I’m a 1/2 mile closer to conquering my 5 mile goal!
The rain briefly stopped this afternoon, so I took off on a 3 1/2 mile jaunt, 1/2 mile longer then I went yesterday, as soon as I got home.
Ok…full confession…my legs hurt from running last night and I really didn’t feel like exercising, therefore I was semi praying that the rain would continue all afternoon so I could have an excuse to bail. I know. It’s true.
Like I said though, the universe had other plans and cleared up about an hour before I left work. Hmmm…
I set out on my trail and everything was actually going swimmingly when, with ~1 mile left in my run, the universe got its revenge on said bail attempt and the skies opened up, drenching me from head to toe. In a white shirt. With a mile left to go. Ahh!!
I had a few choice words for the universe at that point, which I shared with it…loudly…then sprinted home as fast as humanly possible.
Pros: 3.5 miles under my belt in record time.
Cons: Free peep show for the neighborhood.
Veggie Shrimp & Tofu Stir Fry to the rescue!
I followed my 7 simple steps to a delicious stir fry for a quick & easy dinner, which had me start by creating a super-simple sauce by combining:
- Equal splashes water & soy sauce,
- Smaller splash of rice vinegar
- ~1 teaspoon chopped garlic
- ~1 Tablespoon almond butter
- Dash of sesame oil
- Couple shakes of red pepper flakes
I microwaved the concoction for 10 seconds (to melt the almond butter) and madly whisked until combined.
Next, I got my stir fry ingredients all ready to go.
First we’ve got zee protein: Extra-firm tofu (pressed, cubed and tossed with a little soy sauce, sesame oil, red pepper flakes, garlic powder & agave nectar) and shrimp.
Zee veggies: Mushrooms (for Ben!) and broccoli.
And zee toppers: chopped peanuts and green onions.
I heated my electric wok up to 375 degrees, sprinkled in a little wok oil, and got to work!
Mushrooms first, followed by the tofu (which cooked so fast that there was nary a moment for a photograph!)
then the shrimp,
followed by the broccoli.
In goes the sauce,
and everyone else back into the pool!
Served over brown rice (seriously, how much brown rice do I eat?!) and topped with chopped peanuts and green onions for zing.
Slightly salty (the water in the sauce really cuts the uber-salty flavor) with such fantastic flavors from the almond butter and red pepper flakes.
I love how you can seriously just throw the most random of ingredients together and call it a stir fry. Seriously – any combo works!
Super easy, super fresh, super fast. Love it.
I’m off to go relax this evening – perhaps the first evening that I’ve been able to since returning home from Italy?!
I’ll try not to tick off the universe in the process…

Haha perhaps this was the universe’s way of getting back at you for wishing ill thoughts against it this afternoon. Aww, well at least you got in a great run and I doubt anyone had enough time to see the show.
You are head on about the beauty of stir-fry. Anything works, so it’s an easy way to clean out the fridge!

I despise running in the rain. I make deals with myself, though… The rule is, if it starts to rain while I’m out there, I have to finish my run. No wimping out. BUT, I’ll let myself wimp out if it starts to rain before I leave the house, and doesn’t clear up in a timely manner. Thankfully, I’ve never been stuck out in the rain in a white top…talk about uncomfortable! So sorry!

Please send rain to OHIO! Our school had a walk a thon fundraiser, and it was miserable in the 85 degree heat. Although, I did win a goody basket with TWO junior size jump ropes.
oh no! I had a similar eeek moment on my run last night – but luckily the rain held off just enough for me to get home! Damn white running shirts!
I’m a newbie when it comes to preparing tofu at home. I’ve never heard about ‘pressing’ it. What’s the purpose of that? (I’ve only had tofu prepared for me at a Mongolian style barbeque.)

I ran my first half marathon in May…and it POURED for the first.half of it! At first I was dreading it, but once we got started it wasn’t so bad. Actually kept me comfortably cool…however, it did fry my Blackberry that I had in my SpiBelt. oops!
I don’t mind running in a light sprinkle. But I hate it when my shoes get squishy. Sorry about your running disaster…at least it made you run faster!
No, I am not big on exercising in the rain. I hate getting my hair wet.
Lol on the white shirt…I can totally relate. I went for an MRI once for my knee so I decided I’d be smart and bring shorts and a white tshirt so I wouldn’t have to wear those awful gowns. It was a great idea until I had to remove my bra because it had metal closures. Then my white tshirt became a see through shirt for the entire waiting room.
Oh, an to make matters worse, my tshirt was “fitted”.

I long run is rain is refreshing every once ‘n’ a while =)… so, yes!

I always think I would like running in the rain, but the reality of it is much less appealing than you’d think.
My first half-marathon was in the rain. But I did it, darn it!
That said, I’ve wussed out on my runs so far this week because of the rain!
