Belated Birthday Celebration!


Lunch at my parent’s house WAS a showstopper! My Mom made fresh Sweet Corn & Blueberry Salad with Creamy Chicken Enchiladas for a belated birthday celebration with the fam!


Mmmmkay, this salad – Iowa Sweet Corn cut off the cob, tossed with zucchini, cucumber, red onion and blueberries. It’s sounds…interesting…and it was! I really liked the sweet corn and blueberries with the mellow zucchini and cukes.


The creamy chicken enchiladas REALLY hit the spot though!


The tortillas were lined up like a little enchilada army,


and, since it was my birthday celebration, I got first dibs on the crunchy, slightly burnt end piece. Muwahahaha.  Do you like the end pieces or middle pieces of casseroles?


I topped mine with tomatoes and green onion for a burst of freshness!


Oh-so-creamy – another home run lunch. :D


Of COURSE, there was cake afterwards. Pepperidge Farms Birthday Cake, natch! (please forgive the greasy, oddly shaped hair – it’s like 1400 degrees here!)


And it was GOOD!


Real good. ;)


Oh, and because my Mom is nuts, there were also chocolate chip cookies. I’m telling you – Pillsbury has nothing on these Hy-Vee brand break & bake cookies. They’re the best I’ve ever had. Dare I say, better than most homemade cookies?!


Finn agrees. :) (Is it just me, or is a full-fledged toddler now?! He gets SO much bigger every time I see him!)

There were also MORE birthday gifts! Sheesh – am I a lucky girl, or what?


Some delectable Red Velvet Cake Body Wash from my brother and sister-in-law, and a darling bee stake for my garden from my parents!


They got this for me at the Farmer’s Market a couple weeks ago when I wasn’t paying attention. Sneaky, sneaky!


The people that make these make a ton of different lawn and garden sculptures that are so unique and interesting. Check some of them out!


After lunch, and a few errands, I attempted to walk off some of those cookies & cake with a 4 mile walk on my trail. It had actually already been cleared of the debris from the storm last night, but there were a ton of trees that were split right in half. Actually, a huge limb on one of my parent’s trees got knocked down last night and, by some miracle, landed straight in the side yard instead of onto the neighbors fence, 1 foot away!

Well, it’s back to work tomorrow after a long, four day break – can you believe it?! I can’t wait to give you guys the full Blue Bunny factory tour, the low down on making my own ice cream concoction, some info on the science of taste testing ice cream (it’s HARD!), and a visit to the Blue Bunny official ice cream parlor – all starting tomorrow morning!

    ugh, how seriously gross is the midwest right now? seriously. my apartment is like 88 degrees and my hair is a perma-fro. anyways, yay for more bday celebrations and can’t wait for the rest of the ice cream tour!!!!

  6. I LOVE Philosophy products! I haven’t had the red velvet, but I have tried the carrot cake, champagne, and birthday cake and they are BOMB!! And I love how those are like 5 things in 1 (shampoo, soap, bubble bath, etc).

    Looks like a fun celebration :-)

    Can you share that recipe for the corn dish. I have all the ingredients and would love to try it.

    The HyVee cookies are probably made at the same place the Pillsbury ones are :) Kinda like Blue Bunny makes the HyVee brand ice cream! Have you ever tried the DoBiz take and bake dough? I think they sell it at HyVee. It’s sooooo good.

    Oh, you make me laugh so hard. I think we are going to declare July, “Iowa Girl Eats Birthday Month!” with all of the celebrations! On top of that, the entire Blue Bunny ice cream for a year certainly has to make it the best birthday ever! The food looks so good and I am in awe that you can stay in such great shape with all of this delicious food! That is a sincere compliment.

    Of course, I can’t be too jealous since I had a wonderful July birthday myself.

    I love that you guys have the Pepperidge Farm’s cake for every birthday celebration. I grew up with it, too, and it still seems like such a special indulgence every now and then!

    That salad looks really good. As a Nebraska girl, I love anything with corn in it. So, combined with blueberries just kicks it up one more notch!

    I’d love to see your mom’s enchilada recipe. We toy with them every once in awhile, but never get them right. The sauce is what ruins them. And can’t wait to hear more about the tour.
