Call for Guest Posts: My Best Vacation Ever!

Good morning!

Holy. Cow. It was 62 degrees when my Mom and I left for our morning walk! Those two crazy women walking around with their arms stuffed into their t-shirts so only their hands were visible? Yeah, that was us. It was ch-ch-ch-chilly!

Chilly for walking, but amazing for running. I continued on to run a mile and a half loop after my Mom and I said goodbye and, without the heat and humidity to hold me back, I made it home in record time. Take that, Monday! ;)

I fueled up with a well rounded breakfast.

Some Cheerios & Unsweetened Vanilla Almond Breeze for whole grains.

I’ve said it once, and I’ll say it again, unsweetened vanilla almond breeze is MADE for cereal. It. is. so. good!!! Do you eat a lot of cereal?

And hearty EarthGrains 100% Whole Wheat toast, slathered in some healthy fat & protein packed almond butter.

I have this weird thing where I have to swirl my almond butter perfectly on my toast – like icing on a cake. I know.

Mom would be proud!

Oh, we can’t forget the freshness. One Pink Lady Apple to go. :D

Lunch is a fresh feast as well and stars a massive Vegetable Goat Cheese Salad!

In the mix:

Oh, I thought I’d take a picture of my salad pre and post shred. You see, I fill my salad containers up with lettuce and spinach, then take a pizza cutter to it.

Not only does it let me fit more vitamin-rich greens into my container, but the pizza cutter cuts the lettuce into bite sized pieces, which are much easier to eat. No face whipping pieces allowed.

Between the two dressings I have at work, Italian & Lite Raspberry Vinaigrette, I think I’ll go with the Italian today. It’ll compliment the zesty goat cheese and really jazz it up!

I also packed a HFCS-free, unsweetened apple sauce cup and a Cashew Cookie Larabar mini for snackies.

Good lunch day!

  2. Amy 08.16.2010

That’s awesome! I’ll work on something tonight and send it to you. Should we send it as a word document or something? Enjoy that delicious lunch!

  3. Tina 08.16.2010

I love unsweetened vanilla almond milk on my cereal. I love how light it is but that it adds extra flavor.

And I’m going to send you a vacay post! The pictures won’t be the best because they are scanned, but I still want to share. Rome is wonderful. I bet you are excited!

  4. Daisy 08.16.2010

oo I could be interested in this. Let me see what I can put together. 3 weeks wahooo!!

  5. Dani 08.16.2010

Man! I wish I would have thought of cutting salads up that way before now! Genius.

  6. Molly 08.16.2010

your breakfast it TOTALLY my comfort food breakfast. Its what I used to eat when I was a little kid before school, and whenever I have that combo I instantly get taken back to that time :)

I would LOVE to do a guest post for you!!! Emailing you now :)

  7. Angharad 08.16.2010

Love it! I will definitely be submitting something for you! As you know, I also love to travel. And so so so exciting that your trip is less than three weeks away – you’re going to have such a blast!
I was in Rome, Naples and Sorrento when I was 12 – can’t wait to relive it through you!

  8. Run Sarah 08.16.2010

My best vacay was Hawaii for our honeymoon! For my toast, I always put a super thin layer of whatever topping (cheese, nut butter, jam, etc) – apparently at the age of 4, I was upset when my babysitter “slathered” on the Cheese Whiz…she still doesn’t let me forget that one!

  9. dmcgirl 08.16.2010

Would it be okay if I sent something already posted on my blog? I am sure nobody here has seen it or not many! ;-)

  10. Kaytee 08.16.2010

I thought the whole HFCS in applesauce thing was ridiculous, until I saw it listed on a jar of dill pickles! Seriously?!

  11. Jenna 08.16.2010

A guest blog sounds like fun! I’ll write up something for sure. Enjoy your lunch and have a great day! :D

  12. Rachel 08.16.2010

Ohh, now I’m having a hard time deciding between my geek weekend in Vegas with my sister, or the 5 days in South Padre with my then-fiance/now-husband! I’ll write something up for sure too!

  13. Mac 08.16.2010

Breakfast is my favorite meal of the day! I love cereal, but I don’t eat it that often any more. I think it’s because there are just so many other delicious breakfast options and sometimes I get suckered into the sugary cereals (ie: Reese’s, Lucky Charms, etc. :)

  14. sending in my post now! :)

  15. Lauren 08.16.2010

Do I eat a lot of cereal? Haha, such a silly question. I think I have a slight cereal addiction and I definitely agree that unsweetened almond milk is partly to blame! ;)
That is so cool that you are going to Italy. This was my dream trip that almost happened this year but we decided to build a house instead and went to Vegas. So it looks like The Vientiane is the closest I will ever come! ;(
You are going to have a BLAST!!! I can’t wait to live it through you.

  16. Valerie 08.16.2010

That pizza cutter idea is a great idea! I can’t believe I never thought of that.

My favorite vacation was my trip to Cancun with my boyfriend last year. It was our one year anniversary, and we’re going back again next month for our second year anniversary. We’re going to Playa del Carmen this time, and I’m so excited!

  17. Melinda 08.16.2010

Great, I travelled all over all summer, so I will get something together. My favorite vacation was everything from this summer. I also live overseas on a tiny little known island, so if you ever want me to post on that, I can do that too. Have a blast in Italy. That is next on our list.

  18. tia 08.16.2010

Your lunch looks super yummy! How long are you going to Italy for? I was there when I was young but I would love to go back and explore now that I’m older. That’s super exciting!

  19. Jaci 08.16.2010

Hands down, Vegas. That is so sad! I have traveled a lot but I love that Vegas is warm and sunny and has so much variety!
ps: on the guest post submission, am i understanding that you don’t want the whole post, just the questions listed for now? thanks!!

  20. Erin 08.16.2010

Glad your morning got off to such a fabulous start. My sweet husband loaded my car with all my stuff for me this morning while I finished getting the baby ready. Then he locked the car with my purse (and keys and phone) inside and headed to the dentist. It took me an hour to find someone to go get his keys from him and then come let me in the car. NOT a great start to a Monday!! :)

  21. Maura 08.16.2010

Definitely my trip to Italy & Greece. There is nothing like a real greek salad with a huge glass of red wine. Mhmm, I might start drooling just thinking about it ;)

  22. Liz @ Blog is the New Black 08.16.2010

I do the pizza-cutter thing, too. I also have a lettuce knife, which is kind of a useless gadget, when you think about it! ;)

  23. Erin (penny. LA) 08.16.2010

Almond butter! I have never tried this, but keep wanting to. :)

Will submit my best vacation shortly. :)

  24. I just found your blog (a friend recommended it to me) and so far I love it! I also love your perfectly swirled almond butter. :)

  25. LOL @ face whipping! That’s a perfect description for large pieces of leafy greens!! HAHAHA

    I haven’t been on a vacation in years, so I can’t contribute a post. :(

  26. what a great idea for guest posts! :) i’ll definitely be sending something in :)

  27. Sara 08.16.2010

That weather sounds SO nice! I was SWEATING at the bus stop around 8:30 this morning. Oh, Georgia weather.

  28. I TOTALLY agree with you on the almond breeze/cereal combo. Match made in heaven! :)

  29. Man I love that pizza cutter idea!
I would love to send through a recap of my awesome Europe trip but unfortunately all the photos are on my other computer (which is in storage ….) Can’t wait to hear all about everyone else’s though!

Oh my gosh, that pizza cutter idea is the best ever!! I hate how messy eating salads can be because I get the spring mix, which has some enormous pieces. I am totally going to start doing this.

  32. Lindsay P 08.16.2010

I need to try that almond breeze stuff… Looks yummy! I like that idea of using the pizza cutter on your salad! I always have the problem of trying to fit too much into my mouth. XD

The root of your writing while sounding agreeable initially,
did not settle properly with me after some time. Someplace
throughout the sentences you actually were able to make me a believer but only for
a very short while. I still have got a problem with your jumps in assumptions and you
would do nicely to fill in all those breaks. When you can accomplish
that, I would undoubtedly end up being impressed.
