Cold Sesame Peanut Noodles!
Cold Sesame Peanut Noodles
Ingredients:
1 chopped green onion
1 cup broccoli slaw
1/4 cup chopped peanuts
1 serving cooked rice noodles (100g dry)
1 cup chopped cucumbers (leftover from last night’s dinner delivery service!)
1/4 cup Sesame Soy Ginger Vinaigrette (or any other comparable sauce)
1/2 block pressed extra firm tofu mixed with 1 tablespoon of dressing
Directions:
1. Toss.
2. Enjoy!
10 minutes, people. TEN MINUTES to make this dish! And there’s literally one direction…toss!

And flavors, too! My secret trick to make the dish POP? A sprinkle of sesame seeds and drizzle of sesame oil on top at the end. Makes ALL the difference!

Tonight Ben, my parents and I are heading down to the capital to listen to a symphony concert, followed by a spectacular fireworks display!
We go every year (including last year - oh great, now I want strawberry shortcakes…) although it’s usually on the 3rd or 4th. The party’s comin’ early this year, apparently!
