I’m a 1/2 mile closer to conquering my 5 mile goal!
The rain briefly stopped this afternoon, so I took off on a 3 1/2 mile jaunt, 1/2 mile longer then I went yesterday, as soon as I got home.
Ok…full confession…my legs hurt from running last night and I really didn’t feel like exercising, therefore I was semi praying that the rain would continue all afternoon so I could have an excuse to bail. I know. It’s true.
Like I said though, the universe had other plans and cleared up about an hour before I left work. Hmmm…
I set out on my trail and everything was actually going swimmingly when, with ~1 mile left in my run, the universe got its revenge on said bail attempt and the skies opened up, drenching me from head to toe. In a white shirt. With a mile left to go. Ahh!!
I had a few choice words for the universe at that point, which I shared with it…loudly…then sprinted home as fast as humanly possible.
Pros: 3.5 miles under my belt in record time.
Cons: Free peep show for the neighborhood.
Veggie Shrimp & Tofu Stir Fry to the rescue!
I followed my 7 simple steps to a delicious stir fry for a quick & easy dinner, which had me start by creating a super-simple sauce by combining:
- Equal splashes water & soy sauce,
- Smaller splash of rice vinegar
- ~1 teaspoon chopped garlic
- ~1 Tablespoon almond butter
- Dash of sesame oil
- Couple shakes of red pepper flakes
I microwaved the concoction for 10 seconds (to melt the almond butter) and madly whisked until combined.
Next, I got my stir fry ingredients all ready to go.
First we’ve got zee protein: Extra-firm tofu (pressed, cubed and tossed with a little soy sauce, sesame oil, red pepper flakes, garlic powder & agave nectar) and shrimp.
Zee veggies: Mushrooms (for Ben!) and broccoli.
And zee toppers: chopped peanuts and green onions.
I heated my electric wok up to 375 degrees, sprinkled in a little wok oil, and got to work!
Mushrooms first, followed by the tofu (which cooked so fast that there was nary a moment for a photograph!)
then the shrimp,
followed by the broccoli.
In goes the sauce,
and everyone else back into the pool!
Served over brown rice (seriously, how much brown rice do I eat?!) and topped with chopped peanuts and green onions for zing.
Slightly salty (the water in the sauce really cuts the uber-salty flavor) with such fantastic flavors from the almond butter and red pepper flakes.
I love how you can seriously just throw the most random of ingredients together and call it a stir fry. Seriously – any combo works!
Super easy, super fresh, super fast. Love it.
I’m off to go relax this evening – perhaps the first evening that I’ve been able to since returning home from Italy?!
I’ll try not to tick off the universe in the process…
