Why My Husband’s in the Basement Folding Laundry.

I have to admit – I’ve been entirely unpleasant to be around today.

My late summer allergies have brought a wretched plague of sneezing, wheezing and coughing upon this house, which has driven my poor husband to the basement where he is currently folding laundry and listening to music.

Folding laundry, people.

My husband would rather fold clothes – his most hated chore in the world – then listen to me sniff. It’s ok. I’m annoying myself at this point! :?

Oh, fun fact: I am completely immune to the drowsy side effect of antihistamines. I can pop Benedryl with zero side effects. By age 10 I was taking allergy medicine so strong that, according to my allergist, it would put a horse to sleep. Hey, we’ve all got to be good at something! ;)

In other news, I’ve been snacking on these Rice & Adzuki Bean Boulder Canyon Chips today.

They’re made out of rice flour and adzuki beans and are super crispy.

The Sweet Lemon & Cracked Pepper flavor is fantastic! I would have never put these two flavors together in a million years, but they’re incredible. Sweet & spicy. Plus, each chip has a ton of seasoning on it which reminds me of eating Cool Ranch Doritos and being thrilled when I’d pull one out that was just covered in seasoning. Don’t pretend like you don’t know what I’m talking about!

Tonight’s dinner came straight out of the pantry as I’m trying to use up some food reserves since we’ll be gone on vacay starting next week. Pumpkin Chia Pancakes to the rescue!

All I did was combine 1/3 cup Trader Joe’s Pumpkin Pancake Mix, with 1/2 scoop of chia seeds.

Here’s some info on chia seeds. I used them in place of eggs, since they gel when mixed with liquid, and hold the batter together.

These babies are high in antioxidants, are a complete protein source,

and yes, they’re the same seeds as the cha-cha-cha-chia pets!

They thicken up the batter superbly and produce light and fluffy pancakes.

Drizzled with a tiny bit of agave nectar to take it right over the top!

Ohhh, boy – I am tired this evening! My early morning run really tuckered this girl out! Early to bed for me. :D

    AHHHHH!!!!! You’ve solved my problem! I’ve been looking everywhere for ANYTHING pumpkin and now I know…Trader Joe’s pancake mix will give me my fix!

    I totally feel you in the allergy department. I think I just sneezed 7 times in.a.row. No lie. Veramyst holds nothing to my allergies.

    Funny you should ask. Today marked the day that I finally caved in and admitted I DO indeed have allergies even though this is the first summer of my life that they have ever appeared. Thanks Midwest summers.
    I finally caved and bought some Claritin today and my what a difference already! The itchy eyes and nose were literally driving me round the bend!

    I have never thought to use chia seeds instead! I usually use applesauce or half a banana, but that is such a sneaky way to get protein :) Drizzling with agave is also totally new to me – definitely trying that next time! :)

    I’m allergic to everything. I call myself Allie the Allergy Queen…pollen, dust, grass (and all that jazz). Various fresh fruits, various nuts, and I think I’m gonna have to add dairy to the list soon :(

    My allergies get really bad in the spring. Otherwise they’re alright. I better find a huz that can tolerate sniffling…or one who folds the laundry :)

    if you haven’t tried Zyrtec yet, try that and take it before bed so it’s working full force by morning! (generic from Walgreens is just as good!)

    I pretty much only have seasonal allergies but they act up a lot in the spring and the fall. I NEED to get my hands on that pumpkin pancake/waffle mix. Is it a new product? I can’t believe I missed seeing it when I was there!

    Zyrtec is my best friend year-round, although August is never a good month for me. No matter what, the ragweed always gets to me. On top of seasonal allergies, I’m also allergic to penicillin, sulfa drugs, beer, bee stings, mold, dogs, cats, and a lot of other things I’m probably forgetting right now!

    I bought that pumpkin mix after you showcased it in a post several months ago. I had my friend from Chicago bring it to her visit to my parents’ house – where I was visiting from Los Angeles. She brought it, and I never used it! Now it sits in Iowa and I’m in LA. I need to get that box back…

    I have mild allergies, but nothing so bad. :)

    What are you allergic to? I have a grass pollen allergy. That appears to be low lately, thank goodness. I think weed pollen has been awful this past week in Des Moines. Urgh! Honestly, this has been the worst year in my life for allergies. Hope you feel better soon!!!

    I really hate folding laundry. Worst task ever. I think I’d rather clean the bathroom! I’m allergic to some antibiotics which can be a pain and apparently I have late summer allergies too now. Who knew? Thank GOD for Zyrtec!

    That’s funny about the benadryl, I take claritin, and it’s supposedly “non-drowsy”, but it makes me drowsy! And guess what one of the side-effects are? Drowsiness! I don’t know how you take Benadryl, it knocks me right out!

    Trader Joe’s has those same chips! They’re in a bright red bag. I’m not quite sure what ‘flavor’ they are, but they are really good. They’re just called Rice and Bean Chips. They have a really nice spicy kick to them. mmhmm.
