’s been such a great weekend.
Lunch at my parent’s house was epic – we had a light, yet filling, lunch.
Tropical fruit salad, grilled asparagus and a crunchy coleslaw salad.
Plus some superbly grilled chicken that my Mom cooked for exactly 4 minutes a side. It came out juicy and perfectly grill kissed. She was so proud!
Dessert was still warm rhubarb crisp and vanilla ice cream. The rhubarb came from my Mom’s garden and tasted SO fresh. Is there anything this woman can’t do?!
After lunch, Ben and I couldn’t bear to sit inside since it was so beautiful outside, so we took a nice drive and came upon some horses!
We tried to find some soccer fields to play on, and run around, but everything was just SOAKED from the massive amounts of rain we’ve been getting recently. So, we came home and parked it on the back deck.

and Ben got to work putting together his new smoker!
One of his friends from work has been smoking ribs lately, and bringing some to share with Ben, so he’s been obsessed with recreating his own at home.
Today we finally bit the bullet,
and bought a smoker of our own!
I see many racks of ribs, pork loins and briskets in my future. Oh boy!
Earlier, while we were playing with horses and putting things together, we had thrown a rack of ribs into the oven to cook slow and low all day for dinner. We finished it up with a quick sear on the grill.
They were SO tender!
Smokey, falling off the bone,
and that CRUST! Chewy, salty and so flavorful.
I loved these babies as is, but Ben promised they’ll be 1,000% time better once he a rack into his new smoker!
Off to make the most of the rest of my weekend!

I got a nice dress this weekend. Blue & white striped with an exposed zipper in front – super cute!!!
