Tonight’s dinner was all about teamwork!

Take rice noodle’s chewy, slippery texture, add in some protein packed, pressed tofu, and round it all out with the tangy zip of miracle whip gingery, savory salad dressing to make…

Cold Sesame Peanut Noodles!

Cold Sesame Peanut Noodles

Ingredients:

1 chopped green onion

1 cup broccoli slaw

1/4 cup chopped peanuts

1 serving cooked rice noodles (100g dry)

1 cup chopped cucumbers (leftover from last night’s dinner delivery service!)

1/4 cup Sesame Soy Ginger Vinaigrette (or any other comparable sauce)

1/2 block pressed extra firm tofu mixed with 1 tablespoon of dressing

Directions:

1. Toss.

10 minutes, people. TEN MINUTES to make this dish! And there’s literally one direction…toss!

Chewy rice noodles, salty peanuts & crunchy slaw – this salad was FULL of amazing textures!

And flavors, too! My secret trick to make the dish POP? A sprinkle of sesame seeds and drizzle of sesame oil on top at the end. Makes ALL the difference!

Full confession – this week’s meal plan somehow dissolved into thin air and I found myself with nothing on the schedule to make tonight. This dish was created completely on the fly…

And it all just worked! Don’t you love it when life works out like that? ;)

Tonight Ben, my parents and I are heading down to the capital to listen to a symphony concert, followed by a spectacular fireworks display!

We go every year (including last year - oh great, now I want strawberry shortcakes…) although it’s usually on the 3rd or 4th. The party’s comin’ early this year, apparently!

    I usually plan Sunday- Wednesday and then like to wing it on Thursday nights, sometimes stopping at the store and picking up whatever we’re craving that night… it’s kind of a special treat for the end of the week to get creative & spontaneous in the kitchen! Then Fri/Sat are either out to eat or wing it nights too since I have more free time to get the ingredients I want – gotta be flexible on the weekends right :)

    That’s one of my favorite dressings EVER! I like to marinate tofu in it then throw the tofu on the grill for a quick meal.

    When I want a pretty much instant meal, I have an egg sandwich (two scrambled eggs between two lightly buttered slices of whole grain bread) with a piece or two of fruit.
    Also, taco salad takes less than ten minutes to make and satisfies me. Lettuce, some crunched up tortilla chips, chopped tomato, chopped black olive, corn, black beans (or ground beef), a bit of salsa & reduced fat thousand island dressing.

    BRC = Beans, Rice and Cheese with Hot sauce.. It’s a complete protein. :o )

    What is a tofu press? or should I say what is the purpose of a tofu press?

    What a great tofu dish! I need to pair some tofu with peanuts, or make that tofu peanut pizza!

    That looks sooo yummy. Quick meals around our house are usually grilling ones, like chicken and veggies. I’m a planner, but sometimes you’ve gotta improvise! Good Job!

    I always have something planned because I’m crazy :wink: When I don’t, I’m way too easily swayed by pizza. It’s okay on occassion, but not as a regular occurence. I don’t think it fits with the healthy living blogger lifestyle thing…haha.

    I kind of have a general idea of what I’ll make during the week and try to have basics on hand in case I change my mind. My go-to quick dish lately is shrimp scampi served over steamed veggies (instead of pasta). The sauce is so simple (olive oil, lemon juice, garlic, onion, parsley), it cooks up quickly, and my husband LOVES it. Win-win all around.

    Question–what is the best way to press tofu if you don’t have a press?

    I just tried to make this now. My rice sticks are flat? Did I get the wrong kind? Also my main question is do you let the noodles cool before you mix everything in? I did not, but now have the mixture in the fridge cooling. Just wasn’t sure.
